I had terrible trouble with my yeast bread sticking to my pan. My neighbour is a professional in this department so when she recommended baking paper I did what I was told. The result was perfect. Bezgluten brown bread mix. 90 min from start to finish. Now to be eaten while still warm.

As a coeliac, how much gluten would you be happy to eat? In May 2011 the United States' Food and Drink Administration published a detailed scientific analysis of research into how sensitive the coeliac patient/coeliac gut can be. Summary:

"less than 1 ppm level of gluten in foods is
the level of exposure for individuals with CD on a GFD that
protects the most sensitive individuals with CD and thus, also protects the most number of individuals with CD from
experiencing any detrimental health effects from extended to long-term exposure to gluten"

(1ppm = 1mg gluten per kg of food. Iif you ate 1kg of that food you could consume 1/1000th of one gram of gluten and be safe. Above that amount, you may not be safe. In Ireland 20 ppm is allowed. Some coeliacs may well experience problems eating food at 20ppm gluten. Some products are labelled "Very Low Gluten" and could be anywhere between 21 and 100ppm. Draw your own conclusions!)

This confirms the extreme sensitivity to gluten experienced by many coeliacs.

Australian Celiacs Face Industry Push to Allow Gluten in 'Gluten-free' Foods - Celiac.com

Ireland allows gluten free labels on produts with up to 20 parts per million of gluten. In Australia the level is 5 ppm. They are under pressure to relax their laws to be like ours. Should we not be trying to reduce our levels to theirs? What do you think? Would you like more gluten or less?

Pulcinella Secret Howth

Last night I had the very first Gluten Free Pizza out of the Gluten Free Pizza Oven at North Dublin's newest Italian Restaurant:

When a restaurant spends a few thousand on a separate oven for gluten free pizza, you know they are committed to serving truly GF food.

The restaurant is based on the model in place at Prego's in Lucan, so you know what the standard will be like.

We had the calamari, which were truly magic, with a fantastic crisp light coating, and a lovely accompanying tomato and herb dip.

I had the Pizza Margherita, for lightness, and it was superb. "Herself" not being a coeliac, had one of their incredible wheat-based pizzas, and it looked and (according to "herself") tasted like we were in Italy. Ordinary pizzas are baked in a wood-fired oven.
