Warming Chilli Con Carne

Serves: 1 person
What we deliver
100g mince beef
60g onion
1 clove of garlic
60g bell pepper
60g kidney beans
2 garlic cloves
1 jalapeno
1 tsp cumin
1 tsp smoked paprika
200g chopped tomatoes
1 tbsp tomato puree
1 tbsp sriracha sauce
1 tbsp soy sauce
70g white rice

From your pantry
Oil, Salt, Pepper, Water

Instructions:
- Dice the onion, garlic, jalapeno and pepper into small pieces carefully.

- In a frying pan, add the oil and sauté the onion, jalapeno & garlic on a medium heat. When softened, add the beef mince to the pan. Stir and breakdown with a spoon to brown the mince – should take 3-4 minutes.

- Add the diced bell pepper and kidney beans to the pan and mix through. To make the sauce add the chopped tomatoes, tomato puree, cumin, paprika, sriracha sauce, soy and stir well to combine them all.

- Allow the sauce and meat to come to a simmer and start to develop in colour and texture. If it is too dry, add 100ml of water to loosen and continue to simmer for 10-15 minutes.

- In a separate saucepan, add the rice with 150ml of water per person and bring to the boil. Once the rice is fully cooked (5-6 minutes), serve with the warming chilli con carne.

Ingredients we deliver:
1 chicken breast
2 white potato
80g onion
80g bell pepper
1 tsp Chinese 5 spice
½ tsp Paprika
½ tsp Garlic Powder
½ tsp Cayenne Pepper
1 fresh chilli
2 eggs
50g Flour
50g Panko Breadcrumbs

From your Pantry:
Olive Oil, Salt, Pepper

Method
1. Chop the potatoes into thin chip shapes, toss in a drizzle of olive oil and season with salt and pepper. Place on a baking tray to cook for 30/35 minutes in the 200-degree oven (Gas mark 6).
2. In a bowl add the Chinese 5 spice, paprika, cayenne, garlic and a generous pinch of salt. Stir well.
3. In 3 separate bowls, add the flour to one, beaten eggs to another and breadcrumbs with our spice mix added to it.
4. Slice the chicken into strips. Add the strips into the flour, egg and breadcrumb mixture in that order. Place on a baking tray to be cooked in the oven for 20 minutes at 200 degree C (G.M 6).
5. Add some roughly chopped onion and pepper to the tray with it to be roasted
6. Once all the chicken and chips have been cooked and are golden in colour, remove from the oven and add to a bowl. Toss all the cooked ingredients in the remaining spice mix
7. Serve with some freshly chopped chilli and a side sauce of sweet chilli or garlic mayo if you wish!
