Mary was kind enough to tolerate me for an afternoon showing me how she handmakes her caramel chocolates. Mary uses a huge amount of local produce with local dairy for her creamy chocolate and for the caramel, making everything from scratch herself.
A huge amount of work goes into each little piece of heaven but man is it worth it, I may be biased but they are genuinely some of the best chocolates I've ever tasted.

Strange new ways of doing business these days but when there's a chocolate involved, there's always a way. Met with the fabulous Clo, a French trained chocolataire here in Sligo, as part of Le Fournil patisserie. Her love for chocolate is certainly infectious & shows in her stunning creations.

Andrew is roasting coffee beans for us from Serra Do Cigano farm in Brazil. The full bodied, yet smooth coffee will enhance Mary's luxury chocolates from noo's, making them taste all the finer.
