The tart "sour" aspect was achieved using pre-fermention acidification.

Easy drinking, bright effervescent, with a fruity crisp nose medium body with a distinctive (but balanced) oaky finish.

This one has been a labour of love an exclusive & collaboration with

BARREL AGED BRETT BOCK and in a second fill banylus barrel for nearly 02 years. Condition in bottle for 02 months, bright n funky, effervescent dark hedgerow fruits with a dry crisp finish.

Banyuls' speciality is vin doux naturel (VDN). A rare, fortified wine that is naturally sweet for the residual sugar left in the grape must after fermentation. 80% coming from Banyuls France and neighbouring appellations.

Always great to work with innovators, truly delighted with how this turn out. Worth the wait!

ALPHA AMBER 5.0%

An American amber ale built with Irish pale barley / caramber / carapils / chocolate malt, fermented with fruity US05 and playing with the classic combo of Columbus / citra & cascade on the DH. The results is a beer with a malty backbone of toffee & caramel with aromatics of citrus and pine, medium body with a bright old school bitterness.

DARK SIDE STOUT 4.2%

An approachable stout with a medium body. Built with Irish pale barley / caraffa special II / pale wheat / flaked oats / carapils / chocolate malt, fermented with a not so traditional low rider yeast, williamette hops to the hot side with an addition of natural vanilla post fermentation. Dark, toasty coffee, smooth mouthfeel with light touch of vanilla on the finish.

About the artwork:

Lia Tamayo Mac Manus, a talented painter / artist based in Madrid collaborated with DOT to create a one-of-a-kind painting created / formulated and inspired by the beer itself via a blind tasting.

The final piece encapsulates the bright / rich complexities of the beer with every brush stroke.

About the beer:

A chewy bold inky imperial stout aged in French & American oak Potstill barrels for 11 months. A distinctive grain spice married with vanilla / dark fruits and rich milk chocolate & toffee with a rounded sweet finish.

The brainchild of Jimmy Redmond we sourced a bangin fresh marsala barrel. We are loving the pils & lager styles this year in the camp and were happy to take a portion of our first solo pilsner post cold conditioning to age it for a further 6 months of barrel contact.

A stunning drop that's laced with light caramelized sugars hits of berries & cherries with a dry citrus finish. A ton of complexity for a light beer.

It's that time of year! Easy drinking crushable sunshine (ahem) summer drinking.

This fruit sour is perfect for: filling the fridge / Lounging about / burning quality cuts on the bbq / mowing the 10sqm lawn continuously.

Bright / tart and pink. Built with pilsner malt & pale wheat. Mixed fermented with 2 fruit additions post pitch and towards the tail end of fermentation. 60g per litre of white peach / sour cherry with the dominant fruit being perfectly in season raspberry.

Full bodied, built with pale barley / carapils / flaked barley / flaked oats & malted oats. Fermented out with saturate yeast, cryo pop to whirlpool and a blend of huell melon / citra & centennial on the dry hop.

Big stone fruit / peach / orange & floral aromas.
