Are you still using seed oils in your cooking? You might want to reconsider!
The seed oils that we’re mainly referring to here in the UK food system are sunflower oil, vegetable oil, rapeseed oil (canola oil), soybean oil, and corn oil. Over 100 years ago, these oils were being used as engine lubricants, and in 1911, P&G realised that through a considerable amount of processing, they could turn cottonseed oil into a product that resembled lard (Crisco) and sell it to consumers as a food product. The use of these oils has skyrocketed over the last century and at the same time we have seen a shocking rise in chronic inflammatory illnesses.
By the nature of seed oils being formed of polyunsaturated fatty acids, they are volatile when exposed to air, light and heat. This means, that when they are heated at high temperatures, chemically treated, and bleached in the process of getting them ‘shelf-ready’, they oxidise and become rancid. If you then consume the oils they create oxidative stress, cellular damage and free radicals in the body, which is at the root of chronic illnesses such as cancer. This means that it is not just cooking with these oils that you want to avoid, but also consuming any packaged foods with these oils in.
But don't worry - there are plenty of healthier alternatives out there!
