Lazy lasagna- Layers of..
1. Makhani - Tomato based gravy spiced with cumin, coriander, garam masala, ginger, garlic, red chilli powder and dried fenugreek leaves.
2. Paneer sauce - White sauce made of cottage cheese and oat flour seasoned with black pepper. You can put spinach, greens beans and carrots in this white sauce if you'd like.

Sweet and spicy tomato curry -
Tomato tempered with kashmiri chili, curry leaves, mustard seeds, slow cooked with jaggery and my special curry spice blend.... This curry is killer with chapati aka Indian flat bread.
Paneer Tikka Roll - Paper thin roomali rotis slathered with coriander chutney, onions, lemon and chaat masala.
Put in the perfectly spiced and grilled paneer aka cottage cheese and enjoy these fu***ng amazing rolls. ππππ

So fiery so fine!
Yellow lentil slow cooked with garlic and ginger, then tempered with cumin, asofetedia and kashmiri chillies. Finally seasoned with dill, lemon and served with steamed basmati rice.

Spicy yogurt aubergine from the valleys of Kashmir - Too hot to handle chilli, sundried tomato and yoghurt aubergine slow cooked in my special spice blend. It's creamy, spicy and packed with flavor to be enjoyed with naan.
Rice Rice Baby - This simple yogurt rice tempered in spices, curry leaves and nuts is just so simple and yummy! Pair it with garlic pickle/orange pickle and some crispy peanuts/fried onions and you can could eat a couple of bowls of this easy!

Such a quick, easy, simple Monday night dinner!
Thats how we roll - Vegan Sushi with fried chilly garlic tofu, pickled cucumber, carrot marinated in soy and fried onions. Weekend indulgence π₯°π₯°π₯°

Bombay Bruschetta - So if the Italian Bruschetta had a one night stand with the Bombay sev puri, it would be something like this....
Toasted ciabatta with pan grilled cherry tomatoes, jalapenos and garlic, then topped with chopped onions. Drizzle the sev puri garlic chutney and sweet twangy tamarind chutney. Finally sprinkle copious amounts of parmesan. And tada....!!!

Spicy soya tikka - So, I've been meaning to make this for a while now but only got to it this weekend. I made my own vegan mock meat with soya beans and gluten free flour.
I then marinated it in my secret blend of tikka spices and barbequed it generously brushing it with clarified butter. Sprinkle it with chaat masala and lemon and enjoy this juicy, flavorful kebab with some onions and coriander chutney.
Carb loading - Slices of fried potato coated in pesto, then layered with lasagna sheets dropped with a garlic and sundried tomato sauce and a final layer of whipped feta, lemon zest and black pepper. Topped with mozzarella and cheddar, this stuff is done serious indulgence! Get fat or go home π€£

Utterly butterly mushrooms - Mushrooms marinated in butter, cream, garlic, pepper and nutmeg. Then wrapped in a banana leaf and steamed to melty perfection!
