Our new lightly smoked tuna carpaccio was a hit, so here's:

10kg of sushi grade FRESH Tuna

Its a labour of love .....
The tuna is trimmed, then smoked for 2 hours in alder wood and then slightly seared ..... so that it ends up looking like (B) and can be served up like (C)

75 shekel - 150g

This past weeks Gravlax really melted in your mouth. It was a soft citrus & dill flavour, think we are going to add some kick to next weeks flavour combination. You flavour suggestions are welcomed!

First round of trials for salmon jerky. It was cured for 48 hours, smoked, marinated, then dried out for 12 hours. It’s a long process and we don’t think we are quite there with the final product. Taste tests available for those who collect their orders.

... the salmon fillets really are that dark orange colour. They have been cured for 48 hours, the cure has been washed off and now they will be placed in the fridge to dry out for 12 hours so the pellicle can develop, before being cold smoked.

Love our new salmon slicing machine. German made, its heavy and it had to be specially fitted to our new salmon production room. It produces the finest slices of smoked salmon possible to mankind! Coupled with our new salmon supplier, we have taken salmon production to a new level 😎
