I enjoyed curating the recipes, no doubt it wasn't an easy job but every home baker who contributed thought out of the box, shared a slice of their life too.
I smiled at the screen when I read how bakers came up with the recipe. For me every recipe is a story, a story to nourish oneself, a story to nourish family & others, a story of survival at times because necessity after all is the mother of invention, a story passed down generations and using ancestral wisdom to create new ways to cook for today. Creating recipes takes time, effort, creativity, patience and of course monetary resources and put down all of it and sharing it with the rest of the world is an act of kindness. Knowledge shared is always meant for the greater good.

Answering a few FAQ's I am usually asked -
1. Is this vegan ?
It is a gluten free vegan no soy bread class.
No dairy & no eggs .
No gums on request too .
No nuts on request too.
2. How long is it ?
It takes 2.5 hours
3. Can you ask questions?
Ofcourse
4. This is not a sourdough class, it is a regular yeasted breads class. I will take sourdough classes later this year.
5. How is the class?
It is for online for now on Zoom. I start with theory & move on to the practical & demo of the bakes.
6. Can you bake along ?
I would like you to listen, ask questions & when you have understood the fundamentals try it out by yourself with complete focus. It can be distracting if you try to bake along.
7. Why should I take this class, I think it is too much?
If you have ever baked & experienced soggy bottom bread, breads crumbling, your pizza crust collapsing , breads not rising etc. it is a great class for you. It is priced at this to account for all the time, effort that goes into teaching this class. For every class I create a new recipe to cater to different dietary requests, for the paid zoom account, and 10 years + of my gluten free experience. If you still don't think it is worth it, that's fine. Please don't humiliate me by bargaining with me. Every person comes with their own skill set & experience. Please respect that 🙏

For those interested in Gluten Free & Vegan - Bread & Pizza Class

Yoghurt Flatbread ( no yeast or sugar ) with fig, cottage cheese ( paneer) ,sautéed onions, cashew & radish leaves .
Baking after more than a week , the pretty figs and radish leaves gave me enough motivation to go to my oven and create something new.
Natural colours are definitely mood boosters :)
The recipe -
Flatbread ingredients
1 cup Sorghum/Jowar flour
1/2 cup brown rice flour
1/2 cup tapioca starch
1 tsp salt
1 cup dairy or non dairy milk
1/4 tsp flax seed powder
1.5 tbsp Yoghurt/curd/dahi
Mix all of it together and combine to form a dough. Let it rest for 1- 2 hrs.
In the meanwhile- chop an onion, radish leaves, halve 4-5 figs, slice pieces of 50 gm cottage cheese, a few cashews and garlic. Lightly sauté the onions, garlic,cashew & leaves ( 1 or 2 minutes) .
Pre heat the oven at 180 °C for 15 mins.
Divide dough into 2. Take one part and roll out on an oiled baking pan. Place in preheated oven for 10 minutes. Then take it out smear the top with a little oil, then paneer, sautéed mix, then figs, use fresh or dried herbs or extract and drizzle some honey or balsamic vinegar. Bake for 10 mins.
Voila! slice & enjoy the flavour burst😋

A few days ago , we decided we would try to eat out if we felt safe about where we were eating out. I had read that lavelle road & Indiranagar, Bangalore were open so we thought we'll check it out.
On Saturday evening, we went over to SMD, Indiranagar. At the entrance our details were noted , temperature screening was done. We had to to wear a mask until seated. The staff were in masks and face shield. There was a hand sanitizer at the entrance and at every table. Not much of a crowd and we were seated a good 6 feet apart from the other diners. The air conditioning was switched off & since Bangalore has great weather , it wasn't a problem since the doors and windows provide great ventilation.
Coming to the ordering bit, there is a QR code to scan and you can order off your phone. If that's not okay for you, a wait staff will assist you. I ordered the glutenfree pulled chicken & pickled mayo 🥪. I absolutely relished the flavour burst.
Things that stood out for me -
1. Service - Prashanth, our wait staff ensured everything I ate was glutenfree. Yes, they do have glutenfree options on their menu but he went into details, asking me whether I had a medical condition. He got me sweet potato chips as the fries had gluten in them as per him .
Do you know how great that is to hear?
In the past 10 years I have mainly interacted with managers when I have eaten out or the owners or chefs. However, the wait staff at SMD have always been careful and knowledgeable. So a big 👏 to the wait staff and management !
I must add I didn't have a great experience in 2013 but since 2017, things have really changed, they changed the menu & took in all the feedback. Kudos to them for that.
2. It was so nice to eat out after a long time and since there was hardly a rush, it was a delightful experience.
3. Good, safe & delicious food.
For those of you who don't want to eat out, they do takeaway on Swiggy etc.
These are one among the few safe options for Celiacs to eat out in Bangalore and I hope that the outlet in Forum Shantiniketan opens up too.
