The mouth watering Saboodan Vada
Sambar – Hotel style sambar for idli / Dosa
How to do ?
In a pan dry fry 8 to 10 dry chilli and curry leaves. after it is fried add 1 tsp oil and fry and empty into a mixi jar. Now dry fry 2 tbsp daniya, 1 tsp jeera, 8 to 10 pepper, 1 inch Dalchini chakke, ¼ spoon Menthya and add them to the same mixi jar. In the same pan again dry fry 1 tbsp rice and 1 tbsp kadalbele /dal and add it to the same jar. Now in the pan add oil and 2 chopped onion and fry well and add it to the mixi jar. Now for the jar add some coriander leaves, 1 tomato half cup grated coconut, tamrind and grind well. In a pan add 50 ml oil, Hingu, curry leaves, 3 dry chillies, 1 cup chopped onions and fry well. Now add 4 to 5 chopped tomatoes and some salt and fry till the pulp of the tomato separates. Now add the grinded paste into the pan add some water salt as per taste. Now add 30 to 50gms of jaggery and 750 ml water and boil well for 15 to 20 min in sim and allow the contents to blend well. Serve hot with chopped coriander leaves on top.

Tomato Rasam / Desi Tomato Soup
How to do ?
In a pan add water and allow to boil. Now add 1 cup chopped tomato, 3 to 4 green chili, 6 cloves of garlic and boil well. Add the boiled contents into a jar ad salt as per taste and grind well.
In a pan add 2 to 3 tsp cooking oil, mustard seeds, curry leaves and sauté. Now add the grinded content to the pan and boil well. Add some 1 tsp of sugar and water as per soup or Rasam consistency, also add salt as per taste and boil well. Serve hot with rice as rasam, also it can be served as soup with bread cubes.

Moolangi Chutney
How to do?
In a jar add 100 gms fried gram, coriander leaves, curry leaves, salt, tamrind, jaggery, ginger 1 inch, garlic 8 to cloves, 1 cup chopped Raddish / moolangi, ½ cup grated coconut, green chilies 8 to 10 and grind well. Add some water and mix to chutney consistency.
In a pan add cooking oil, mustard seeds, jeera and curry leaves and mix this to the chutney. Serve the chutney with hot rice and ghee

Mutter Paneer
How to do?
In a bowl soak 100gms cashew nuts and 50gms Melon seeds (optional) for 20 min and then grind them well to make smooth paste.
In a pan add 5 to 6 tbsp cooking oil, 3 cloves, 3 cardamom, 2 bay leaves, 1 star anise, 1 inch Cinnamon stick and sauté for 2 min. Now add 1 cup of sliced onions and sauté. Add 10 cloves of garlic and 2 inch ginger chopped and fry well. Now add 1 cup sliced tomatoes and mix well. Boil it well for 10 to 12 min after which allow to cool and grind these fried ingredients and make smooth paste.
In a pan add 3 tbsp oil, 1 tsp turmeric powder, 1 tsp jeera powder, 1 tsp coriander powder, 1 tsp garam masala, 2 to 3 tsp red chilli powder and sauté. Add the tomatoe paste and fry for 5 min. Now add the cashew paste and allow to blend well and keep stirring. Make sure the water content is gone, keep frying and stirring. Now empty the base into a vessel.
In another pan add 1 tbsp butter, ½ tsp jeera / cumin seeds, ½ cup finely chopped onions and sauté well. Now add the base and add some water. Now add boiled peas and stir. Add 200 gms of paneer fired in ghee and mix. Add 2 to 3 pinches of kasuri methi and chopped coriander elaves and toss well. Serve hot with Chapathi /Roti

Navarathna Bhel
How to do ?
In a mixing bowl add finely chopped onions, tomatoes, cucumber, Pineapple and coriander leaves. Now add grated carrot, green chetny and tamarind juice. Salt as per taste. A pinch of jeera powder shall make it yummier. Chats masala is an optional. Add some sweet chetny to enhance flavours. Now add 1 spoon of Chats Katte special Red chilli paste and mix them all well. Now add puffed rice / puri and toss well. Serve it with toppings of yours choice (Sev/ Masala groundnuts/ coriander leaves)

Sprout Salad
How to do ?
Soak the green gram in water for atleast 5 hours and stain the water. Tie it in a cloth and keep it warm for 24 hours. Sprouts would be ready.
In a mixing bowl add sprouts, chili flakes, salt, tamarind juice, chopped cucumber and coriander leaves, grated coconut and mix well. Serve the best healthy evening snack

Coriander Rice
How to do ?
In a jar add half cup coriander and some mint leaves, 4 cloves garlic, half onion, 1 inch ginger and grind well.
In a pan add 3 tsp cooking oil, Mustard seeds, cumin seeds and fry. Now add 2 cardamom, 2 clove, 2 star anise, cinnamon 1 inch and sauté till they turn brown. Now add finely chopped onions and sauté for 2 min. Add chopped vegetables (Carrot, capsicum, green peas, Beans) and sauté well. Now add 4 to 5 tbsp water and allow the vegetables to cook well. Add some salt so that they cook well. Now add the grinded coriander paste and sauté well till the blend well and raw smell of onions are gone. Now add ½ tsp cumin seeds powder, coriander powder and mix. Now add 1½ cup of boiled rice and add some salt. Toss well to blend the coriander paste with the rice and simmer for 2 min. Serve hot

Hulli Anna
How to do ?
A very simple, easy and quick recipe .
In a bowl add 1 cup cooked rice, 5 tbsp tamarind juice, 10 to 15 gms jaggery, salt as per taste and toss it and set it for 5 to 10 min.
In a pan add oil, mustard seeds, 2 tbsp fried gram and sauté, add 3 to 4 dry red chilies broken into pieces and fry. Now add the mixed tamarind rice and fry well for 10 to 15 min. Serve hot

Thambitu (Traditional sweet)
How to do ?
In a jar grind 1 cup of Fried gram, make it fine powder and empty into a bowl. Add ¼ cup of grated dry coconut, 1 tbsp rice flour and dry mix the ingredients.
In a bowl add 1 glass of water and add ½ cup of jaggery and heat well. Make sure jaggery is completely dissolved in the water and allow it to cool down.
Slowly add the jaggery water to the mixed powder and keep mixing so that it doesn’t form any lumps. Add some melon seeds that are fired in the ghee (optional) and make small balls or shapes of your choice and serve

Khaara baath
How to do ?
In a pan dry fry 1 cup Banasi sooji / Bansi Rava without oil and keep aside. In another pan add cooking oil, mustard seeds, 2 chopped onions, 1 chopped carrot, green peas and sauté well. Now add 1 to 2 tsp chilli powder, salt as per taste, ¼ tsp garam masala and sauté for 2 min. Now add 2 cups of water and allow to boil for 5 min. Now add the fried sooji/Rava slowly and stir simultaneously so that no lumps are formed. Add 2 tsp of ghee and garnish with chopped coriander leaves. Serve hot

Simple Rava Dosa
How to do ?
In a jar add 1 cup of Sooji/Rava, 2 tbsp wheat flour, salt for taste, 1 dry red chilli, 2 to 3 green chilli, 1 inch Ginger chopped, 1 onion chopped, ½ cup curd and little water. Grind well and empty the batter into a bowl. Now add finely chopped coriander leaves, baking soda 1 pinch (optional), ½ tsp Chilli powder and ¼ tsp Garam masala and mix well. On prepare Dosa using this batter on the tava and serve hot with some chopped onions

Quick Huli Avalakki
How to do ?
In a bowl soak 250 grams rice flakes/Avalaki in hot water for around 20 min.
In a pan add 2 tbsp cooking oil add mustard/Sasive, urud dal, groundnut, curry leaves, red chilli 3 to 4 and sauté well. Now add the soaked rice flakes/Avalaki, tamrind water 4 tsp, salt as per taste, jaggery/bela 1 tsp, red chilli powder 1 to 2 tsp and mix well. Fry it for 5 to 7 min and garnish with coriander leaves. Serve hot

Veg Dahi Biryani
How to do ?
In a bowl of hot boiling water soak 20 to 30gms of Soya chungs and allow it to get soaked well for 30 min
In a cooker add 1:2 ratio of Basumathi rice and water. Along with it add some salt, elachi, marat mogu, ananas hoova, chakke (Masala products), oil 2 tbsp, 4 to 5 green chilli and make the rice(2 whistles)
In a pan add 8 to 10 tbsp cooking oil, ½ tbsp sompu, chopped onions and sauté, now add 1 tbsp ginger garlic paste, chopped vegetables (Carrot, beans, cauliflower, peas,potato) oaked soya chungs sand sauté well. Now add half ltr curd and little water and allow the vegetables to get baked in the curd itself. Now add salt, 2 to 3 tbsp chilli powder, 1 tbsp dhaniya powder, ½ tbsp garam masala, little kasuri methi and bake well.
In a kadai add little oil, add ¼ of the cooked rice and spread, now add ¼ of the prepared masala neatly spreading it on the rice so that they form a layer of rice and another layer of masala. Repeat the process and add multiple layers of rice and masala on one another. Close the lid of the kadia and steam for 5 min. As already we have put them in layer don’t mix them too much, just a gentle mix would do. Serve it hot with Gravy.
Biryani Gravy
How to do ?
In a pan add 50 to 75 grams of groundnut, 1 tbsp sesame seeds, 50 gms dry coconut (grated) and sauté them well. Cool it and empty it into a mixi jar. Now for the pan add 2 tbsp oil, 2 chopped onions and 1 tomato and fry well and add to the same jar, add water and grind well.
For a pan add oil, half tbsp Jeera, elachi, bay leaf and sauté; now add the grinded mixture and allow oil to separate. Now add 2 to 3 tbsp chilli podweer, 1 tbsp coriander powder, half tbsp garam masala, salt and fry well. Now add water as per required consistency and allow it to boil so that it blends well. Now add chopped coriander leaves and serve with Hot Biryani.
Pan Milkshake
How to do ?
In a jar add chpped 3 to 4 Pan/Betel leafs (Viledele), 2 tbsp sugar, 1 tbsp Honey, Vanila icecream – Use Arjun ice creams for better taste and original feel of the vanilla flavor. Add 200ml Milk and grind well. Make sure its grinded well so that the leave gets blended with the milkshake. Empty this into a glass. For chocolate lover, add some chocolate sauce and sprinklers on top to make it more tasty. Enjoy the blis of pan in the form of milkshake
Garlic Bread
How to do ?
Take any special bread or sandwich bread. For 2 slices on the outer layer of both the slices apply our Chats katte special Garlic paste and add a cheese slice and salt in between these slices and place them on each other and toast on Tava. Serve it hot
Bonda Bhel puri
How to do ?
Upgrading the regular Bonda. Something different and special.
Firstly choose if you want to do the bonda by yourself or get the ready bonda. How to do the bonda we shall share in our other posts.
In a bowl add Mirchi bonda that is cut into pieces, add salt, lemon, chilli powder, black pepper powder, chat masala, finely chopped coriander leaves, green chilli past and mix well. Empty this into a plate and for the toppings add grated carrot, masala groundnuts, Sev and some more lemon if you like. Serve it hot
Oreo milkshake
How to do ?
Very delicious and yummy drink. If you are a chocolate lover you will love this for sure.
In a jar add 4 to 5 Oreo biscuits make a rough powder out of it. Empty the jar and keep this powder in a bowl. Noe for the jar add 250 ml of milk, 2 to 3 tbsp sugar, and 1 packet of Oreo biscuits and grind them well. Pour this into the glass and add the powdered biscuits. For the topping use chocolate sauce and rainbow sprinklers

Baby onion chakuli masala
How to do ?
Choose small sized onions, remove the outer layer and make round slices of it. Place them in a plate, add green chetny (Pudina chetny) on it. Place Baby Chakuli on the chetny, sprinkle salt, chat masala and some chilli powder. Add some grated carrot for topping, do not miss out to add enough lemon which gives the thrill for the entire chat. Add sweet chetny (meeta) on top if required

Pan or the betel leaf chat
How to make ?
2 major steps for making Pan Chat
Wash the betel leafs and let it dry, Place a pan on the stove and pour some oil and allow to heat. Meanwhile in a bowl add Gram flour, salt and a little jeera, mix well using water. The consistency of the batter should be like Dosa batter or even thinner than that. Now dip the Betel leaf in the batter and deep fry it in the oil like a bonda and put it on the tissue paper so that you allow for it to become crisp.
Next step, Place the betel leaf bonda in a plate, sprinkle some salt, chat masala, chilli powder, grated carrot; now spread finely chopped onions and add Green chetny (Pudina Chetny) and Sweet Chetny (Meeta), squeeze some lemon on top
Now serve it hot with grated beetroot, Sev (condiment product) and chopped coriander leaves as toppings

Banana stem Bhel
How to make ?
Take a desired quantity of Banana stem, peal away the outer layers and finely chop the edible layer of it. To the bowl add these chopped Banana stem, onions, cucumber; add lemon, salt, coriander leaves, chat masala, Sweet chetny (Meeta), Green chetny (Pudina chenty), grated Beetroot and mix well
In the end add some crunchy khara boondi to enhance the taste and serve. Healthy evening chat to satisfy your taste buds and enhance immunity as well....
