Here is a for a simple and delicious dish using black rice:

Black Rice Stir-Fry with Vegetables and Tofu
Ingredients:
• 1 cup black rice
• 1 tablespoon vegetable oil
• 1 package firm tofu, drained and cut into small cubes
• 1 small onion, finely chopped
• 1 red bell pepper, thinly sliced
• 1 cup frozen peas and carrots
• 2 cloves garlic, minced
• 2 tablespoons soy sauce
• 1 teaspoon sesame oil
Instructions:
1. Cook the black rice according to package instructions.
2. Heat the vegetable oil in a large wok or frying pan over medium-high heat.
3. Add the tofu to the pan and cook until browned on all sides, about 5 minutes.
4. Add the onion, bell pepper, and peas and carrots to the pan and cook until the vegetables are tender, about 5-7 minutes.
5. Add the garlic and cook for 1 minute.
6. Stir in the cooked black rice, soy sauce, and sesame oil.
7. Cook for an additional 2-3 minutes, until everything is well combined and heated through.
8. Serve hot and enjoy!
This stir-fry makes a great vegetarian main dish or a tasty side dish to go with grilled chicken or fish. You can also add your favorite vegetables or protein sources to the stir-fry to make it your own.
