"Kulukki" means "shaken" and Sharbat means "juice". This famous Kerala drink, is a mix of all natural ingredients. This is a sweet, sour, spice flavored mix mocktail, perfect to beat the heat in Summer. This Sharabat gets it's name because of the way it's prepared. After adding all ingredients, it's "well shaken" before serving and not stirred. The focus is more on shaken hard, rather than stirred.

Mustard paste or ସୋରିଷ ଵଟା is one of the most commonly used flavoring agent in many Authentic Odia recipes. Born and brought up in Odisha, my family is fond of any mustard paste based gravy. The cook and foodie in me always tries to prepare something original, yet in a different way. Today's recipe from Panda's kitchen is one of my favorites, I can never have enough of it.
"ଭେଣ୍ଡି ମାଛ ଖଟା" or "Fish and Okra in Mustard Paste" is a very popular authentic Odia dish. The combination of sun-dried mango, mustard paste, sugar and other spices gives a sweet and sour tangy flavor, that is loved by everyone. This recipe combines well with piping hot steam rice and makes it good for any season and reason. 😉

Evening snacks in the mid of a busy work-day is a real tension. Isn't it ? The craving needs something really quick to prepare with less ingredients. I had a similar situation one fine Evening and I rushed to kitchen with "Puffed Rice" or ମୁଢୀ in my mind(always readily available in every Odia kitchen). Quite often, Masala Mudhi is our ready-to-go snacks and this time the craving was to have some fried snacks along with a cup of hot Ginger Tea. There are some colorful vegetables too in my fridge.
Why not mix both and prepare this hot, crispy, crunchy snacks to satiate the evening hunger!!!
These fritters are prepared in a different way with a Chinese twist.

"Pakhaḷa" or "ପଖାଳ" is an Odia term for a food consisting of cooked rice washed or little fermented in water. The liquid part is known as ‘Toraṇi’, ତୋରାଣି. Having varied classifications, ‘Pakhala’ can be ‘Jeera Pakhala’, ‘Dahi Pakhala’, ‘Basi Pakhala, ‘Saja Pakhala’. Pakhala is not only a dish but emotion for all Odias around the world. We Odias are very proud of our rich heritage and culture, we all know how food is an integral part of our culture 😍😍😍
With temperatures soaring up like mad, the food pattern too changes in Odisha. The grueling summers will bring in early morning classes, morning office and everything possible that would give a little respite from the cruel summer heat and humidity. In the Odia kitchen too, the cuisine takes a turn from rich, spicy curries to the Simple "Pakhala" or water rice. 🙂🙂🙂
Try to taste every Odia’s favourite food ‘Pakhala’ with badi chura, machha bhaja, saga bhaja, baigana tamata poda, alu bharta, amba chatani, imli pop etc etc... 🙂🙂 Do not forget to drink the water of the Pakhala from the bowl, because that’s the best past about this whole dish, it has many qualities, keeping your body temperature cool is one the essential one in the summers.

Brinjal and tomatoes roasted in flames, deep fried dumplings, all mashed with raw mustard oil, chopped onion, garlic and green chillies

Strawberry is like beauty with brain 😉 they have numerous health benefits and are loaded with vitamins and antioxidants. They come with Spring season and my most favorite in fruits.
Though I love them straight, but this time, I thought to spare extra 10 mins and take advantage of this fleeting strawberry season. 😍

Are you aware of the beneficial effects of fish ? Fish head contains healthy protein, rich in Omega 3 fatty acids which lowers risks of Chronic diseases, reduce high cholesterol, high blood pressure, good for eyes and brain. It's even good in taste. So, we should quit tossing them and consider eating in-stead. I love to experiment with fish heads to prepare many varieties of dishes.
My today's recipe is "Fish head pulao" or it's another version of Bengali "Muri Ghonto". It's one of the delicious one pot meal, which requires no side dish. The fish head enhances the flavor of pulao by many times. Let's start with the recipe.

Today's recipe brings back lots of childhood memories, where these delicious crispy Ladoos were sold in 25ps/pc. On the Sunday Winter mornings, we kids used to wait for the street vendors call selling "ମୁଢି ମୁଆଁ/Puffed Rice Balls/Murmura Ladoo".
These crunchy, tasty sweet balls are Makar Sankranti/Lohri special Delicacy, though it doesn't need any special occasion to have. They are easy to prepare at home with just 3 ingredients, readily available and loved by everyone, specially kids. They can be made in bulk and stored in an airtight container for almost 3-4 weeks.

Upma needs no introduction, one of the underrated breakfast. It's devoured by all age groups and a quickly prepared, ready-to-go breakfast in most kitchens. Upma is prepared in many ways, but the most loved one is "Plain Rava Upma", the preferred breakfast in all south-indian houses and Tiffin centers.

Nethili or Anchovy is a salt water fish, rich in vitamins E, D, Vitamin B-Niacin and minerals such as calcium and selenium. It contains polyunsaturated fatty acids which is heart-friendly and help reduce blood cholesterol levels.
Various dishes can be prepared using this fish, but my favourite is "Crispy Fry", which is quick to make and tastes great. Usually the head is removed while cleaning Nethili fish, but while making this recipe, I keep the head intact as We like to eat it crispy. This dish serves a perfect seafood starter or even a side dish along with rice.

"Kartik Purnima (କାର୍ତ୍ତିକ ପୂର୍ଣ୍ଣିମା)" is one of the major festivals observed in Odisha. Kartik month is considered to be the holiest month, where people don't take any nonveg food. The last 5 days are called "Panchuka(ପଞ୍ଚୁକ)", followed by Kartik Purnima on the last full moon day. People of odisha take bath early Morning on this day and visit temples.
The highlight of this day is "Boita Bhasani"(ବୋଇତ ଭସାଣି), which people celebrate by floating banana stem, paper or thermocol boats. There's an interesting story behind. The "sadhabas" (Traders) used to go different islands for business and the women of family bid them adieu on this day with this celebration. There's this saying that, the women used to chant
"ଆ କା ମା ଵୋଇ, ପାନ ଗୁଆ ଥୋଇ...
ପାନ ଗୁଆ ତୋର, ମାସକ ଧର୍ମ ମୋର..."
which is a prayer to keep the sadhabas safe during their journey with the blessings earned in this holy month.

Breakfast is one of the most important meal in a day. Amidst the busy morning schedule, we tend to skip the breakfast most of the time or end up with something unhealthy. Breakfast time comes after 9-10 hours of gap, when the body needs to refuel. So a healthy breakfast is necessary to keep it going all the day long.
There's a notion that healthy breakfasts are boring and one common traditional idea that comes to the mind is "a bowl of cornflakes with milk". Are you bored of having this and a packet of cornflakes is still lying unused from days??? Ganapati Bappa Morya!! 🙏🙏
It's again the time of this year to welcome Gannu Bappa, who is going to make his annual visit to our home 😍
Lord Ganesha is probably the most favorite of all foodies, his pot belly stands testament "he's a big foodie" 😉 When the deity is so fond of food, even the devotees offer varieties of Bhog in order to please him and attract positive energies into their lives 😉
One of the many is "Banana sheera", can be counted as the popular offering during Ganesh Puja, Satyanarayan Puja, Varalakshmi and many other auspicious occasions. Lord Ganesha is believed to be fond of sweets, so this year I am preparing "Banana Sheera" as a prasad for Ganesh Puja. It can be prepared in a jiffy with a few ingredients. The combination of ghee, rava, banana, milk along with some chopped dry fruits, makes an amazing recipe to impress the God and satiate our taste buds. The aroma is too pious and heavenly.
Other than offering as prasad, a bowlful of "Banana sheera" can make a good breakfast, dessert or even teatime snacks. So, Use the over-riped, leftover bananas to prepare this melt-in mouth sweet dish, which never fails to impress.

Bhindi/Okra is one of the most common vegetables in every house. So I am always open to prepare some new dishes with Bhindi. Okra mixed with garlic and Chilly flavor, fried together with a lot of Onion would give the recipe an unique and different taste.
This recipe goes very well with Roti/paratha or as a side dish with rice. Either to pack for lunchbox or for a train journey, this Bhindi recipe can be a preferred option.

Pickle is one of the most popular side dish in India. It can be prepared using varieties of Vegetables, but the most loved one is with "Raw Mango" 😋
The traditional style pickle making process is laborious and takes months to get ready, that needs lot of patience. The continuous fermentation process, using hard sun-ray, is tough.
In today's fast moving world, when we find it hard to take rest properly, "Instant" is the new trend. I never dared to prepare any pickle until I got to know this recipe from one of my "not sister by blood, but sister by heart" 😍 I am forever thankful to her and now I can make any pickle ready within few hours. It tastes awesome and can be stored for at least a month.

The chicken thigh pieces marinated in marinade with very few ingredients and cooked correctly... This preparation uses very less oil, so can be added to a diet meal.

Summer is here and the only good part for me in Summer is Mango.. I Love to have both raw and ripe mangoes. When Mangoes are here, how can I stop Preparing my favorite Summer seasonal must have cuisine, which is "Amba Khatta" or "Raw Mango Chutney"
I know this recipe from my Granny (Mom's mom) and I have been using the same way always, it's too good with very less ingredients. The tangy and sweet flavor of Amba Khatta is liked by almost everyone and can be a side dish with Rice or Roti. Since no onion or garlic is used, it can be prepared in auspicious days also.

Gujia are small dumplings of half moon shape, with outer covering made up of Maida and Sooji and inside stuffing is filled with various ingredients like grated coconut, ghee roasted dry fruits, grated paneer, mawa and many more as per your choice. It's a Holi special dish, mostly prepared in North India. It has many Nick Names based on the region like Karanji, Somasi etc.
This is one of my favorite in Holi, and in today's recipe I am going to share my favorite version of Gujia, stuffed with roasted dry fruits and Grated coconut.

‘Pakhaḷa’ is an Odia term for an food consisting of cooked rice washed or little fermented in water. The liquid part is known as ‘Toraṇi’. Having varied classifications, ‘Pakhala’ can be ‘Jeera Pakhala’, ‘Dahi Pakhala’, ‘Basi Pakhala, ‘Saja Pakhala’. Like "Dahibara Aloodum", Pakhala is not just a food, it's an emotion for every Odia..😍😍😍
With temperatures soaring up like mad, the food pattern too changes in Odisha. The grueling summers will bring in early morning classes, morning office and everything possible that would give a little respite from the cruel summer heat and humidity.
