Welcome to Migai’s Story of the week:
This week we explore the world of sourdough with Arabindh, the founder and baker at 5x foods, Coimbatore’s own sourdough baker. Let us hear his story to sourdough from him:

“It all started around 2015, when one of our friends mentioned a book named COOKED – A Natural History of Transformation by Michael Pollan. It talked about bread and how it was made with only 3 ingredients – Flour, Water and Salt. The way it was made for centuries before the advent of modern industrial bread in the early 20th century. This piqued my attention and I too wanted to bake this bread and that started the journey, to educate myself on this technique called Sourdough.

Not only was the technique new, but also I was determined from day 1 that I wanted to use only whole wheat for the bread, whereas all-purpose flour is normally used, which made it an even greater challenge. Both of these factors steepened the learning curve and it took me more than a year to learn to bake bread that was barely eatable.

It then led me to explore many aspects that determine the final output: wheat, milling, flour, dough mixing machine, ovens, bread-making techniques, etc. We chose Emmer Wheat as it is an ancient variety that contains low amounts of gluten and is rated low in the Glycemic index. We also found that the way the flour is milled makes a difference in the outcome of bread. That led me in search of a miller. We stone mill at a place nearby, hopefully, we will have our own mill soon.

My wife Arthi, along with a couple of friends, built a small wood-fired cob oven over a few weekends. Baking directly in the heart of that wood-fired oven was different from baking in a small OTG oven we'd previously used. The bread came out great, At that point, it was very clear to me that a masonry wood-fired oven had to be built and that perfect sourdough bread was achievable.

In the course of the next two years, we built a medium wood-fired masonry Oven with a hearth in front of our house. All self-taught and with a help of a passionate Mason Robinson.

Hope you have learnt what Agedashi Tofu is, if not learn more on the carousel.

Ingredients required:
1. Tofu from Joy Box.
2. Potato starch / Corn Flour
3. Cooking oil for deep-frying or shallow-frying.
4. Dashi ( Could be replaced with Veg or chicken stock )
5. Mirin ( Could be replaced with Vinegar and sugar to counteract the sourness)
6. Soy Sauce
7. Garnish: Radish, Green Onion & Ginger,

Directions:
1. Cut the tofu block into 6 pieces (roughly 1.5-2 inch cubes) and coat them with potato starch/Corn Starch
2. Make the sauce by combining dashi (or stock), mirin (or Vinegar & Sugar), and Soy sauce.
3. Deep fry the tofu for 2 minutes until lightly browned and drain the excess oil.
4. Serve the tofu in a bowl and pour the sauce on top. Garnish the tofu with grated radish, chopped green onion, grated ginger,
