Malai tikka - with Garlic flavor can make your party come alive.
Easy marination and cook with an Air fryer in 10 minutes.
If I can do it, then you can too.
Ingredients:
1. 1 Kg (2 Pound) Chicken
2. 4 Green chili
3. Garlic (one full)
4. Ginger (1 inch)
5. 1 handful Cashew nuts (Unsalted)
6. 1 Lemon
7. Kasoori Methi (Fenugreek leaves): ( https://amzn.to/4b2BHt1 )
8. 1 tsp Coriander powder
9. 1 tsp Salt
10. 1 tsp roasted Cumin
11. 2 tbsp Yogurt (plain)
12. 2 Tbsp Full cream (or Heavy whipping cream)
Recipe
Chicken Marination:
1. Add Cashew nuts, Ginger, Garlic, and green chili to the mixer grinder. Grind lightly.
2. Add 2 tbsp yogurt. Grind lightly again.
3. Add 2 tbsp cream and grind lightly.
4. Keep it aside.
5. Take the chicken and add Cumin, coriander powder, and salt.
6. Add Garlic, Cream paste that we made above.
7. Sqeeue fresh lemon.
8. Mix and then cover it with a plate or food plastic wrap (I used Reynolds food plastic wrap: https://amzn.to/3JyhPSZ )
9. Let it marinate for 5-6 hours.
Cook:
1. I am using an air fryer (Ninja Air fryer & grill: https://amzn.to/3WdEwDG ) as it cooks faster with less Oil.
2. if you do not have an air fryer or prefer other methods, you can shallow fry chicken in a pan (like Members mark ceramic pan: https://amzn.to/49QcelQ ) or bake it in an oven ( like Elite Gourmet Oven: https://amzn.to/3QhzAcV ). It is your choice.
3. Add chicken to air fryer and cook it on low 'Grill' option for 10 minutes.
4. The chicken will get light brown. You can check by cutting it from the middle. If it cuts easily, the chicken tikka is ready to serve.
5. You can garnish it with Coriander leaves, Lemon Juice, and little bit of oil to make it more shiny and juicy.
Khichdi is popular during fasting time but is a very good high snack for normal days.
We would add it to our daily hunger snacking to stay healthy.

It works as a high-fiber high snack even if you are not fasting. We suggest adding this to your regular menu as it can be made within minutes and serve as your fast breakfast.

8. Green coriander leaves
9. Salt
10. Sugar (Optional)
11. 1 Lemon or lemon juice
Make Sabudana Khichdi
1. Soak sabudana in water for 4 hours. Rinse.
2. Add Oil/Ghee in a pan. Stove on medium flame. Add 1/4 tsp Cumin, 4-5 Curry leaves
3. Add Boiled chopped potato
4. Green chili - chopped
5. Add densely crushed peanuts - as per taste and mix
6. Add chopped green coriander leaves
7. Add the Sabudana Peanut mixture to the pan. I use a Members Mark ceramic pan (https://amzn.to/49QcelQ) as its quality is quite good.
8. Add Salt - as per taste
9. Add 1 tsp Sugar (Optional)
10. Squeeze 1 fresh lemon
11. Let it cook for 1 min. Keep stirring.

Chicken curry is easy to make at home with restaurant-style color, flavor, and taste.
I made this for a home party and it has been a hit.
Ingredients:
1. Any Chicken (I have used Chicken breasts)

3. Badshah Chicken curry Masala: https://amzn.to/3UmESGw
4. Onion
5. Garlic
6. Ginger
7. Green chili
8. Tomato
9. Cumin
10. Coriander powder
11. Garam Masala
12. Salt
13. Mango power (Khatai)

Recipe
Make Ginger garlic paste
Grind Garlic, Ginger, and green chili using any food grinder. I used a Ninja food chopper (https://amzn.to/3VXMj8u) as it helps grind it finely but not to a paste.
Grind Onion and Tomato separately and keep aside.
Marinate chicken:
1. In a pan, add 2 tbsp Oil (you can use ghee or any oil you like).
2. Add 50 gm MDH Bombay biryani masala.
3. Add 1 tbsp yogurt/curd.
4. Add Chicken pieces.
5. Mix and keep it aside for 1 hour.
Cooking:
1. Take a large pan and switch on the stove on high. I am using a Tramotina cast iron Dutch oven 5.5qt ( https://amzn.to/4aQAZzc ) as once it gets hot, the food cooks like it is being cooked in real tandoor heat.
2. Add Oil of your choice.
3. Add 2-3 tsp Cumin (Jeera). Let it cook for 2-3 minutes until Cumin gets dark brown.
4. Add Ginger garlic paste.
5. Let it cook for 5 minutes. It will turn light brown too.
6. Add Onion and let it cook for about 15 minutes. The onion will turn light brown or dark pink.
7. Add Tomato paste.
8. Add Salt, red chili powder, coriander powder, Khatai and Garam masala. Mix and let it cook for another 10 minutes.
9. Add marinated chicken and let it cook for another 10 minutes.
10. Add Badshah chicken curry masala. Let it cook for another 5 minutes.
11. Add Kasoori Methi. Mix.
12. Let it cook on sim (low stove) for another 5 minutes.
Serve hot and enjoy.

What are you cooking at home for your wife/husband?
Work from home husband's Recipe (Anil):
1. Take 2 brown bread slice.
2. Grate boiled Potato.
3. Add little onion finely chopped to add crispness.
4. Add finely chopped Bell pepper (Capsicum) - 1/5 bell pepper is fine.
5. Add finely chopped 1 green chili.
6. 2 pinch salt, 1 pinch Garam masala, 1 pinch red pepper.
6a. Mix and sandwich between the two bread slices.
7. Use desi ghee to roast the sandwich and make it crisp.
8. Cut it into 4 pieces for easy picking and eating for your wife. Note that presentation and ease of eating makes all the difference.
Total time:5 minute.
Don't forget to boil Chai on second burner. I forgot and got salary cut!

Only the salad was good in Air Canada meal. Extremely dry bun - could not bite it easily. Dry cake and main course dish noodles and chicken were just okay.
This is the first time ever in my life that i have cursed flight food. I usually adjust with any food but this was certainly sub-standard and the bun and cake were definitely made days ago.
Has your experience been same with Air Canada too?
