My kind of weekend dinner : Chicken kofta dunked into simple onion-tomato gravy, no cream, no butter. Will enjoy with plain roti and salad. Yuuuuummmm

Mango Upside down cake
Chunks of fresh mangoes with caramelised sugar over a soft and spongy cake, aha, a mouth full of heaven. Use mangoes those are little firm, not the soft ones.
The first pic is same cake but I decorated with extra fresh mangoes from top this year.

If you have a cauliflower at home and you're bored eating the same Aloo-gobi masala, try this simple yet delicious side dish with rice/ chapati and a bowl of any dal with some salad by the side. You'll love this I guarantee you. Detail recipe below:
Adraki Aloo Gobi
,**Boil the cubed potatoes till they are just done. Sprinkle little salt and turmeric powder over cauliflower pieces and set aside for 10-15 minutes.
**Heat 1 tblsp. oil in a pan, add cauliflower florets. In medium flame, saute the cauliflower florets till they are just done.
**Heat 1 tblsp. oil in the same pan, temper it with cumin seeds, then add 1/2 tblsp. ginger paste and chopped green chillies, immediately add 1 chopped tomatoes. Saute for sometime till tomatoes are soft. Add turmeric, cumin, coriander and red chilli powder.(1 tsp each)
**Mix well everything, now add yogurt, 1/2 tblsp. ginger paste and 1 tsp sugar. Saute for another 2-3 minutes. Now add sauted cauliflower and boiled potatoes. Add about 1/2 cup of water. Season with salt.
**Wait till water evaporates and a nice thick gravy covers all the cauliflower and potato pieces. Lastly sprinkle fresh coriander leaves allover and remove from heat.

A delicacy of Bengal in Monsoon season : Pat Patar Vada ( Jute leaves Fritters)
I love this fritter, so always buy from the market. But this year as soon as I made some kitchen garden beside my house, it has grown by itself. See in the pic, there are so much of them. Also pumpkin and ladies finger plant, all grown by itself with the onset of monsoon. So made these fritters yesterday, harvested from my own garden.
Here is the recipe ****
You Need:
*Pat shak(only the leaves of pat shak, no stem)....Few
*Onion : 1, finely chopped
*Ginger + garlic : 1 tblsp., Finely *chopped
*Green Chillies : 1or 2, chopped,as per taste
*Salt to taste
*Kalonji(kala jeera/black cumin seed) : 1/2 tsp.
*Besan(chickpea flour): 2 tblsp
*Rice flour( chaler g**o): 1 tblsp.
*Corn flour: 1/2 tblsp.
{Increase the flour mixture as needed }
*Water as needed to bind
*Enough oil for shallow frying, no need to deep fry these
Method :
+ First, wash the leaves and dry before use. Tear off the main thick middle vein of the leaves and then chop roughly.
+ Take all the above ingredients except oil in a big bowl, mix dry first.
+ Then add water slowly in the bowl and mix. Add just enough water to bind and make a small Patty out of it. + Prepare small round patties. Heat enough oil for shallow frying and in medium heat fry all the patties till brown from both sides.
Showing up after long time in this space. Though I check out all my friends'post regularly, but I don't feel to post anything by myself. Our surroundings have become to sad, so gloomy, that I feel demotivated. Just investing all my time to keep my family healthy n protected.
Today made this Moong Dal Chilla for Monday breakfast with .sampann noong dal chilla mix and it was so good. Mix is quite tasty n perfectly spiced. You just need to add water in the mix and you are good to go. So you all can try, your weekday healthy breakfast will be easy to serve.
Do you love Coconut? I loooooove Coconut.. I even make a cake with freshly grated coconut. Dessicated coconut also works equally. I also use a cup of coconut milk in this instead of normal milk as it gives a coconutty overloaded flavour but normal cow milk can also be used.
It is a full proof recipe and it always a soft and fluffy cake everytime. See the texture in the 3rd pic.
