This was a dessert on our weekend Cookhouse menu yesterday & we received much love on it. Hence, we would love to share it with you all.

HONEY FIGS WITH SWEETENED YOGHURT AND MICROGREENS
Ingredients
For the Figs:
2 figs
2 tablespoons honey
YOGHURT
1 cup Greek yoghurt
2 tablespoons honey or any sweetener you prefer
Beetroot and Spinach Microgreens
METHOD:
For the Figs:
Make cross cuts in a fig from the top but make sure not to cut through the base. Place these in a baking tray.
Mix the honey with 1 tablespoon of water and drizzle over the figs. You can also used cinnamon infused honey.
Bake in an oven for about 7-8 minutes at about 150 degrees. Take out and let them steep in the juices for about 20 minutes.
For the Yoghurt:
Whisk the yoghurt till smooth. Add in the honey till desired sweetness is achieved. Chill in a refrigerator till needed.
PLATE UP:
Spread the cold yoghurt on a plate or in a bowl.
Place the fig on top and drizzle the remanent juice over it.
Top with the beetroot & spinach microgreens. Never cook micorgeeens as they will lose their nutritive values.
The earthy flavour of beetroot pairs well with the figs & yoghurt in this dish.

Recipe:
1 Kiwi
1/2 cup pineapple
1/2 Apple
Honey if you need as per taste
Blend all the above except the microgreens. Serve in a glass topped with the sunflower greens.
Believe us - the crunch and texture of these greens works brilliantly with the juice. You can choose to blend them in but we prefer the crunch of these as you eat them.
