I wish I could have written this in urdu as there could not have been a better language to express the Nazaqat (finesse) & Nafasat (sophistication) of the Cuisine of Lucknow. I have always argued that the food of Lucknow is really not the food of Avadh. The food of Lucknow exists in its homes and Dr. Izzat Husain has for the first time brought it out from its hidden kitchens.
Unfortunately the Royal food of Lucknow became street food and gurbat (poverty) caused it to lose its eminence, but I am personally thankful to him to have made this bold decision to expose the initiated & un-initiated to this wonderful cuisine which took Persian/Mughal food to new heights of taste & excellence.
There is so much I could write on this but I shall not bore you with is and would just tell you to go Saffron and spend time chatting to the master about the nuances of our cuisine of Nakhlow.
Be amazed by the fantastic flavour of the Shikimpuri Shami Kebab stuffed with hung yogurt which I was informed originated in Syria. While I was not really convinced as I believe that the Shami of Lucknow also called Bharwan Kebab is a shallow fried kebab made from cooked mince with bengal gram, stuffed with onions & mint. But then that is rather academic and does not tell you of how good it is.
I tasted some 20 dishes over a 3 hour lunch and the outstanding dishes that I would return again and again for would be the Chukandar Paneer, Gosht Mewazad, Shabdegh Nihari, Majlasi Ghutwa Kebab accompanied with Izzat ki Roti & Warqi Roti. The outstanding & moderate use of spices & oil allowed the meal to sit well and because the Chef is a Unnani Doctor he knows how to make that happen with great aplomb. The use of beetroot to make the sauce was a first for me & then he used the same puree to great effect in the Surkh Masoor Dal. The excellence of cooking meat in the oils from dry fruits gave Gosht Mewazad a flavour & taste best suited to be enjoyed with the Warqi Roti which is the softest romali type roti one can taste.
I could have gone on and on but I shall refrain & let you do the exploration yourself. Do not miss this chance believe me.

@navami night ordered food from Indian splendid, speciality restaurent of Dr Cef Izzat Hussain, in Noida. Post lockdown time this was my 1st ordere from outside. Trust me , I made the right desicision. Food was very nicely packed, Dr chef is following all steps of sanitization. Food was extremely delicious. Biryani had the Awadhi flavour as expected. Mutton pieces were succulant and flavourful. You can have the biryani rice even without mutton. Veg pulao with kabuli chana was extremely aromatic. The sheermaal is so different and delicious . Complimenting the galawati kababs. Firni was outstanding. Looking forward to taste more delicacies from this restaurent. Zomato does not deliver from here in south delhi. It was arranged from another delivery . Must order food from here. It is clever cooking using the recipes of the nawabs of Lucknow and the principles of unani medicine. Anyone familiar with Persian food will feel that they’ve been transported!
