Kashmiri Mutton Yakhni Recipe
Kashmiri Mutton Yakhni is a flavorful and delicious Kashmiri cuisine that is made with mutton or lamb cooked in yogurt-based gravy along with a mix of aromatic spices. Here's a step-by-step recipe to make Kashmiri Mutton Yakhni at home:
Ingredients:
500g mutton or lamb
2 cups yogurt
1 teaspoon ginger paste
1 teaspoon garlic paste
1 teaspoon fennel powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon black pepper powder
2-3 cloves
2-3 cardamom pods
1 cinnamon stick
Salt to taste
2 tablespoons ghee or oil
Water as required
Instructions:
Wash the mutton or lamb pieces in cold water and set them aside.
In a large bowl, whisk the yogurt until smooth and add ginger paste, garlic paste, fennel powder, cumin powder, coriander powder, black pepper powder, and salt. Mix well and keep aside.
Heat ghee or oil in a pressure cooker or a deep pan. Add the whole spices, cloves, cardamom pods, and cinnamon stick, and fry for a few seconds until fragrant.
Add the mutton or lamb pieces and fry for a few minutes until browned on all sides.
Add the yogurt mixture to the mutton or lamb pieces and stir well. Add water as required to cover the meat.
Cover the pressure cooker or the pan with a lid and cook for 5-6 whistles in the pressure cooker or until the mutton is tender.
If using a pan, simmer the mutton or lamb for 45-50 minutes or until the meat is cooked and tender.
Once the mutton or lamb is cooked, remove from heat and let it cool for a few minutes.
Serve the Kashmiri Mutton Yakhni hot with steamed rice or Kashmiri naan.
