Looking back in history this cheese pie is made with phyllo pastry stuffed with a variety of ingredients, ranging from the traditional feta and honey to caramelized milk, meat minces, herbed eggs, and a lot more than one can think of.
The inspiration came to our chef ://www.instagram.com/saurabh.w/ one evening when remembering the time he spent with Yia-yia Porta (Yia-Yia = grandmother in Greek). He says “she would find absolute delight in cooking pita for her daughters, grandchildren, and myself. She has fed me some of the most delicious pitas I could ever have.”
For our version, we do a spanakopita meaning ‘spinach pie’. The gently cooked spinach is chopped up and mixed with the most authentic feta cheese. This is then rolled in layers of buttered phyllo pastry and later baked fresh to order in a brick oven.
Being served with pickled radishes and a delectable pumpkin mousse and sesame seeds, this dish evidently portrays a balance of sweet, salty, sour, and umami all in one go.

Skordalia & Bread:
This is one of the most recent and highly gastronomic additions to our menu. It resulted in our affinity to our friends in Greece. Here we serve a house-made skordalia, a staple in every household of Greece, which is a smooth and light blend of potatoes, garlic, and lemon.
The bread is first toasted and then topped up with the skordalia. These are then topped with the Japanese Tobiko, a kind of cured fish roe (flying fish eggs), which feel like small bubbles in your mouth. Finally, fresh lemon zest is added to add it peculiarly vibrant zing to the core flavors. Each of the three topped-up bread is paired with different herbs such as dill, chervil, baby cilantro, and others depending on their availability with our team of botanists.
