Glycemic index is used to determine how much a food can affect your blood sugar levels.

Foods high in refined carbs and sugar are digested more quickly and often have a higher GI vs whole foods high in protein, fat, or fiber.

So lower the GI, the better.

But again, the glycemic index should not be the only factor to consider when deciding what to eat. The fact that a food has a low glycemic index does not imply that it is super healthy.

When you eat carb based foods, carbohydrates break down into glucose, which makes its way into the bloodstream.
