Whole wheat Mango pie recipe- save for later
Ingredients For Pie Crust
300 gm Whole Wheat Flour
150 gm Butter Cold
4 tbs Ice Water
1 tbs Apple Cider Vinegar
1/2 tsp Salt
Ingredients For Pie Filling
600 gm Mangoes Cubed
2 tbs Brown Sugar
1 tbs Corn-Starch
1/8 tsp Salt
Instructions
To make the Mango Pie crust, mix flour, salt, and butter in a mixing bowl. Using fingertips mix butter into the flour until it looks like bread crumbs.
Add vinegar and ice cold water and mix it. Combine the dough together. Cling wrap the dough and refrigerate for 45 min.
To make mango pie filling cook mango with salt in a saucepan for about 10 minutes on a medium flame.
When water evaporates, add brown sugar and cook for another 2 min.
Transfer the prepared filling to a bowl and refrigerate for 45 min. After 45 minutes add corn-starch and mix well.
In the meanwhile keep the oven preheating at 180 °C.
Divide the dough into two parts. Using a rolling pin roll out one part into a 12 inch circle with 1/8 inch thickness.
Gently lift the rolled dough and transfer it to pie mold. Using fingers, press the dough down.
Scrap the extra dough using a knife.
Fill it with the prepared mango filling.
Take the other portion of the dough. Roll it and use it to cover the mango filling.
Give it a milk wash.
Now, bake it in a preheated oven at 180°C for 50 minutes.
When baked, take the pie out. Un-mould it after 10 minutes and cool it at room temperature.

Baked Mango Yoghurt Recipe- Save for later

This summer, you should try this recipe as it tastes awesome with Mangoes. I am sharing the written recipe here and the link to the video recipe is shared in my stories.

Ingredients
150 gm Hung Curd
50 gm Fresh Cream
100 gm Mango Pulp
80 gm Condensed Milk
Instructions
In a bowl, add hung curd and mango pulp.
Now add Condensed milk and fresh cream to the rest of the ingredients.
Using a whisker, whisk everything until combined.
The mixture is ready.
Now pour it into a ramekin.
Place the ramekin in a large size cake tin or tray and cover the ramekin with an aluminium foil.
Fill the cake tin with water.
Now bake it in a preheated oven at 180 °C for 35 minutes.
After 35 minutes of baking, take the tin out from the oven carefully.
Remove the aluminium foil.
Keep it in the refrigerator for 2 hrs and then serve.

Recipe of Wholewheat Carrot date muffins- save the recipe for later

Happy Easter everyone!

Today I am sharing the amazing recipe of carrot date muffins which you can make to treat your guests at Easter party 🎉

Ingredients: (cup size used is 240ml)
1 cup of WholeWheat Flour
1 cup Grated Carrot
1/2 cup Dates Puree
1/3 cup Oil
1/2 cup Milk
2 tbs Brown sugar
1/4 tsp Cinnamon Powder
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
For garnishing Raisins
Instructions
First thing first, collect all the ingredients together.
To make a date puree, soak 10-12 dates in lukewarm water for 30 minutes. Drain the water and grind the soaked dates to a smooth paste.
In a bowl, mix milk, date puree and oil.
Add grated carrots, cinnamon powder and sugar. Mix well.
Sift wheat flour, baking powder, baking soda and salt altogether.
Gently fold all the dry ingredients into wet ingredients and make a smooth batter.
Fill each muffin liner up to ¾. Add some raisins on top.
Bake these muffins in a preheated oven at 180 °C for 25 minutes.
Once done take out these muffins and let them cool.

Baked Baati Recipe- save for later

Holi is not just a festival of colours but like any other Indian festival, it's a festival of food as well. This celebration is incomplete without Gujiya, dahi vada and Daal baat at my place. Not sharing all the pictures of the food but of Daal baati only with a no-fail recipe of Baati. I am sure you will love it.

Ingredients
400 gm Whole Wheat Flour
100 gm Semolina
1 tsp Carom seeds (Ajwain)
4 tbsp Ghee
1 tsp Salt
200 ml Water or as required

Instructions
In a kneading bowl, add whole wheat flour, Semolina, salt, carom seeds and melted ghee.
Rub the ghee into dry ingredients well. This process may take 2-3 minutes.
Now add a little water to knead the dough.
Cover the kneaded dough with a clean kitchen towel and keep it aside for 10 minutes.
Meanwhile, keep the oven for pre-heating at 200 °C.
After 10 minutes, knead the dough again and then make equal size balls out of it
Place all the shaped bati on a greased tray.
Bake these at 200 °C for 20 minutes and flip the side in between.
Once the baking is done, take the tray out from the oven.
Dip all the baked bati's in ghee and let these rest for 1-2 minutes.
Bati is ready to serve. Serve hot with dal and garlic chutney

It's my Laddoo's 17th Birthday so cake तो बनता है न भाई

Garv loves cake with minimal frosting and zero whipped cream. Dense and moderate sweet Chocolate cake with dark chocolate is his favourite. So keeping all his likes in mind, I baked this cake.

The cake has eggless Chocolate sponge baked using Belgium cocoa powder, soaked with black coffee and finally covered with Dark chocolate ganache. To give it a rustic look I didn't smoothen the sides and added a border of Golden Luster. Just to fill the top, I added fresh strawberries.

I will be sharing the cross-section of the cake in the next video. It came out super moist, rich and uber delicious 😋

If you have spent any time baking, you’ve likely come across the phrase “Do not overmix.” This is because once you add flour to a recipe, mixing encourages gluten development, which creates a chewy or tough texture. We knead bread dough to activate gluten so that the bread has a good chew factor but we don’t want that in tender cakes and muffins. So When a recipe says, “do not overmix,” stir only until the batter is uniformly mixed.

I'm sure this will help you to get fluffier and soft cakes and muffins next time.

Eggless Rajbhog flavour cake- this is the perfect recipe to celebrate Bappa's arrival and offer him this delicious cake as prasad. Do try the recipe and don't miss tagging me while posting the picture of your cake. Here is the recipe
Baking time: 40 minutes
Baking temp: 180° C
Tin size: 8 inches
Ingredients -
180gm flour
2 tbsp cornstarch
130gm powdered sugar
60gm yogurt
50gm oil
100gm milk (or as needed)
Few strands of saffron
1 tsp Rajbhog essence
1/2 tsp cardamom powder
1/2 tsp Baking soda
1/2 tsp Baking powder
A pinch of salt
Procedure -
Sift all the dry ingredients and keep them in a bowl.
In another bowl mix curd, oil, and essence.
Now start adding dry ingredients in batches and continue to mix.
Add milk to make the batter of pouring consistency.
Pour the prepared batter into a lined baking tin and garnish with a choice of nuts ( i prefer using pistachio).
Now bake at 180°C for 40 min.
Once baked, let it cool down and then slice.

Eggless Plum Crumble Recipe- save for later but Shower the love now 😍

The temperature has dropped here in Pune because of rain and today I was badly craving for something sweet yet hot. Luckily I had some plums so quickly I mixed everything and baked the yummiest Plum Crumble. This is a "Must-try" recipe so try it and let me know your feedback.

Ingredients
250 gm Sliced Plums
50 gm Powdered Sugar
1 tsp Orange Zest
1 tbsp Cornflour
50 gm All-Purpose Flour
30 gm Almond Meal
40 gm Brown Sugar
1/2 tsp Baking Powder
1/8 tsp Salt
1/2 tsp French Vanilla Essence
1/2 tsp Cinnamon Powder
40 gm Unsalted Butter

Instructions
In a bowl take sliced plums. Add powdered sugar, cornflour and orange zest to it. Mix it and let it rest for 10 minutes.
In another bowl, take unsalted butter. Add Vanilla flavour.
Add all-purpose flour, Almond meal, brown sugar, cinnamon powder, and a pinch salt to it.
Using finger tips, start mixing everything.
Now add baking powder and give it a stir. The crumble is ready.
In a 6 inch ramekin, pour the prepared plum mixture.
Top it with prepared crumble topping.
Bake it in a preheated oven at 180 C for 35 minutes.
After 35 minutes, take the baked crumble out from the oven.
Scoop it out and serve hot with a scoop of Vanilla ice cream 😋

Sweet Tutti Frutti Bread Recipe- Save the recipe for later

Many of you asked me to share the recipe of sweet bread. So here it is
Ingredients
400 gm All Purpose Flour
5 tbs Refined Sugar
15 gm Fresh Yeast/5 gm Active Dry Yeast
1/2 tsp Salt
2 tbs Custard Powder
1/2 cup Tutti Frutti
3 tbs Oil
2 tbs Milk For Milk Wash
250 ml Water
Instructions

Take 50ml LukeWarm Water. Add 1 tbs of Sugar and Yeast. Mix it well and keep it aside until it froths.
In a mixing bowl, take all the dry ingredients.
Add activated yeast solution in the bowl and knead a dough. While you knead, add water as per the requirement.
Knead the dough for 10-15 minutes for it to become non-sticky and elastic.
Keep the kneaded dough in a greased bowl and cover it with cling wrap. Keep this aside for about 30-34 minutes or until the dough doubles in volume.
After the first rise, take the dough on a surface, lightly dusted with flour. Punch the dough to release the air.
Spread the dough on the surface and sprinkle tutti frutti. Gently fold the dough and knead it for another 5 minutes. The purpose is to mix the tutti frutti evenly in the dough.
Shape the dough into a loaf and place it in a greased loaf pan.
Cover the loaf pan with a cling wrap and keep it aside for another second rise. The dough should again double in volume.
Preheat the oven at 200 degrees Celsius for about 10 minutes.
After the second rise, remove the cling wrap. Give milk wash to the dough.
Bake the loaf in the preheated oven for about 35 minutes at 200 degrees
Once the loaf is baked take the loaf out and de-mould it.
To keep the top crust soft, brush the crush with butter and let it rest on a wired rack for 2 hours, before slicing.

50-50 Bread Recipe- save for later but you can thank me now 😜
Ingredients -
250 gm Whole Wheat Flour
250 gm All Purpose Flour
5 gm Instant Yeast
5 gm Sugar
5 gm Salt
270 ml Water
2 tbs olive oil
To activate yeast, dissolve it into lukewarm water with sugar. Let it rest until it froths.
In a large mixing bowl, add flour, salt, and activated yeast solution. Start kneading the dough by adding water to it. Make a soft and little sticky dough.
Transfer the dough on a lightly floured surface. Add oil to it and knead it for 8-10 minutes until the dough becomes non-sticky.
Place the dough into a greased bowl and cover it with cling wrap. Place the bowl into a warm and dry place until the dough doubles in volume.
Once the dough is doubled in volume, take it out on the kitchen counter. Punch it to release the air.
After punching, roll the dough into a rectangular sheet and shape it into a tight log.
For this recipe, I have used Pullman loaf tin (10×4.5×4.5).
Grease the tin and its cover with butter. Place the dough log into the tin with the seam side facing the bottom of the tin. Close the lid and let the dough rest for the second rise.
Meanwhile, preheat your oven to 200 °C. After 30 minutes of resting time, place the tin with a closed lid into the preheated oven for 35 minutes.
After 35 minutes, take the tin out from the oven. De Mould the bread.
Let the bread rest on a cooling rack for a minimum of 2 hours before slicing.
Slice the bread and enjoy.

Bread baking is absolutely magical and so therapeutic. For me it works like a meditation. I think it's been more than 8 years now since I started baking Bread at home and then there is no looking back. Eggless Mango Semolina Muffins- Save the recipe for later

Hey bakers, today being it is simply impossible not to share a mango recipe for my readers. So here you go......
Ingredients
1 cup Semolina
1.5 cup Mango Pulp (no added sugar)
1/3 cup Sugar Powdered
1/4 cup Milk
1/4 cup Oil
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
1/2 tsp Cinnamon Powder
Chopped Unsalted Pistachio For garnishing (optional)
Instructions
In a large mixing bowl add mango pulp, sugar, semolina, milk and oil. Make a smooth batter.
Let the batter rest for 10 minutes.
After 10 minutes, add cinnamon powder, salt, baking powder and baking soda to the batter.
Pour this smooth thick batter into a piping bag.
Arrange muffin liners in a muffin tray and fill each cup up to ¾.
Sprinkle chopped pistachios. Meanwhile, preheat the oven for 10 min.
Bake these muffins at 180 degree Celsius for about 20 minutes.
Once baked, take out the muffin tray from the oven.
Place all the muffins on a wired rack and let them cool.
Eggless Mango Semolina muffins are ready to serve
