Classic BLT, but made it boujee! Pimped up my sandwich with pesto sunny side up, a mix of microgreens, lettuce, Arugula, some avocado for the creaminess, bacon for the crunch, sauteed spinach for the health - all combined perfectly on top a perfectly toasty sourdough ciabatta bread!
Feeling Crabby today? Me too! This Konkan delicacy is out of this world. Coconut based curry with some kokam to add the additional unique regional flavours. Man oh man. This crab turned out amazing.

Veg manchurian gravy with a twist. I essentially combined two of my favorite indo-chinese recipes - hot and sour veggief and veg manchurian balls in the best ever gravy, if I may say so myself. The addition of different textures truly elevated the dish - giving some crunch, some additional flavours and smokiness.
Cooking food is therapeutic. Right before the food is ready to be served, is such a beautiful feeling as a chef. My baby, my creation is ready. It is literally "mehnat ka fal".

Arbi Ke Patte Ke Pakode Recipe or colocasia leaf roll recipe. Often made in the rainy season – this delicacy is especially famous in the Northern and Western States of India. Almost like a pakoda, Patode is a very technical recipe and requires a “set hand”, so to say! It is definitely a test of a good cook.
A really important part for making patode is to roll up the leaves after lathering on the chickpea flour (besan). Once rolled up tightly, and filling in all the cervixes, you steam the roll for about 8 minutes.
This ensure cooking of the besan mix evenly and helps removing the after-taste of the arbi leaves. After steaming, cool the roll and cut into inch long rolls and shallow fry for a minute on both sides! And voila! – enjoy your perfect snack for a monsoon day!

Sundays in the monsoon season, definitely deserves some celebratory food! Today's speciality includes - Mutton Kosha!
Taking about 2-2.5 hours in total, this dish is a total treat and what a crowd pleaser! An iconic Bengali dish, this is my dad's recipe, made with a lot of love and guidance.
The word kosha is similar in meaning to bhuna, which involves slowly cooking a gravy over low flame for a very long time to get a rich, dark-brown gravy and melt-in-the-mouth mutton pieces.
I should inform you here that mutton is commonly used to refer to goat's meat.

Basa fillet, fried to its crispy perfection. , Served with a hearty helping of fried rice to complete the meal.
If there is one food I could easily be happy eating all days of the weekend, it'll definitely include some crunch and texture. This fillet fish hits just the right spot.
Serve it with mint and coriander chutney or even some Chipotle mayonnaise for added flavourful bombs.
For mine, I just made some especially zingy burnt butter garlic lemon sauce and it was pretty epic, ngl.

Baked feta and herby bursting cherry tomatoes cook down into the most luxurious creamy sauce EVER for pasta! Inspired from the viral TikTok recipe, this baked feta pasta will quickly become a dinner regular! However, here I have added some White wine when cooking the tomatoes, some sautéed onions to add an extra depth of flavour. Keep the tomatoes to a minimum for extra creaminess.
Also, I used these beautiful Conchiglie pasta, which just act as the most delightful cups to scoop up the delectable sauce!

This easy apple strudel recipe is so so simple and oh so delicious! The sweet apples are flavoured with warm spices like nutmeg, cinnamon etc. The apples are cooked with a bit of sugar (for the caramalization) and raisins and walnuts are added in before filling the pie (i.e. the buttered up phyllo sheets)

Changing my daily eats, by adding a pop of green! Pesto Omelette on a ciabatta bread with a feta, ricotta and baby spinach dip (home made, thankyou very much!). The feta is a particularly delightful addition in the omelette sandwich, given its saltiness as well as freshness (and WAY LESS GREASY)- a perfect substitute for cheddar!

To me, a good pesto pizza should have bold pesto flavor. I don’t want it to taste faintly of basil, garlic, Parmesan and olive oil—I want those flavors to bowl me over.
