Anardana Mutton Seekh
Minced meat marinated with dried pomegranate and chilli. Skewered and cooked in a tandoor Mala-Akbari, 2020 C.E
Lauki Ke Kofte
Bottle gourd balls cooked in a tomato and cashewnut gravy flavoured with fennel and cardamom. Served with Roghani Naan Old Delhi, 1800 C.E

Mulled Wine
Created by Romans in the 2nd century , mulled wine was wine heated with spices to combat winter. As more alternatives developed over time, recipe books started using the collective name glögg, first mentioned in 1609. The big turning point came in the 1890s, when glögg became associated with Christmas.
To this day glögg is very popular in most European countries.
At Mala-Akbari, mulled wine has become a yearly tradition. Perfect for Delhi’s cold winter, our mulled wine is made with red wine, brandy, orange juice, star anise, cloves, cinnamon, cloves, maple syrup and a whole lot of love. Our Non-Alcoholic version is equally good. Grape juice instead of wine.
We start brewing in November and the same base is re-used till February, so that it gets even more delicious by the day.

Spicy mutton shanks in a thick long pepper gravy served with Khamiri Roti and assorted toppings. Nahar meaning morning, this was originally a breakfast dish

One of the greatest empires in Indian history, the Western Chalukya Empire, was an expansive kingdom that ruled over present day Karnataka, Maharashtra, Andhra Pradesh and parts of Orissa. A king Someshvara III wrote a text called Manasollasa in 1129 C.E. It contains 900 year old recipes and dishes that tell us a lot about modern Indian food and the origin of many present day preparations. One such dish is the Bhaditrakam or roasted meat which we serve at Mala-Akbari, originally a mutton dish, we serve it with chicken which has been marinated in asafoetida, cumin, black pepper and turmeric. A true delicacy that you must come and try!
The legends of the hospitality industry and came to Mala-Akbari today. It was truly an honour to serve them and we really enjoyed having them over. Hope we get to see them again soon to have them try some more dishes!
A true pleasure having Mrs. Salma Yusuf Husain over. The author of the book “The Mughal Feast” a transliteration of recipes from the Nuskha-i-Shahjahani, she is an expert in the persian language and mughal culture and food. We have three dishes in our menu from her book and they are truly unique and delicious. She will be doing a book signing soon and we would love for all of you to be present!

Chutneys have been thought to have existed in the subcontinent since Civilisation first began. The word literally meaning “lickables” have been mentioned in the Pakdarpana of Nala, a 2000 year old recipe book from ancient India. What makes chutneys unique is that they are one of the rare gastronomic preparations in India that are eaten raw and made or fresh vegetables and herbs. No Indian meal can be complete without a diverse range of chutneys!!
Have you ever tried our welcome set of chutneys with lotus chips and lotus seed puffs? With a variety of more than 50 chutneys we serve 8 chutneys per week and change them weekly. From our popular date chutney to our saffron, yogurt and fennel to the chilli, roasted onions and tamarind chutney all our dips can please a plethora of tastebuds and impress even the most experienced connoisseur! And the best part is that they are completely on the house!

The word Sharab, which is wine in Persian, has two etymology’s. The first is that it came from the Arabic word Sharāb which means to drink or it could have come from the ancient Avestan word Sura cognate of Sanskrit Surā which meant distilled alcohol in both these ancient languages. In fact the world famous grape shiraz actually originates from the Persian city of Shiraz which named after the wine produced there for millennia. During the Mughal times having Sharab was very popular even if it was taboo. We were inspired by this tradition and decided to invent our own version which includes, white wine, red wine, saffron, vetiver grass essence, rose water and fennel. A rich drink made for the royalty in you! This drink should transport you to 1800’s Agra Qila!
