Happy birthday to me!!!!. It's one of my simpler looking cakes yet a very technical one. This year I wanted something different. It was my first time making Japanese Jiggly Cotton Sponge Cake. It literally jiggles so I had to carefully cool in order to fill. It's filled with my homemade cream cheese frosting and blue berries, covered with cream cheese, blueberry compote and homemade whipped cream swirls. The taste is amazing!!! I always make my own birthday cakes and this year, less was actually more lol. 🥰🥳🥳🥳
