We try to use what surrounds us and embrace our old traditions in our own way. We allow our ingredients to shine in their own simplicity without all accessories but most importantly we try to have fun while we are at it.

There were those lengua de vaca mushrooms at in Ushuaia, that soft shell turtle in Tokyo and those unsweet sweets in ReykjavΓk. We have been using rutabagas from SandvΓk throughout our 13 years at Dill. Rutabagas from SandvΓk are sweeter and jucier than other varieties. They are hardy and tolerate Icelandic summers really well. The variety has been cultivated and developed in StΓ³rusandvΓk for more than 50 years.

Dung smoked lamb coming from HΓΊsavΓk in north of Iceland.
Serving one of Iceland's most interesting traditions of dung smoking.
The fact that in Iceland there aren't a lot of trees, the farmers in the old days had to find a different solution to preserve the meat.
There comes in the bricks of turf made out of hay mixed with sheep dung. These bricks are then completely dried out and then lit on fire to create this intense smoke.
At the restaurant we serve lamb tartar made out of cooked lamb heart and dung smoked leg of lamb on top of a pancake. Topped with few elements we have taken with us from this summer in Iceland. Pickled angelica shoots, angelica cream, pickled roses and rose gel.

We are excited to announce that we will be doing a Pop-Up in the Japanese Tower located in the beautiful Tivoli in Copenhagen. We are looking forward to bringing our Icelandic ingredients to Denmark to showcase our lovely food culture.

During the event, our location in ReykjavΓk will be closed until we come back in September extra energised after this short stay in Denmark.
We are truly honored to do a four hand dinner with our friends in Studio. The event will take place in the pop up location in Tivoli on the Icelandic national day the 17th of June. Truly looking forward to it.
Perfect match to our bumpy whether here in ReykjavΓk, Iceland: Salt baked and smoked beetroots, pickled blackberries, crispy rye bread, fresh leaves and frozen buttermilk made with wasabi from the east part of Iceland.

It has been a long, cold and dark winter, topped with covid and all the forever changing restrictions that fallowed. However, the days are getting longer by the minute and Iβm taking in every second of sun that we are offered. Before we know it, we will be out in the wild picking all of the wonderful things that nature has to offer.
Desperate times calls for desperate measures and lately our booking system has had to change as often as restrictions have been thrown at us. Sometimes we have had to change bookings and we apologize for the inconvenience.
