🌿𝐊𝐮𝐤𝐮 𝐒𝐚𝐛𝐳𝐢 or 𝐅𝐫𝐢𝐭𝐭𝐚𝐭𝐚 𝐨𝐟 𝐡𝐞𝐫𝐛𝐬. A classic of Persian cuisine.⁣

Finely chopped herbs: 𝐝𝐢𝐥𝐥, 𝐜𝐨𝐫𝐢𝐚𝐧𝐝𝐞𝐫, 𝐜𝐡𝐢𝐯𝐞𝐬, 𝐩𝐚𝐫𝐬𝐥𝐞𝐲.⁣
Spices: 𝐛𝐥𝐚𝐜𝐤 𝐩𝐞𝐩𝐩𝐞𝐫 and 𝐭𝐮𝐫𝐦𝐞𝐫𝐢𝐜.⁣
Other ingredient: grated 𝐠𝐚𝐫𝐥𝐢𝐜, 𝐞𝐠𝐠𝐬 and 𝐛𝐚𝐫𝐛𝐞𝐫𝐫𝐢𝐞𝐬 (optional)⁣, salt.

🗒️ Mix everything. ⁣
Add the batter in a pan coated with a generous amount of clarified butter. Put the lid and wait till the eggs cooks and become solid. Then flip, so the other side cooks as well. That's all!⁣

Kuku sabzi is a classic filling for 🥪𝐬𝐚𝐧𝐝𝐰𝐢𝐜𝐡𝐞𝐬 but it's also popular as 𝐬𝐭𝐚𝐫𝐭𝐞𝐫 𝐝𝐢𝐬𝐡 full of herbs and flavors. 🥰⁣

Squash and lentils dip, taste great with a drizzle of olive oil and lime juice with any toasted bread of your choice.
(Mine was: homemade Barbari, a persian bread)
The proportion of squash and lentils should be more squash than lentils. Like: 300g lentils. 400g squash

The spices i used was: turmeric, cumin (powder & seeds) and nutmeg

I cooked it with ghee/clarified butter for a greater taste!

This is a very 𝘱𝘰𝘱𝘰𝘭𝘢𝘳𝘦 fruit in Iran. They are unripe plums/𝐠𝐫𝐞𝐞𝐧 𝐩𝐥𝐮𝐦𝐬, which are eaten with a little salt on top or even without. It's sour but that's exactly why it's popular. ⁣⁣

This is Iranian version of Polenta: Kachi Zavareh.
Kachi in Iranian cuisine is considered as sweet cream but this version (Kachi of Zavareh) is a dish suitable for lunch or dinner.

It is served in a circled flat tray. In the middle, they create a whole for the topping which is called the “fortress” (قلعه). First, goes kashk (a Cream made of sheep’s yogurt which is very salty) followed by the stew of meat, mint oil, and fried garlic.

🥪 when I was a kid the 𝐏𝐨𝐭𝐚𝐭𝐨 𝐤𝐮𝐤𝐮 was one of the sandwiches my mom gave me for school with 𝘱𝘪𝘤𝘬𝘭𝘦𝘴 and 𝘵𝘰𝘮𝘢𝘵𝘰𝘦𝘴!⁣⁣⁣

𝐏𝐨𝐭𝐚𝐭𝐨 𝐟𝐫𝐢𝐭𝐭𝐚𝐭𝐚 or 𝐊𝐮𝐤𝐮 𝐬𝐢𝐛𝐳𝐚𝐦𝐢𝐧𝐢 is one of the easiest recipes in Persian cuisine and maybe that's why you don't find it in restaurants. It's great for 𝘴𝘵𝘢𝘳𝘵𝘦𝘳𝘴 or for 𝘢𝘱𝘦𝘳𝘪𝘵𝘪𝘷𝘰 (happy hour!)⁣⁣⁣
⁣⁣⁣
For this you'll need: ⁣⁣⁣
- 🥔 boiled potatoes, eggs, onion, turmeric, salt & pepper. ⁣⁣⁣
- 📝mix them all and pour the mixture it in a hot pan preferably with 𝐠𝐡𝐞𝐞 (clarified butter)⁣⁣⁣
- cook till both sides gain a dark brown color, and the kuku is done! 🥳⁣⁣

Lentils with Rice - Adas Polo Recipe Iranian recipes - Foodcraftz.com

Rice with lentils or Adas polo (عدس پلو) is a popular . Most of the time it's vegetarian, it can be even vegan (if you replace butter with vegetable oil) but in case of special celebrations and formal banquet it's with minced meat as well. The scent of and are exquisite in this dish i recommend to try at least once 😉 ☺️

Direction: (without meat):
- Cook the (150g/5.2oz) in salty water but don't overcook them.
- Stir fry 1 medium onion then add turmeric (1 tsp), cinnamon(half tsp), salt & pepper.
- Add the lentils and stir on medium heat for some minutes and add a bit of saffron. turn off heat. - Boil rice (350g/12.3oz) in salty water till it doubles in size then drain.
- In a non sticky pot (important for tahdig ;) ) add a bit of oil, hot water (1/3 of a small glass) and a bit of saffron, place it on stove on medium heat.
- Add first, a layer of rice then, a layer of lentils, (the quantity of rice is more than lentils) continue till you finish all of them.
- Melt 2 k**b of butter in a bit water and pour it in the pot.
- Put a clean cloth on the lid of pot.
- 1 hour on low heat and it's ready!
Some like it with stir fry sultana raisins and dates on top served with shirazi salad.
