Fettuccine lover ♥️ When I make the dough for Fettuccine, I use to mix Semolina and 00 Flour. The first one gives a rough texture and a good resistance to the cooking while the second flour gives lightness to the dough. A lot of people think that Fettuccine and Tagliatelle are the same thing but actually they aren't. Fettuccine is famous in Rome and boundary areas. Tagliatelle comes from Emilia Romagna - Bologna and it's a pasta usually made only with 00 flour and eggs, it's thinner and wider. The name derives from the Bolognese mask of Dr. Balanzone, once in fact this pasta was consumed only during the carnival period.
Traditionally it is filled with mascarpone and mortadella and dressed in butter and sage.
This filling is way more healthy. There is ricotta, parsley, nutmeg and parmigiano.
🟩 How to make the green pasta dough? It is very simple, boil 50 grams of spinach and blend them with 2 large eggs. Add the green mixture into 200g of 00 flour and make the pasta. [Serving 2]

PASTA DOUGH TUTORIAL [timelapse]
The classic recipe for "Sfoglia All'Uovo" uses 100 grams of 00 flour per egg (using eggs that weigh about 60 grams without the shell).
Make the pasta dough: put the flour onto your work surface* and make a wide well in the center.
Pour the eggs into the well and use a fork to whisk them. Working from the interior edge of the well, incorporating a bit of flour at a time until the dough reaches a thick paste.
Using a bench scraper, scrape, fold and cut the dough.
*(the perfect material to work with pasta is a wood counter because of its roughness and because wood absorbs moisture)
Knead the pasta dough: with both hands, pull the far end of the dough toward you, fold it over and then push it away from you using your palm. Rotate the dough a quarter turn and repeat the kneading for 5 minutes. Wash, and keep moist, your hands and continue kneading the dough until it reaches a smooth texture, for approximately 3 to 5 minutes more.
Wrap the dough in plastic and let it rest at room temperature for 30 minutes.
