From the Sumerians to the present day, from Italy to Japan, from farmers to city dwellers, from cutting hair to chopping wood - people all over the world have lived and still live by the moon. In biodynamics the lunar calendar is used for the work in the vineyard or cellar. But does the moon really have an influence on nature and people?
Curious? Check out our stories and text, where we dive into this interesting topic -> link in bio
Welcome to the brightside of the moon!

The RARUM 2022 assortment is finally here - with six selected vintages of our MCM Merlot!
A brief story about the MCM Merlot:
In 1995, an exceptional year for red wines in Alto Adige, the Merlot grapes from the "Punggl" vineyard were of particularly good quality when harvested. Luis von Dellemann – our oenologist at the time - felt inspired by the outstanding harvest and thus felt inspired to vinify the grapes as a single-varietal. Although the grapes were destined to become part of the Casòn Hirschprunn Rosso blend, the oenologist pressed them separately. The MCM was born.
From then on, this wine made from our oldest Merlot vineyard is only produced in vintages of exceptional quality.
What do your pigs get to eat during winter, when the GrandOrto does not produce much?
Well, our garden still provides us with many green cuts, but that´s most of the time not enough to feed the hungry pigs. Therefore they get local, organic cereals mixed with water - a sort of Porridge let´s say :-)
They love it!
We’ve always been very aware of the fast changing and challenging circumstances around us. We want to be prepared for the future and therefore question and rethink our work each day anew.
How can we maintain our fresh and vibrant stylistic also with increasing temperatures? What steps do we take to break monocultures? What is the sustainability of the future? What will agriculture look like and will it even be possible to farm as we are used to nowadays? We ask ourselves these and more questions on a daily basis.
Our Vineria & Restaurant Paradeis grew out of necessity and has over the years developed to a place where many interests, needs and people come together. Aiming to work with a closed farm organism, it is only natural that we want to be able to use our own produce also at the restaurant. As in viticulture, we try to remain open and curious about gastronomy and what role it finally has in our reality.
It's always exciting to talk to people who come from different backgrounds but have a similar philosophy and mindset. This is why we invited a small group of them in October to stay with us for no more than 24 hours. Short but intensive hours, filled with constructive discussions, inputs and an exchange of know-how. The result? We may have more questions than before :-) Nevertheless, full of ideas and inputs, we are now taking the next steps. What’s left to say…stay tuned.
Everything is set for you at our Restaurant Paradeis - when shall we book you in?
The harvest shows, as every year, the peak of work in the vineyard.
The grapes reflect the climatic conditions - was it dry? Was there a lot of rain? Was there hail? Are the vines healthy or did they suffer? Have we supported and strengthened the plants enough through biodynamic preparations?
Our work in the vineyard is now bearing fruit.
Carefully checking the grapes each day to see if they’re ready to be picked. Römigberg is where all of our ideas of a healthy and vivid agriculture come together. Meet Gregor in his little paradise near lake Caldaro.
Can you imagine how crunchy our homemade sourdough bread is?
