Do you have over ripe plantains and the skin has turned black. ? Don't despair. You can make banana pancakes and doughnuts from these ripe plantains.
All you need is;
2-3 over ripe bananas
2 cups cassava flour
Pinch of salt
1/4 Tsp bicarbonate of soda (baking soda)
Oil for deep frying

Prepare the dough (same as for mandazi)
Deep fry and serve warm.
