ABOUT THE JOB

An upcoming restaurant in Kitengela is seeking to recruit a Chef.

The main tasks will be:
Organize and prepare breakfasts, lunches, dinners, and receptions for formal and informal events at the residence
Create menu items, recipes and develop foods/dishes
Prepare and cook high-quality dishes
Ensure food quality and excellent standards are maintained for all dishes created
Ensure that food product, presentation and plating are of the highest quality and are prepared to serve in a timely manner.
Managing kitchen stocks by determining food inventory needs, stocking.
Being responsible for food hygiene practices
Being updated on culinary trends – local and international
Ensuring the kitchen meets all regulations including sanitary and food safety guidelines
Any other duties that may be assigned from time to time

Required qualifications
Years of professional Chef experience
Have solid knowledge of local and international cuisine
Have good knowledge in baking including bread and cakes
Ability to prepare for conferences for up to 50 pax
Flexible and ready for short-notice events
Relevant education certificates
Competent level of English spoken and written
Responsible, flexible, and loyal
High level of integrity
Ability to work independently and outside working hours if the need arises
Great interpersonal, inter-cultural skills and team player abilities
Ability to handle multiple tasks and work under pressure

Ingredients
4 servings

1. 4 tablespoons of chess organics ginger paste
2. Fresh lemon juice (from about 1 lemon)
3. 4 tablespoons of Chess Organics garlic paste
4. 1 tablespoon of Chess Organics red chili
5.1 tablespoon of Chess Organics Turmeric powder
6. Skinless chicken thighs
How to prepare:
1. Mix all the spices in a medium-sized bowl to form a paste.
2. Add the skinless chicken thighs and soak in the marinade well by gently rubbing it on the chicken, seal tightly with nylon foil paper.
3. Heat a large skillet over medium-high. Once the pan is quite hot, add the remaining 1 tsp. oil, swirling pan to coat the entire surface. Reduce heat to medium. Remove chicken from marinade and cook, undisturbed, until lightly golden on one side, 1–2 minutes. Flip chicken and continue to cook until golden brown on the other side, 1–2 more minutes. Reduce heat to low, cover, and cook (without peeking!) for 10 minutes. Remove pan from heat and let the chicken sit, covered, 10–15 minutes, depending on the thickness of the thighs. Don’t uncover, or you’ll release the hot steam that cooks the chicken.

4. Transfer chicken to a cutting board.Transfer to a platter. Garnish as preferred.

Check out the recipe:

11 tablespoons unsalted butter, at room temperature, plus more, for the skillet

2 tablespoons chess organics orange marmalade

1 3/4 cups all-purpose flour

3 tablespoons sugar

1 tablespoon baking powder

1/4 teaspoon fine salt

1 1/4 cups milk, at room temperature

1/2 teaspoon pure vanilla extract

2 large eggs, at room temperature

Orange segments, for serving

Maple syrup, for serving, optional

Directions

Preheat the oven to 200 degrees F.
Beat 8 tablespoons of the butter in a medium bowl with a wooden spoon or spatula until smooth. Add 1 tablespoon of the marmalade and mix until well combined. Set aside at room temperature.

Whisk together the flour, sugar, baking powder and salt in a large bowl. Whisk the milk, vanilla, eggs and remaining 1 tablespoon marmalade in a medium bowl until combined. Melt the remaining 3 tablespoons butter in a large nonstick skillet over medium heat. Cool slightly and then whisk into the milk mixture (reserve the skillet for making the pancakes). Add the milk mixture to the flour mixture and whisk until it just comes together in a thick and lumpy batter.

Heat the reserved skillet over medium heat and brush lightly with butter. Drop 2 tablespoons batter into the skillet for each pancake. Cook until bubbles appear on the tops of the pancakes, and the undersides are golden brown, about 2 to 3 minutes. Flip the pancakes and continue to cook until golden on the underside and cooked in the center, about 1 minute more.

Transfer to the oven to keep warm and continue to make pancakes until all the batter is used. Serve topped with the chess organics orange marmalade jam and orange segments. Drizzle with maple syrup if used.

Cook’s Note

When measuring flour, we spoon it into a dry measuring cup and level off the excess. (Scooping directly from the bag compacts the flour, resulting in dry baked goods.)
