1/4 cup cilantro, chopped
1/4 cup red onion, chopped
1/2 cup cherry tomatoes, chopped
3/4 cup corn kernels (fresh or frozen that has been thawed)
1/2 cup shredded purple cabbage
1/2 cup cooked quinoa
1/2 cup shredded carrots
1 cup cooked black beans
1/2 avocado, sliced
Lime Jalapeño Dressing (Makes 3/4 cup):
1/3 cup lime juice
1/4 cup olive oil
2 Tablespoons maple syrup
1 Tablespoon cilantro
1 clove garlic
2 teaspoons chopped jalapeno
1/2 teaspoon salt
1/2 teaspoon ground pepper

🌟Summer Rolls🌟 with peanut sauce by 💫. Recipe:
ROLLS:
- about 5 shredded carrots
- about 3 shredded raw zucchini - 2 peaches (cause it’s season and delish and adds sweetz! can also use mango!)
- 1 small shredded beetroot to add colour
- 2 avocado
- big bunch of basil - lettuce (big leaves work best!)
- rice paper (about 10)
DIP SAUCE:
- 1 cup coconut milk (full fat) or 2 coconut yoghurt
- 1/3 cup peanut butter
- 1 tbsp curry paste - 2 tbsp coconut sugar
- half juicy lemon juice
- 1 tbsp tamari sauce (check it to be gf)
- 1 thumb fresh ginger, grated
- 1 tbsp rice vinegar or ACV
- a few teaspoon water
Directions:
Shred and cut all your veggies, separate in bowls. On a plate, pour some hot water and dip the rice paper a few seconds on each side. Then lay on a clean dry surface and start by adding the leaf of lettuce which will wrap other ingredients around and help secure!
Place all ingredients and start rolling the paper from behind, over the ingredients, then wrap at the sides, and continue rollin’. To make it beautiful cut in half and place in a bowl.
To make the sauce, simply mix all ingredients in a blender.

Ingredients
BASE:
2 cups walnuts
¾ cup pitted dates
⅓ cup cacao powder
Zest 1 orange
1 TBSP coconut oil
FILLING:
1 cup cashews (soaked for 4 hours or overnight)
½ cup cacao butter
½ cup cacao powder
½ cup maple syrup
Juice half a large orange
1 tsp vanilla extract
3 drops orange essential oil (optional)
Method
Break down the walnuts in a food processor. Add the rest of the base ingredients and process until sticky.
Press down evenly on to the base and sides of a standard tart tin and set aside.
For the filling begin by melting down Cacao butter in a saucepan over low heat until all dissolved. Set aside.
Add all the filling ingredients except melted cacao butter to a blender and blend until smooth as possible. Add the Cacao butter and blend again.
Pour filling over tart base and smooth out with spatula. Place in freezer to set for about 3-4 hours.
Decorate with raspberries and orange slices and enjoy!

INGREDIENTS
1/2 large sweet potato
Cooking spray
Salt and pepper to taste
Toppings:
Avocado slices with h**p seeds and oregano
Vegan Ricotta cheese with raspberries, coconut and maple syrup
Peanut butter with banana slices, pecans and maple syrup.
INSTRUCTIONS
1. Using a large sharp knife, slice the sweet potato lengthwise down the middle. With a steady hand, make 4-5 thin slices about 1/4"-1/3" thick from the middle of the sweet potato. You can keep the skin or discard. I prefer keeping the skin.
2. Spray sweet potato slices with cooking spray and season with salt and pepper
3. Insert slices into toaster (similar to bread) and toast the slices on medium-high for 5-10 minutes. Alternatively, you can toast them in a toaster oven or bake in the oven at 350F for 15-20 minutes
4. After the sweet potatoes pop up from the toaster, check to see if they are fork tender, and toast longer if desired. Depending on your toaster, you may also want to turn down the toaster setting to Medium.
5. Remove the sweet potatoes from the toaster, and cool on a wire rack before adding toppings.

Recipe serves 3-4:
2 shallots or 1 big red onion, minced
3 cloves of garlic, minced
a thumb of fresh ginger, grated
1 tbsp masala spice
1 tbsp turmeric spice
1 tsp ginger powder (I put 1 tbsp on the video but would really suggest 1 tsp if you also use fresh!)
1 tsp cumin
1/4 tsp black pepper
1 tsp curry paste (optional but cool!!)
1 cup bell pepper of choice (i use frozen or 1 fresh!)
1 normal can tomatoes or 3 fresh (i use cherry i like the taste better!), DRAINED!
1 normal can chickpeas, rinsed & drained
1 normal can full fat coconut milk
2 tbsp coconut flour (helps thicken)
1 lime
1 handful fresh cilantro
⠀⠀
1. start sauté onion/shallot with all the spices. no oil no water. once really sticking to the pan you can add a drop of water!
2. Add in bell pepper, sauté 5 minutes more.
3. Add tomatoes & chickpeas, mix well. Add 3/4 of the can of coconut milk. Mix. Add coconut flour, simmer for 15 minutes, stirring occasionally.
4. Off heat, once thickened, add lime juice & cilantro. Serve with rice/couscous and/or naan & a dollop of remaining coconut milk

INGREDIENTS
Sushi
2 cucumbers
1 cup sushi cooked rice
Avocado, sliced
Red bell peppers, sliced
Carrots, julienned

Spicy vegan Mayo
2 tablespoons avocado mayonnaise
1 teaspoon sriracha
⠀⠀
INSTRUCTIONS
1. Cook rice according to package instructions, but do not stir when it is cooked. This allows it to stay sticky.
2. Cut each cucumber in half and hallow it out by remove the seeds with a knife or spoon.
3. Place a small amount of rice inside on half cucumber, then compress towards one side to make room for the other ingredients. Carefully add the tofu, avocados, peppers and carrots, compressing as you add until the cucumber is packed full. Repeat for the remaining cucumbers.
4. Using a sharp knife, slice cucumbers into ½ inch thick pieces.
5. Serve immediately or cold with soy sauce or spicy mayo sauce, if desired."
GF note: use liquid aminos or gf soy sauce and check your condiments to be gf to keep things gluten-free

“For this smoothie, you will need,
-1 cup of soy milk

If you’re not a fan of using oils, you can easily sub it to water/plant milk or even watered down (or not) cashew cream cheese or cashew butter 🙌
Pulse in a food processor or blender:⠀
- 1 avocado
- 1 cup packed parsley and cilantro leaves (combined)⠀
- 1 jalapeño, ribs and seeds removed⠀
- 2 cloves garlic⠀
- Juice of one lime
- 1/2 cup water⠀
- 1/2 cup olive oil⠀
- 1 teaspoon salt
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add ½ cup pistachios and pulse until your desired consistency. YUM. Serve it as a dip, spread, sauce, anything!
