Tofu Pad Kaphroa with White Jasmine IBIS Rice. Grab some holy basil, firm tofu, and red chili for this popular Thai dish! Our aromatic long-grain Phka Rumdoul Jasmine is a perfect pairing for this delicious basil stir fry that’s easy to cook (and to make vegan!) Ingredients (Serves 3): -3 blocks of extra firm Tofu, crumbled and drained -Half cup of chopped yellow onion -5 cloves of garlic, minced -3-4 bird’s eye chili chopped (remove seeds for less heat) -1 cup of long bean or French bean, chopped -1-2 cups of fresh holy basil leaves -3 tbsp of soy sauce -3 tbsp of skor thnot or brown sugar -1 tbsp of tamarind purée -1/2 cup of water -Sliced cucumber -3 cups of cooked White IBIS Rice Instructions - Add 3 tbsp of oil to a wok on high heat - Add tofu and stir fry for 3 minutes - Add garlic, onion and chili and stir fry for 2-3 minutes - Mix soy sauce, brown sugar / skor thnot, taming purée and water in a cup and add to wok - Stir fry for 1 minute - Add green beans and 1 tbsp of oil and stir fry for 1 minute - Add holy basil leaves and stir fry for 1 minute - Taste and add more soy sauce or sugar depending on preference and cook for 1 minute - Serve with sliced cucumber and cooked rice #IBISRice #stirfry #jasminerice #vegan #veganthai #veganrecipes #padkrapao #padkrapow #patkrapao #patkhrapao #thaifood #thairecipes #organicrice #WildlifeFriendly #streetfood #veganfoodie #thairecipes

How to cook our organic & wildlife-friendly Brown Jasmine Rice to get the most flavours? Here are a few steps to follow to get it right every time! Or you can enjoy it at @uguisu_sabou if you prefer ;) 1) Add 3 cups of rice to a pot with water and use clean hands to stir & rinse with water 3 times to remove surface starch. 2) With all the starch water drained, add 3½ cups of fresh water. 3) Add pot to the stove on a high heat 4) Once boiling, immediately reduce to the lowest heat and cover with a lid. 5) Leave to simmer and cook for 25 minutes so that all the liquid is absorbed. It's been amazing going through the footage of our camera traps at our wildlife-friendly ponds in Kulen Promtep Wildlife Sanctuary. Here are a couple of Crested Serpent-Eagles making use of our pond not long ago. This medium/large sized eagle is found in forested habitats across Asia. They often feed on snakes but also consume small birds, small mammals and large insects. Developed in collaboration with Sansom Mlup Prey with support from the Critical Ecosystem Partnership Fund, our wildlife-friendly ponds have been designed to provide supplementary water during the temporary droughts while acting as a watering hole for wildlife. This is one of the busiest and most exciting stages of the rice cycle as farming communities spend the month harvesting, threshing and preparing rice grains for final inspection and sale.
