This quick and easy tofu number requires one pan, and little add on ingredients. Iām always a fan of big flavours and this is one not to miss. Who doesnāt love crispy tofu??! Steamed greens give sustenance and are boosted with my almond butter blackbean āXOā sauce. The spicy kimchi salsa works really really well with this. Like I said, big flavours here = WINNER.ā

INGREDIENTS:ā

200g Soft fresh tofu, sliced and dry on towelā
1 tbsp Brown Rice Unpasterised White Miso (Genmai Shiro)ā

METHOD:ā
1. Slice tofu into cubes. Make sure you soak up the excess water with a paper towel or similar, so you can get your tofu crispy.ā
2. Wash your vegetables and steam your vegetables.ā
3. Make your Almond XO sauce. Mix all the ingredients together. Once mixed, pour this over your steamed vegetables.ā
4. Add some water to your miso and heat up, this is so you can coat your tofu easily with the miso.ā
5. Once youāve coated your tofu, press the tofu into your panko crumbs. Donāt leave your tofu to sit too long, as excess water may make your panko crumbs soft.ā
6. Heat your frypan on med heat, add your neutral oil then add your tofu. Fry for 4 minutes on each side until golden. Remove and drain excess oil on a paper towel.ā
7. Now make your kimchi salsa. Mix all the ingredients together.ā
8. Serve your tofu with your greens and kimchi salsa!ā

INGREDIENTS:
#1 BASE
1 cup Organic Cashews, RAW Whole (soaked in boiling water for 1hr)

cup Organic Coconut, Shredded
4 Organic RAW Pitted Dates (soaked in boiling water for 15 mins)
#2 CARAMEL
1Ā¼ cup Organic RAW Pitted Dates
ā
cup Organic Almond Butter
2 tablespoons Organic Brown Rice Malt Syrup
1 tablespoon Organic RAW Virgin Coconut oil (melted)
#3 CHOCOLATE LAYER
Ā½ cup Organic RAW Cacao Butter
ā
cup Organic RAW Cacao Powder
2-3 tablespoons Organic Brown Rice Malt Syrup
METHOD:
#1 TO MAKE THE BASE
1. Add base ingredients to a food processor and process until the mixture combines. If your mixture isnāt quite there yet, while the food processor is running, add in drops of water.
2. Line a loaf pan with non-stick baking paper. We used a 12ā³x5ā³ pan. Press the mixture into the base of the pan and spread evenly. Pop in the freezer while you make the caramel.
#2 MAKE THE CARAMEL
1. You can use either a food processor or blender here. Add all ingredients to your blender and process until you have a smooth caramel. The time it takes will depend on the equipment youāre using. Be patient, blend and scrape to make sure you donāt have any lumps.
2. Pour the caramel over the base and pop in the freezer while you make the chocolate layer.
#3 TO MAKE THE CHOCOLATE
1. Melt your cacao butter using a double boiler.
2. Add 2 inches of water to saucepan and bring to boil. Reduce to low and stack the mixing bowl on top of the saucepan. Your bowl should not touch the water.
3. Add cacao butter into the bowl for it to melt. Once cacao butter is melted, remove bowl from heat. Be careful not to over-heat the cacao butter. Add in the cacao powder and rice malt syrup. Whisk until smooth.
Pour the chocolate mixture evenly on top of the caramel filling. Cover pan and place back into freezer. Let it set overnight or for at least 4-6 hours.
4. Remove from freezer and leave it at room temperature for about 1-2 minutes so that itās easier to slice. Run a knife under hot water and wipe it before using to prevent chocolate layer from cracking.

#1 Vegan Crab Cakeā
1 tin Organic Young Jackfruit , drained & shreddedā
2 tbsp Organic Egg Free Vegan Mayonnaiseā
1 cup panko crumbsā
1 tbsp mustardā
Ā½ cup corn kernelsā
1 tbsp Organic Tamari Soy Sauceā
3 spring onion, finely slicedā
1 tsp cupboard spices: options paprika, curry powder, chilli flakes, turmericā

#2 Spicy Curried Cocktail Sauceā
3 tbsp Organic Egg Free Vegan Mayonnaiseā
1 tbsp Almond Butter in Conversion to Organicā
1 tsp curry powderā
1 tbsp Organic Ketchupā
1 tsp Organic Tamari Soy Sauceā
squeeze lemon juice to tasteā

METHOD:ā
1. Mix the Jackfruit with the mayo, breadcrumbs, mustard, corn, Tamari and spring onion. Sprinkle over spices of your choice. I LOVE paprika, cumin and cayenne. Season.ā
2. Let the mix sit for 5 minutes, so the crumbs can absorb the liquid and to create some āstickingā. If itās too dry, add more vegan mayo.ā
3. Press into patties/fritters. Heat a non stick pan, add some neutral cooking oil/coconut oil/olive oil, heat to medium and carefully cook for 4 minutes each side. Be careful to check it isnāt too hot as can burn easily.ā
4. Flip and cook a further 3-4 min. Sit on paper towel to absorb excess oil.ā
5. TO MAKE THE SAUCE: Mix all ingredients well, season with Tamari and lemon juice.ā

3 tablespoons Organic Coconut Flourā
Ā¾ teaspoon baking sodaā
pinch of sea saltā
2 tablespoons Organic Coconut Oil, Virgin Cold-Pressed (room temperature)ā
3 tablespooons Organic Almond Butterā
Ā¼ cup + 2 tablespoons Organic Brown Rice Malt Syrupā
70 grams dark chocolate, roughly choppedā
ā
METHOD:ā
1. Add your dry ingredients to a bowl and whisk to combine. Be sure to remove any lumps.ā
ā
2. In a small bowl, combine the melted coconut oil, almond butter and rice malt syrup, and whisk to combine.ā
ā
3. Add your wet ingredients to your dry ingredients and mix. Donāt be afraid to use your hands to help form a dough. Add in the chocolate and shape the dough using your hands to combine the chocolate pieces.ā
ā
4. Measure out around 2 tablespoons of dough, and shape it into a thick, flat circle. These cookies do not spread, so donāt be afraid to press them down to around 1cm thickness.ā
ā
5. Place your cookies on a baking tray lined with greaseproof paper and pop them in freezer for 10 minutes. Preheat your oven to 175Ā°C.ā

6. Remove sheet from freezer and bake for 11 minutes, until slightly golden brown. Let cool and then eat!ā

2. For the filling: In a blender, blitz all the cheesecake ingredients to make a smoothie like consistency. Pour into a container and freeze for 2-3 hours or overnight.ā

INDONESIAN WINTER PUMPKIN, FRIED TOFU & ALMOND BUTTER CURRY W/ BLACK BEANS

READY IN 10 MIN PREP TIME, 20-25 MIN COOK TIME | SERVES 4
One. Pot. Wonder. Again, this one is for busy people. Iāve thrown this together all in under 10 mins and let it do its thing for 20-25 minutes. Iāve added black beans (you could use red kidney or lentils) and soft boiled eggs for extra protein and for a bit more of a traditional spin.
INGREDIENTS:
Ā½ onion sliced
3 garlic cloves sliced
1 tbsp sliced ginger
3 tbsp red curry paste
2 tbsp Almond Butter in Conversion to Organic
1 can Organic Coconut Cream
1 cup water
1 tbsp Organic Tamari Soy Sauce
1 skin on buttercup pumpkin, seeded & diced
1 can Organic Black Beans , drain & rinsed
1 bag fried tofu or 1 cup firm tofu
Juice of half lemon or lime
Garnish with coriander/mint/laksa leaves, peanuts or fried shallots.
Add an 8 minute peeled soft boiled egg per person with the tofu and you have a winner.
METHOD:
1. Heat a heavy base deep pot/cast iron slow cooker
2. Add a tbsp neutral oil/peanut oil then add your onion/garlic/ginger. SautƩ for 5 minutes.
3. Add curry paste & almond butter, stir well, then add your pumpkin and cook for 2 minutes.
4. Add coconut cream, water, tamari and black beans.
5. Bring to boil, cover and reduce to medium heat, cook 20-25 minutes
6. Add tofu after 10 minutes.
7. After 20 minutes check the seasoning, add the lemon juice and BOOM. Itās ready. Top with optional extras if you wish!
