Credits Here's how to make this Low Carb Tres Leches 🔽

✨Save this recipe for later✨

Sponge cake:
7 egg whites
6 egg yolks
1/4 tsp cream of tartar
1/2 cup sweetener (I use erythritol)
1/4 tsp cinnamon powder
1 tsp baking powder
1 tsp vanilla extract
1 cup almond flour
1/4 tsp salt

Milk Mixture:
1 cup heavy cream
1/2 cup sweetener (I use erythritol)
3 tbsp unsalted butter
1/4 cup unsweetened almond milk
1/2 tsp vanilla extract

Whipped Cream:
3/4 cup heavy cream
1/4 tsp vanilla extract
3 tbsp powdered sweetener (I use erythritol)

Garnish:
Dash of cinnamon powder
Fresh strawberries

🥣Instructions

1. Prepare a baking pan (I used an 8x8 square pan) by lining with parchment paper. Preheat the oven to 350°F/ 165°C.

2. Separate the eggs. With an electric mixer, beat the yolks and sweetener until thick and lemon colored. Beat in the vanilla, cinnamon and cream of tartar. Fold in the almond flour, baking powder and salt.

3. With a clean bowl and beaters, beat the egg whites and cream of tartar to firm peaks. Stir in quarters into the almond mixture. Folding carefully each time. Spread evenly into the prepared pan.

5. Bake for 22 minutes or until the top is golden brown. Turn the oven off and leave it in the oven for 10 minutes. Then take out and let it cool completely. Remove the parchment paper and place back into the pan.

6. For the milk mixture, bring heavy cream to a light simmer in a saucepan. Add sweetener, unsalted butter, almond milk, and vanilla extract. Mix until fully incorporated and simmer for 5 minutes. Let it cool completely.

7. Add fork indentations to your cooled cake and pour the cooled milk mixture. Place in the fridge for 1 hr. Make the whipped cream by beating all ingredients together until soft peaks. Top it off with whipped cream, cinnamon and strawberries.

It’s paired with Creamy Herb Vinaigrette and packed avocado & spiced chickpeas! So good!💯👌🏼

It's also perfect to make as a meal prep for a few days, just add the avocado fresh on the day you're eating. 🍃🌿

3/4 cup uncooked quinoa
Juice of 1/2 lemon
4 cups small broccoli florets
1.5 tbsp avocado oil, 1/4 tsp kosher salt for roasting broccoli
1 15 oz. can chickpeas, rinsed
1 tsp avocado oil, 1/4 tsp each kosher salt, pepper, garlic powder, paprika for cooking chickpeas
1/8 to 1/4 small red onion, thinly sliced
1 avocado, diced
1 pint cherry tomatoes, halved

Creamy Herb Vinaigrette (whisk together thoroughly; makes extra than needed for this recipe):

2 tbsp olive oil
2 tbsp vegan mayo
2 tbsp stone ground mustard
2 tbsp agave nectar
4 tbsp apple cider vinegar
Juice of 1 lemon
1/2 tsp each kosher salt, pepper, garlic powder
2 tbsp each finely chopped fresh dill and parsley

Preheat oven to 375 degrees F (convect/fan). Cook quinoa according to package directions, and when it's done, let it cool in a mixing bowl or on serving platter, then mix juice of 1/2 lemon into it.

Meanwhile, cut brocc florets into similar small size and arrange on baking tray lined with parchment paper. Sprinkle its oil and salt, and toss. Bake 12 to 18 min, stirring halfway until bright green and lightly browning in spots. Remove tray from oven and let cool somewhat.

Add chickpeas, their oil and seasonings to a pan and cook on medium heat for 3 to 4 min until heated.

Combine half of the dressing, cooked quinoa, roasted brocc, sliced onion, chickpeas, halved tomatoes, reserving some to add on top at the end. Top with diced avocado. Serve with extra dressing as desired. 🍃🌿

Recharging my body after all the fun yesterday! Put a twist on brunch this morning and made it savory. I whipped up an egg white omelet with shredded zucchini and spinach and paired it with a yummy 🥑 very simple breakfast with no specific recipe but it was soooo delicious! I don’t know about y’all but hot sauce on eggs is always a must!

If you're looking for a chicken dish that is a bit more fancy and flavorful, but doesn't require lots of ingredients, these garlic butter chicken thighs can be used for an easy dinner at home or even to host a gathering 🙌⁠

Directions 🍴⁠

1. Preheat the oven to 425ºF (218ºC). Pat the chicken dry with a paper towel. Rub the oil on the skin-side of the chicken and season with salt and pepper.⁠

2. Toss the mushrooms in the skillet and cook (undisturbed) for three minutes, over medium heat. Lower the heat to medium-low and add in the garlic and butter; toss to combine. Cook for 2-3 more minutes.⁠

3. Add in the chicken broth and lemon juice, and stir to release any browned bits on the skillet. Place the chicken on top and transfer to the oven; cook for 17 to 20 minutes, until the chicken is cooked through.⁠

4. Remove the chicken and set aside. Return the skillet to medium heat and whisk the remaining sauce until it starts to bubble and thicken, about 2 minutes. Add the spinach to the skillet and cook until wilted, about 1 to 2 minutes.⁠

5. Place a cast-iron skillet over medium-low heat and once hot, add the chicken skin-side down. Cook for 5 minutes. Increase the heat to medium and continue cooking skin-side down for 8 minutes, until browned.⁠

6. Turn the chicken over and cook for 2 more minutes, and transfer to a plate, skin-side up and set aside, leaving the oil from the chicken in the skillet.⁠

7. Place the garlic butter chicken thighs on a plate, along with the spinach and mushroom mixture, and drizzle the sauce over everything. Enjoy!⁠⁠⁠⁠

I am a pecan pie loverrrrr! And this one is low carb/keto and DELICIOUS. Your sugar-loving fam won’t even tell the difference 😆 Save this for a Christmas dessert ✅

keto brown butter crust pecan pie 🥧

This is a pie I actually made three years ago on this day! It is my friend keto’s genius recipe and you have to make it.

INGREDIENTS:

Brown Butter Pie Crust:
2 cups - Almond Flour
1/4 cup - Coconut Flour
1 packet - Unflavored Gelatin
1/3 cup - Allulose (or any granulated sweetener)
1/4 tsp - Salt
1 stick - Unsalted Butter

Pecan Pie Filling:
2 sticks, divided - Unsalted Butter
1 cup - Allulose (must be allulose, as other sweeteners will not caramelize properly)
1/2 tsp - Maple Extract (find it right next to the vanilla extract in the baking aisle. If you can’t find it, just use vanilla instead.)
3 - Eggs
2 cups - Pecan Halves

Cauli Brussels Hash with a Fried Egg 🥵 I’ve been eating a lot 😱 of the same things for breakfast everyday (aka a lot of toast). And not that there’s anything wrong with that, but I just need to give my body a bit of a break. 🤣So today, for breakfast, we’re doing a shredded curried brussels and cauliflower rice sauté with avocado and a fried egg. Honestly imma a girl who eats with her eyes first 😍 and this is a BEAUTY! As an aside, thank you so much to this beautiful community for supporting me at every moment. I don’t always have the right words to express everything I’m feeling and I am so glad to find a sense of peace with y’all. For that I am grateful. So random, but this was BOMBBBB. Would you slay this?

Trader Joe’s cauliflower thins air fried for 5 minutes at 400°, mix ground beef and ground chicken with a little cauliflower jalapeño dip also from Trader Joe’s, and throw on top, add hot sauce if you like it spicy. Throw on some arugula and avocado with Redmond salt and there ya go.

Freaking delicious low carb, high-protein snack and I ate 2 as a meal. Super filling.
