I love to make a vegan Black Bean and Sweet Potato chili. This chili seasoning is amazing! It add just the right amount of kick to my chili without being too salty!

I love this Southwest Stew seasoning, but I use it slightly different than its intended use! Rub this right on some pork chops, let it sit over night, and grill baby grill! You'll be a grill master at your next BBQ showing up with well-seasoned meats :)

1lb pre cooked boneless ham
1 lb dried split green peas
3 carrots
2 stalks of celery
3 medium spanish / yellow onions
4 cloves of garlic
1.5 oz canola oil
or
1.5 oz shmaltz
3 teaspoons of salt
1 teaspoon of ground black pepper
1 teaspoon of dried oregano
ยฝ teaspoon dried marjoram
1 teaspoon rosemary
2 teaspoon of garlic
1 quart water room temperature.
1 quarts of ice water
2 oz bacon bits

1. Open split peas and wash in fine mesh strainer under cool running water to remove any impurities. Inspect split peas for any unwanted peas, or commingled beans. Bring to a boil, reduce heat and simmer for 45 min covered. Add additional water to the pot if peas begin to surface out of the water.

2. Peel remaining onions, carrots, garlic. Discard peels. Fine dice garlic, put in ramekin. Dice onions, celery and 1 carrots put in a 2 quart container. Small dice ham, fine dice 2 carrots.

3. Heat 1 gal pot on medium high, add remaining shmaltz or canola oil. Once oil is heated ( test with a piece of onion) add garlic, sautee 30 seconds. Add Ham, and fine diced carrots. Saute for 3-4 min. Remove Ham,carrot and garlic from the pot and set aside.

4. Saute onion, celery and carrot mixture, stir, add Bacon bits, let cook uncovered 5 min. Sitr. In ramekin mix salt, pepper, garlic, paprika, oregano and marjoram until well blended. Add cooked split peas.

6. Add 1 quarts of ice water to the pot. Heat on high until rolling boil.

8. Use an immersion blender to puree split peas until smooth.

Add ham, garlic and fine diced carrot mixture to soup. Simmer, taste, season additionally if desired.

My goodness, this Potato and Leek Soup has the most creamy texture! And its so easy! The ingredients for this masterpiece:

2 Leeks;
3 cups of potatoes,
1 ounce bacon fat,
1 onion,
1 bullion cube,
6 ounces of unsweetened coconut milk,
1 packet of Scott Farm's garden medley mix!

Made this on a Sunday morning with all the kids running around, and it still came out great!

This is a Cajun Crab and Corn Chowder. This little guy was so tasty! You can't escape us, muahaha!

Ingredients for this yummy dish:
1.5 ounces bacon fat,
1 onion diced,
1 leek,
1.5 cups of corn,
2.5 cups of diced potato,
20 ounces of coconut milk,
1 ounce of Scott Farm Southwest dip mix seasoning,
5 ounces of soft shell crab,
1/5 cup of flour,
red onion for some garnish!

Panic made dinner tonight. Used Scottโ€™s Farm Guacamole ๐Ÿฅ‘ spice mix to flavor up some nachos! The guacamole was amazing!

Toast points are delicious to dip with your soups. These little guys were made from sliced up French bread, dresses with butter, garlic, sea salt, marjoram, and oregano.

Living in the mid-west, eating ocean fish is an absolute treat since we donโ€™t get it often.

After standing in line for an hour at the fish market, we snagged a few pounds of this magnificent swordfish.

To prep the steak, Pat the fish dry. Season with salt, pepper, and lemon pepper. Add some lemon juice and some rosemary to finish.

How do you make mouthwatering mussels without over cooking those little tasty morsels?

You need to use the right amount of liquid in order to steam your mollusks just right. Use too much and youโ€™ll end up boiling the meat instead of steaming it.

Pour enough water to cover the bottom of the pot. You can pour white wine, beer, water, fresh lemon juice and butter.

To make a more yummy stock, sautรฉ garlic, rosemary, and lemon juice.

Remember to toss out any unopened shells after you steam them, those little guys have gone bad.

Do onions make you cry? ๐Ÿ˜ฅ They make me cry, a whole bunch. Then I think about sad things and I cry like I'm watch sad puppies over a Sarah McLachlan track. ๐Ÿ˜ญ It's awful!

Pro tip: Chill your onions! Put those suckers in the fridge, it will help with the gas that is released from them.

This is a common battle cry in our house with three kids.

It tends to calm down when we have a bowl of ginger carrot, or minestrone soup in front of them though....

Could soup be the key to better parenting skills....oh that's doubtful, ๐Ÿคฃ.

But it can be quick dinner that has a couple of veggies in there!

Tomatoes and garlic play a big role in soups. Sautรฉing the garlic just enough so it releases the aromatic smell and the most flavorful taste is a really important part in the process.

Tomatoes can be so versatile in soups, emulsified, stewed, or creating a beautiful base. They also look great in photos.

This is a favorite! Chipotle Sweet potato and sausage. The beautiful coloring is smoked paprika with some green onions as garnish. Nothing better than a warm bowl of on a cold day.
