September marks our kitchen re opening after a short break in summer…

Maltese Sausage Cake

Ingredients:
200grs chopped dates
200grs sultana
200grs sugar
250grs raw maltese sausage (skinless)
200ml water
1 tsp cinnamon powder
1 tsp nutmeg powder
1 tsp ground cloves
1 tsp baking soda
1/2 tsp salt
2 large eggs
350grs flour 00
60grs black treacle

Method:
In a sauce pan, put the 200grs sausage and cover with 200ml water and bring to boil. Once boiled continue to cook until sausage is fully cooked. Let it cool completely.

Mix the chopped dates, sultana, black treacle, cinnamon, gloves, nutmeg, salt, baking soda and eggs.

Add the cooled maltese sausage, including the water we cooked the sausage in and mix again.

Finally, add the mixture to flour and sugar, and mix well.

Line 2 loaf tins with butter or oil. We used Carlex spray. Bake in a hot oven of 170 degrees for about an hour or until a skewer is completely clean.

Let cool and store in a cool dry place.
