INGREDIENTS
โ€ข 320 g Borges spaghetti
โ€ข 100 g bacon or guanciale
โ€ข 1 chili
โ€ข A splash of dry white wine
โ€ข 400 g ripe tomatoes
โ€ข 80 g grated pecorino cheese
โ€ข A splash of Borges extra virgin olive oil

STEP BY STEP
๐Ÿ‘‰ Step 1
Cook the bacon or guanciale (cut into strips) with a drizzle of extra virgin olive oil in a deep frying-pan or pot. Add the chili and the wine and simmer for a few minutes.

๐Ÿ‘‰ Step 2
Add the chopped tomatoes. Cover and cook over medium-low heat for about 15 minutes.

๐Ÿ‘‰ Step 3
Cook the spaghetti following the instructions on the package. Once itโ€™s ready, add it to the sauce. Keep in mind that the sauce can wait for the pasta to finish cooking, never the other way around.

Add a pinch of black pepper and serve the pasta piping hot, topped with grated pecorino cheese.

Brown the onion in a pan with plenty of extra-virgin olive oil. Add the sliced potatoes and cook for a few minutes over medium heat, stirring occasionally.

Add the zucchini, sliced very thinly into half-moon shapes, and sautรฉ it together with the potatoes and onion. Finally, add the sliced tomatoes and cook all the ingredients together.

Remove the vegetables from the pan, drain off any excess oil (use a colander if necessary) and put them into a bowl.

Pour the beaten eggs and the almond milk into the bowl and stir well.

Step 1
Preheat the oven to 200 ยบC. Set the peppers, whole, in a baking dish with a drizzle of extra-virgin olive oil. Use a brush to coat the tops with a little more oil. Put them in the oven.

Step 2
Roast for about 30 minutes, flipping them halfway through.

Step 3
Peel the peppers (try to remove all the blackened skin). Remove the seeds and cut into strips.

Step 4
In a frying pan with a drizzle of extra-virgin olive oil, sautรฉ the peppers over high heat for a few minutes. Add salt to taste.

Step 5
Add the sugar and balsamic vinegar and cook over low heat for a few minutes until the sauce caramelizes.

Step 6
You can serve these peppers to complement a wide variety of other ingredients. They are fantastic on top of toasted artisan bread with a slice of goat cheese!

Ingredients
8 sheets of rice paper
1 onion
1 green pepper
ยฝ red bell pepper
2 cloves of garlic
1 carrot
1 avocado
1 very ripe tomato
Borges light extra-virgin olive oil for frying

For the vinaigrette:
60 ml Borges extra virgin olive oil
20 ml Borges balsamic vinegar
80 g crushed walnuts
Salt and pepper
A pinch of cumin
A pinch of ground cloves

Step by step
Step 1
In a bowl, combine the julienned onion and peppers and add the minced garlic. Then add the grated carrot, along with the diced tomato and avocado.

Step 2
Prepare a vinaigrette by mixing the extra-virgin olive oil, balsamic vinegar, crushed walnuts, salt, pepper, cumin, and cloves. Mix well.

Step 3
Pour the vinaigrette over the vegetables and stir to let the flavors blend together.

Step 4
Dip the rice paper in water, arrange the vegetable filling inside and roll it up.

Step 1
Preheat the oven to 230 ยฐC. Prick the eggplants with a fork and set them on a baking sheet. Bake them for 30 or 40 minutes until they are soft. Let them cool a little.

Step 2
Slice each eggplant lengthwise, scoop the flesh from the skin and blend it in a blender until it forms a smooth purรฉe.

Step 3
Add the lemon juice, tahini, minced garlic, and salt and pepper to taste. Mix well.

Step 4
Transfer the mixture into a bowl. Add 3 tablespoons of extra virgin olive oil, season to taste and stir. Cover with plastic wrap and refrigerate for at least 2 hours.

Step 5
Before serving, make a well in the center, pour in some olive oil and sprinkle with chopped parsley. Serve with warm pita bread.

1/2 cup brown sugar
1/4 cup Borges extra virgin olive oil

1 puff pastry
1 container ricotta

Step 1
Preheat the oven to 180 ยบC.

Step 2
Wash, peel and slice the peaches into 3 cm slices. Set them aside.

Place the puff pastry in a tart pan, prick the bottom with a fork and bake until golden brown.

Step 4
Take it out of the oven and wait for it to cool a little.

Step 5
Spread the ricotta over the bottom of the crust. Set it aside.

Step 6
Combine the oil, sugar and vanilla extract in a pan. Caramelize the sugar over low heat, and then add the peach slices. Take the mixture off the heat and pour it over the ricotta in the tart pan. Decorate with sliced almonds and a sprinkling of balsamic vinegar.

350 g penne
2 boneless, skinless chicken breasts
1 medium onion
50 ml balsamic vinegar
1 tablespoon honey
2 teaspoons rosemary
A splash of extra virgin olive oil
Salt and pepper

Step 1
Boil the pasta in salted water following the instructions on the package.

Step 2
Sautรฉ the onion in a deep frying pan in extra virgin olive oil.

Step 3
Add the chicken breasts and cook for a few minutes over medium heat.

Step 3
Add the balsamic vinegar, honey and rosemary and cook over medium-low heat until the sauce is reduced and creamy. Season with salt and pepper to taste.

Step 5
Add the pasta and cook everything together over low heat, stirring constantly, until the flavors blend together.

A handful of toasted walnuts

For the vinaigrette
2 tablespoons extra virgin olive oil Borges

1 teaspoon Dijon mustard
Salt and pepper to taste

2 green chilies
60 g tomato sauce

Step 1
Mix the chicken cubes with the cornstarch and soy sauce. Season with salt and pepper to taste. Leave to marinate in the refrigerator for 15 minutes.

Step 2
Brown the chicken for a few minutes in a pan with a generous splash of Borges Classic Olive oil. Remove using a slotted spoon, leaving the oil in the pan, and set aside.

Step 3
In the same oil, brown the onion and garlic for a few minutes. Add the pepper, sliced into strips, and the chilies. Cook until the pepper softens.

Step 4
Add the tomato sauce, chili sauce and a splash of water to the pan. Cook everything over low heat for a few minutes.

Step 5
Add the chicken, mix well, add salt to taste and serve very hot. Accompany with rice or potatoes.

Step 1
Slice the watermelon into cubes and place it in a bowl. Add the diced feta, the chopped apple and the halved olives. Top with sesame seeds and basil.

Step 2
For the vinaigrette, mix the hazelnuts, extra-virgin olive oil, lemon juice, fresh rosemary and salt.

Step 3
Add the vinaigrette to the salad and combine. Serve garnished with some fresh basil leaves.

A tasty exotic recipe you can rustle up in no time at time (and even faster in a pressure cooker).

๐ˆ๐๐†๐‘๐„๐ƒ๐ˆ๐„๐๐“๐’
500 g chicken wings
100 ml Borges Modena balsamic vinegar
150 ml chicken stock
1 onion
2 cloves of garlic
Mixed herbs: rosemary, thyme, oregano, etc.
Borges Extra-virgin olive oil
2 spoonfuls of brown sugar

Step 1
Cook the garlic in a saucepan with plenty of extra-virgin olive oil until it turns golden brown. Remove and then use the same oil to cook the onion. When it starts to turn golden brown, add the chicken wings, salt and pepper and the herbs.

Step 2
Cook for another 8 to 10 minutes to let all the flavours bind together.

Step 3
Mix the balsamic vinegar, sugar and chicken stock together in a bowl and add to the saucepan when the chicken wings are nice and golden. Cook over a low to medium heat for about 30 minutes, to reduce the sauce. Serve with basmati rice.
