โข 100 g bacon or guanciale

โข A splash of dry white wine

STEP BY STEP
๐ Step 1
Cook the bacon or guanciale (cut into strips) with a drizzle of extra virgin olive oil in a deep frying-pan or pot. Add the chili and the wine and simmer for a few minutes.

Add the chopped tomatoes. Cover and cook over medium-low heat for about 15 minutes.
๐ Step 3
Cook the spaghetti following the instructions on the package. Once itโs ready, add it to the sauce. Keep in mind that the sauce can wait for the pasta to finish cooking, never the other way around.

Brown the onion in a pan with plenty of extra-virgin olive oil. Add the sliced potatoes and cook for a few minutes over medium heat, stirring occasionally.

Add the zucchini, sliced very thinly into half-moon shapes, and sautรฉ it together with the potatoes and onion. Finally, add the sliced tomatoes and cook all the ingredients together.

Remove the vegetables from the pan, drain off any excess oil (use a colander if necessary) and put them into a bowl.

Pour the beaten eggs and the almond milk into the bowl and stir well.

Step 1
Preheat the oven to 200 ยบC. Set the peppers, whole, in a baking dish with a drizzle of extra-virgin olive oil. Use a brush to coat the tops with a little more oil. Put them in the oven.
Step 2
Roast for about 30 minutes, flipping them halfway through.
Step 3
Peel the peppers (try to remove all the blackened skin). Remove the seeds and cut into strips.
Step 4
In a frying pan with a drizzle of extra-virgin olive oil, sautรฉ the peppers over high heat for a few minutes. Add salt to taste.
Step 5
Add the sugar and balsamic vinegar and cook over low heat for a few minutes until the sauce caramelizes.
Step 6
You can serve these peppers to complement a wide variety of other ingredients. They are fantastic on top of toasted artisan bread with a slice of goat cheese!

Step 1
In a bowl, combine the julienned onion and peppers and add the minced garlic. Then add the grated carrot, along with the diced tomato and avocado.

Prepare a vinaigrette by mixing the extra-virgin olive oil, balsamic vinegar, crushed walnuts, salt, pepper, cumin, and cloves. Mix well.
Step 3
Pour the vinaigrette over the vegetables and stir to let the flavors blend together.

Step 1
Preheat the oven to 230 ยฐC. Prick the eggplants with a fork and set them on a baking sheet. Bake them for 30 or 40 minutes until they are soft. Let them cool a little.

Slice each eggplant lengthwise, scoop the flesh from the skin and blend it in a blender until it forms a smooth purรฉe.
Step 3
Add the lemon juice, tahini, minced garlic, and salt and pepper to taste. Mix well.
Step 4
Transfer the mixture into a bowl. Add 3 tablespoons of extra virgin olive oil, season to taste and stir. Cover with plastic wrap and refrigerate for at least 2 hours.

Step 1
Mix the chicken cubes with the cornstarch and soy sauce. Season with salt and pepper to taste. Leave to marinate in the refrigerator for 15 minutes.

Step 1
Cook the garlic in a saucepan with plenty of extra-virgin olive oil until it turns golden brown. Remove and then use the same oil to cook the onion. When it starts to turn golden brown, add the chicken wings, salt and pepper and the herbs.

Cook for another 8 to 10 minutes to let all the flavours bind together.
Step 3
Mix the balsamic vinegar, sugar and chicken stock together in a bowl and add to the saucepan when the chicken wings are nice and golden. Cook over a low to medium heat for about 30 minutes, to reduce the sauce. Serve with basmati rice.
