Sofrito comes from the Catalan verb “sofrier” which means “to gently fry.”
The foundation of so many of the world's greatest dishes, known as the Holy Trinity - in Spain, there's onion, garlic and tomato, in Italy (soffritto/battuto) & France (mirepoix) carrots, celery, onion.
