Yet for those of us who live in cities or in the kind of lifestyle where we do not have space or time to grow our own food, this is increasingly challenging. We are now in an era of increasing awareness as to what extent our food supply has been poisoned by mass production and how this in turn is ruining our health and wellbeing. Fake, poisonous and chemical laden "food like products" and inferior quality fruit and vegetables which may look perfect but have little to no nutritional value but instead many chemicals. Feeling blessed to have access to such fresh organic food... 😇

Gluten free egg free dairy free banana pancakes - yummy for breakfast: makes two large pancakes: 1 cup buckwheat flour, 1 cup soya milk (or other non-dairy milk), 1 ripe mashed banana, 1/2 tsp baking soda, 1/2 tsp vinegar, cinnamon to taste. Whisk it up and pour into pancake pan, cook until bubbling and golden, flip and cook other side just 1 minute, and done!
Buckwheat crackers - simply mix one cup buckwheat flour with half a cup of water and 1/4 cup oil, pinch or two of seasalt. Spread thinly on a baking sheet and score into cracker shapes with a pizza cutter. Bake at 170 deg for 15 minutes, and voila! Healthy gluten free replacement for bread :-)
Been experimenting with cooking with Buckwheat flour - a great alternative to wheat flour - it has a great nutty flavour and is gluten free. High in protein and high levels of antioxidant polyphenols - especially rutin (a bioflavonoid), which supports the circulatory system and helps strengthen blood vessels, (helpful for those prone to haemorrhoids and varicose veins). Rutin also acts as an ACE inhibitor and contributes to buckwheat's ability to reduce high blood pressure. Traditionally prized as a "blood-building" food, it also helps to lower blood cholesterol and blood sugar. Compared with true grains, buckwheat is high in minerals: especially zinc, copper and manganese. Buckwheat has more protein than rice, wheat, millet or corn and is high in the essential amino acids lysine and arginine, in which major cereal crops are deficient... A real superfood!
