Today's late lunch BAJA NORTE!

Grilled Octopus over Guacamole, and Red Onion on a Blue Corn Tortilla! I also ate the shrimp a la plancha by themselves (skipping the tortilla). They truly make the best shrimp at Baja!

While tortillas are not Keto friendly at 9 Carbs per tortilla, I opted to splurge half of my carbs on a Blue Corn Tortilla today 😋.

NOTE: my goal is to stay under 18 Carbs per day for weight loss.

Breakfast! Avocado Toast and Poached Eggs with the perfect runny yolk! Well I couldn't decide on poached or boiled... so I had one of each 😋!

My pan toasted Flaxseed Bread with Avocado. Boiled Egg on one and a poached egg on the other. Seasoned with Himalayan Salt, Everything Bagel Seasoning, Trader Joe's Garlic Citrus Seasoning and a Scrunch of freshly ground Black Pepper!

My Flaxseed Bread is a very high fiber bread. Each slice only containing 1 Net Carb.

Get your body moving with Casa Verde Wellness Collective !

I just starting back at a gym routine beginning last week! I'm super excited to have found a Crossfit Gym only 5 minutes away from me and incorporating hiking into the mix!

Between 🧘‍♀️MIND 🧠, BODY--exercise 🏋‍♀️, hiking, 7 - 8 hours of sleep 🛌--& SPIRIT-- love, family & friends, abundance, showing up for myself, and doing what are most passionate to me--cooking/ creating, and dance💃! I'm already feeling the benefits!

Here's a picture of me the summer of...?.... but I was about 27 and going to Yosemite just about every weekend! I so miss seeing the stars that high up and with zero lights anywhere! Sure, there was a bear here and there but hey, I'm still alive! I am a true adventurer and love that sporty adrenaline!

I'm proud to say I've run a Marathon, ran the 5k Rugged Maniac which included 25 super fun but hard obstacle courses, climbed Half Dome TWICE in one day (honestly, the only hard part was the hike getting there--im not afraid of heights!), El Capitan, and backpacked the Salcantay route--a 5-day trek to Machu Picchui in Peru!

I am a sporty adventurer & Entrepreneur at heart! Somehow, those things can get lost or forgotten along the way and I'm looking forward to getting back there! I will have my challenges, but it's nothing a knee brace can't help after an old ski injury to my ACL.
