๐ฝ Sweet and Sour Couscous-Stuffed Peppers
Level: Easy
Time Needed: Approx. 50 minutes
Ingredients:
๐ฟ 2 tablespoons olive oil
๐ฟ 2 stalks celery, cut into bite-size pieces
๐ฟ 1 carrot, peeled, cut into bite-size pieces
๐ฟ Salt and freshly ground black pepper
๐ฟ 1 (14 1/2-ounce) can chopped tomatoes
๐ฟ 1 (14-ounce) can low-salt chicken broth
๐ฟ 1/2 cup fresh basil leaves, torn into pieces
๐ฟ 1 tablespoon tomato paste
๐ฟ 1 bay leaf
๐ฟ 1/2 teaspoon dried thyme leaves
๐ฟ 2 chicken breast with ribs (about 1 1/2 pounds total)
๐ฟ 1 (15-ounce) can organic kidney beans, drained (rinsed if not organic)
Steps/Directions:
๐ 1) Heat the oil in a heavy 5 1/2-quart saucepan over medium heat. Add the celery, carrot, and onion. Saute the vegetables until the onion is translucent, about 5 minutes. Season with salt and pepper, to taste. Stir in the tomatoes with their juices, chicken broth, basil, tomato paste, bay leaf, and thyme. Add the chicken breasts; press to submerge.
๐ 2) Bring the cooking liquid to a simmer. Reduce the heat to medium-low and simmer gently uncovered until the chicken is almost cooked through, turning the chicken breasts over and stirring the mixture occasionally, about 25 minutes. Using tongs, transfer the chicken breasts to a work surface and cool for 5 minutes. Discard the bay leaf. Add the kidney beans to the pot and simmer until the liquid has reduced into a stew consistency, about 10 minutes.
๐ 3) Discard the skin and bones from the chicken breasts. Shred or cut the chicken into bite-size pieces. Return the chicken meat to the stew. Bring the stew just to a simmer. Season with salt and pepper, to taste.
๐ 4) Ladle the stew into serving bowls and serve with the bread.
๐ 5) Serving suggestion: crusty bread.

๐ฟ 1 tablespoon dried oregano
๐ฟ 1 teaspoon dried cumin
๐ฟ 1 (28-ounce) can chopped tomatoes
๐ฟ 3 cups shredded cooked chicken
๐ฟ Few dashes Worcestershire sauce
๐ฟ 3 to 4 cups chicken stock
๐ฟ 1 lime
๐ฟ 1 cup cooked white rice
๐ฟ Kosher salt
๐ฟ Sour cream, for garnish
๐ฟ Fresh cilantro leaves, for garnish
Steps/Directions:
๐ 1) Heat oil in a saucepan over medium heat. Add onion and saute for 1 to 2 minutes. Add garlic and jalapeno and sweat until soft and translucent. Add spices and cook for 1 to 2 minutes until fragrant and aromatic. Add tomatoes, chicken, Worcestershire, and stock.
๐ 2) Bring to a simmer and cook for 20 minutes.
๐ 3) Cut the lime in half, squeeze the juice into the pot, and then add the juiced halves as well.
๐ 4) Add white rice and cook 5 minutes longer to warm rice through. Season, to taste, with salt.
๐ 5) Ladle into bowls and garnish with sour cream and cilantro.

๐ฝ The Best Stuffed Peppers
Level: Easy
Time Needed: Approx. 2 hours 5 minutes
Ingredients:
๐ฟ 6 large red, orange, or yellow bell peppers
๐ฟ 3 tablespoons olive oil
๐ฟ 1 pound ground beef
๐ฟ 2 medium onions, chopped
๐ฟ 4 cloves garlic, finely grated
๐ฟ 2 teaspoons thyme leaves
๐ฟ Kosher salt and freshly ground black pepper
๐ฟ 4 plum tomatoes, cored and cut into 1/2-inch pieces
๐ฟ 2 tablespoons tomato paste
๐ฟ 1 cup dry white wine
๐ฟ 1 cup low-sodium chicken broth
๐ฟ 2 cups cooked rice
๐ฟ 2 cups shredded Muenster cheese
Steps/Directions:
๐ 1) If your peppers don't sit upright on your cutting board, trim about 1/8-inch off the bottoms to even them out so they can stand without falling over. Cut the top off each pepper about 1/2-inch down. Remove and discard the stems, then finely chop the remaining flesh from the tops. Scoop out the seeds and as much of the membranes as you can. Place the peppers in a large microwave-safe bowl with 1/2 cup water. Cover with plastic wrap and microwave on high power for 12 minutes. Carefully uncover and let them sit until ready to assemble.
๐ 2) Heat 2 tablespoons of the oil in a large skillet over medium-high heat. Spread the beef in an even layer and cook undisturbed until lightly browned about 3 minutes. Toss and continue to cook, breaking up any clumps with the back of a spoon and scraping up any browned bits from the pan until the meat is lightly browned all over 6 to 8 minutes. Transfer the browned meat to a large bowl with a slotted spoon.
๐ 3) Reduce the heat to medium. Heat the remaining 1 tablespoon oil and add the reserved chopped peppers, onions, garlic, thyme, 4 teaspoons salt, and 1/2 teaspoon pepper and cook, stirring occasionally, until tender but not browned, 10 to 12 minutes. Add the tomatoes and cook, stirring occasionally, until falling apart and much of the liquid has evaporated about 7 minutes.
๐ 4) Stir in the tomato paste and cook, stirring constantly until brick red-colored, about 1 minute. Stir in the wine and cook until the mixture is reduced, very thick and no smell of alcohol remains 6 to 8 minutes. Add the broth and bring to a boil. Transfer to the bowl with the beef. Stir in the rice until completely combined. (The mixture will be wet.) Season with salt and pepper.
๐ 5) Arrange a rack in the center of the oven and preheat to 450 degrees F.
๐ 6) Place the peppers cut-side up in a 13-by-9-inch baking dish. Spoon the filling into the peppers, gently pressing it in with the back of a spoon. Be careful not to overstuff and split the sides of the peppers. Bake for 15 minutes. Then top with the cheese and continue baking until the filling is heated through and the cheese is browned in spots, 10 to 12 minutes.

Level: Easy
Time Needed: Approx 40 min
Ingredients:
๐ฟ 4 (5 ounces each) salmon fillets
๐ฟ 2 teaspoons olive oil plus 2 tablespoons
๐ฟ Salt and freshly ground black pepper
๐ฟ 3 tomatoes, chopped, or 1 (14-ounce) can chopped tomatoes, drained
๐ฟ 2 chopped shallots
๐ฟ 2 tablespoons fresh lemon juice
๐ฟ 1 teaspoon dried oregano
๐ฟ 1 teaspoon dried thyme
Steps/Directions:
๐ 1) Preheat the oven to 400 degrees F.
๐ 2) Sprinkle salmon with 2 teaspoons olive oil, salt, and pepper. Stir the tomatoes, shallots, 2 tablespoons of oil, lemon juice, oregano, thyme, salt, and pepper in a medium bowl to blend.
๐ 3) Place a salmon fillet, oiled side down, atop a sheet of foil. Wrap the ends of the foil to form a spiral shape. Spoon the tomato mixture over the salmon. Fold the sides of the foil over the fish and tomato mixture, covering completely; seal the packets closed.
๐ 4) Place the foil packet on a heavy large baking sheet. Repeat until all of the salmon have been individually wrapped in foil and placed on the baking sheet. Bake until the salmon is just cooked through, about 25 minutes. Using a large metal spatula, transfer the foil packets to plates and serve.

Time Needed: Approx. 1 hour 10 minutes
Ingredients:
๐ฟ 2 medium carrots, cut into chunks
๐ฟ 2 stalks celery, cut into chunks
๐ฟ 1 large shallot, cut into chunks
๐ฟ 1 1/2 tablespoons olive oil
๐ฟ 1/2 pound lean ground beef
๐ฟ 2 tablespoons plus 4 teaspoons tomato paste
๐ฟ 1/3 cup chopped fresh parsley, dill, or a combination
๐ฟ 1/3 cup golden raisins
๐ฟ 2 tablespoons red wine vinegar
๐ฟ Kosher salt
๐ฟ 4 red, yellow, orange, or green bell peppers or a mix of colors, halved lengthwise and seeded
๐ฟ 1/2 cup whole-wheat couscous
๐ฟ 3/4 cup grated asiago cheese
Steps/Directions:
๐ 1) Preheat the oven to 450 degrees F. Pulse the carrots, celery, and shallots in a food processor until coarsely chopped.
๐ 2) Heat 1 tablespoon of the olive oil in a large nonstick skillet over medium-high. Add the chopped vegetables and cook, stirring frequently, until lightly golden and soft, 8 to 10 minutes. (Add a splash of water if the mixture begins to stick.)
๐ 3) Add the ground beef and 4 teaspoons of tomato paste and cook, breaking the mixture up with a wooden spoon, until browned, about 4 minutes. Add 1/2 cup water, the parsley, raisins, 1 tablespoon of vinegar, and 3/4 teaspoon salt. Bring to a simmer and cook until most of the water is absorbed and the mixture gets saucy for about 1 minute. Let cool slightly.
๐ 4) Meanwhile, toss the pepper halves with the remaining 1/2 tablespoon oil in a microwave-safe bowl. Cover with plastic wrap and microwave until the peppers are pliable, 10 to 12 minutes. Carefully uncover the bowl and pour out any liquid that has accumulated.
๐ 5) Stir the couscous into the beef mixture. Whisk together the remaining 2 tablespoons tomato paste, 1 tablespoon vinegar, and 3/4 cup water in the bottom of a large baking dish.
๐ 6) Carefully transfer the peppers to the baking dish cut-side up and fill each pepper with the couscous mixture. Sprinkle with the cheese. Cover with foil and bake until the peppers are tender and the stuffing is hot, 20 to 25 minutes. Serve warm or at room temperature drizzled with the tomato cooking liquid.

Ingredients:
๐ฟ 2 tablespoons light brown sugar
๐ฟ 1/2 teaspoon paprika
๐ฟ 1/2 teaspoon garlic powder
๐ฟ 1/4 teaspoon cayenne pepper
๐ฟ Kosher salt and freshly ground black pepper
๐ฟ 1/4 cup panko breadcrumb
๐ฟ 1/2 cup parsley leaves, chopped
๐ฟ 2 tablespoons unsalted butter, melted
๐ฟ 1 1/2 pounds skin-on salmon fillet, preferably center-cut
๐ฟ 1 tablespoon Dijon
Steps/Directions:
๐ 1) Preheat the oven to 425 degrees F.
๐ 2) Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl.
๐ 3) Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
๐ 4) Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn.
๐ 5)Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.

Ingredients:
๐ฟ 12-ounce salmon fillet, cut into 4 pieces
๐ฟ Coarse-grained salt
๐ฟ Freshly ground black pepper
๐ฟ Toasted Almond Parsley Salsa, for serving
๐ฟ Baked squash, for serving, optional
Toasted Almond Parsley Salad:~
๐ฟ 1 shallot
๐ฟ 1 tablespoon red wine vinegar
๐ฟ Coarse grain salt
๐ฟ 2 tablespoons capers, rinsed
๐ฟ 1 cup fresh flat-leaf parsley
๐ฟ 1/2 cup toasted almonds
๐ฟ Extra-virgin olive oil
Steps/Directions:
๐ 1) Preheat the oven to 450 degrees F.
๐ 2) Season salmon with salt and pepper. Place salmon, skin side down, on a non-stick baking sheet or in a non-stick pan with an oven-proof handle. Bake until salmon is cooked through, about 12 to 15 minutes. Serve with the Toasted Almond Parsley Salad and squash, if desired.
Toasted Almonds Parsley Salad:~
๐ 3) Mince the shallot and add to a small bowl. Pour the vinegar over the shallots and add a pinch of salt. Let sit for 30 minutes.
๐ 4) Roughly chop the capers, parsley, and almonds and add to the shallots. Add the olive oil, tasting as you go. Mix again and adjust the seasonings.
