Hello All, Two of my customers came up to me today asking how to make Kimchi Stew (κΉμΉμ°κ° - Kimchi Jjigae). So I thought, perhaps from time to time, I should share some simple and quick recipes.... Here goes the First one! :) :) Kimchi Stew - κΉμΉμ°κ° (Kimchi Jjigae) - serves 4 Ingredients: 1 teaspoon sesame oil 2 teaspoons Korean hot pepper flakes (Gochugaru) 1 tablespoon Korean hot pepper paste (Gochujang) 1/2 teaspoon of sugar salt to taste 2 cubes of anchovies stock with 3 cups of water (or you can make your own anchovy/chicken/beef broth from scratch) 1 piece of hard tofu, cut into bite size 3 green onions, cut into 1 inch long 1 medium onion, cut into slices 500g kimchi (at least 2 weeks old), you can opt to cut into small pieces or leave it as a whole 1/2 cup kimchi juice 500g pork shoulder/pork belly/chicken drumstick (de-boned) / beef Directions: 1. Make the anchovies broth 2. Add in the hot pepper flakes, hot pepper paste and let boil (adjust the spiciness by adding more or less) 3. Add in kimchi and let it simmer for at least 10 minutes on a low fire 4. Add in sugar and salt 4. Add in your choices of meat 5. Add in tofu, onion and green onions 6. Simmer for another 5 - 10 minutes, or till the soup is thicken 7. Off stove, drizzle 1 teaspoon of sesame oil. Walla!! Kimchi Stew Done. Remember to serve while it's still bubbling.
