HOW TO TELL IF YOUR EGGS ARE FRESH?
1. Chalaza
If you can see the chalazae (plural) two sides of the yolk, you know you have a super fresh egg. If you can’t find at least one after cracking the egg it means that has been stored for a while as the chalaza disappears over time.
The chalazae are a special protein, visible as the ropey cords that attach the yolk to the lining of the egg shell and hold it in the centre of the egg.

TENTANG KUNING TELUR
Kuning telur adalah bahagian telur yang kaya bagi membekalkan nutrisi kepada embrio ditengahnya (jika o**m disenyawa).
Kuning telur terdiri dari protein, lipid dan kolesterol. Ia juga kaya mineral, vitamin dan provitamin.
WARNA KUNING TELUR
Warna kuning telur adalah disebabkan oleh kehadiran pigmen carotenoids. Pigmen-pigmen ini memberikan warna kekuningan hingga kemerahan, bergantung kepada komposisi carotenoids yang hadir dalam kuning telur tersebut.
Pigmen-pigmen ini diperoleh dari diet yang dimakan oleh ayam.
Jika kuning telur banyak mengandungi lutein dan zeaxanthine, warnanya akan lebih kekuningan.
Manakala, jika kuning telur mengandungi kompaun yang memberikan warna oren atau merah seperti canthaxanthin, capxanthine, capsorubin warnanya tentulah akan lebih gelap.
ADAKAH LEBIH GELAP WARNA KUNING TELUR LEBIH BAGUS?
Ramai pengguna akan memilih warna kuning telur yang lebih merah kerana dianggap lebih tinggi nilai nutrisi.
Sebenarnya, warna kuning telur bukanlah penanda aras yang khusus bagi menentukan nilai kualiti dan nutrisinya.
Seperti yang dinyatakan diatas, warna kuning telur adalah disumbang oleh komposisi pigmen carotenoids.
Ada pelbagai jenis kompaun carotenoids terdapat secara natural.
Warna yang disumbang setiap kompaun juga ada yang sangat pudar, kuning, oren, ada yang merah menyala. Tidak berkadaran dengan nilai nutrisi. Walaupun kompaun ini adalah antioksidan yang baik.
Kompaun carotenoids juga ada yang bersifat pro-vitamin A, maksudnya ia boleh dicerna tubuh kita menjadi vitamin A. Contohnya, beta-carotene, β-cryptoxanthin. Warnanya oren kemerahan.
Tetapi jika kuning telur itu sendiri kaya vitamin A, retinol, warna yang diberikan adalah kuning pudar.
Komposisi omega 3, 6… lipid atau kolesterol tidaklah memberi warna pada kuning telur. Jadi tiada kaitan warnanya dengan kualiti telur tersebut.
Malah, kerana kehendak pengguna, pemain industri telur ada juga memberikan diet dengan komposisi carotenoids tertentu untuk mendapat warna kuning telur yang dikehendaki.
