What you're about to read is going to be an understatement but we're going to attempt it anyhow (gotta try it to know it!) 🤯

🤤 Taste marbled juices oozing from every tender bite of the full-bodied A5 Wagyu paired with the tanginess of Yuzu Mayo, savouriness of Teriyaki Glaze and a hint of sweetness from Momotaro tomatoes. The wine elevates it further with slight acidity of cranberries and plums, complemented with undertones of smoke and spice.

SLIDE. is a project by Chong Yu Cheng (YC), owner and chef of Above Gastrobar, one of the first progressive restaurants in Ipoh and the first of its kind rooftop wine restaurant in the historic Ipoh Old Town. As a self-taught chef, he learned things the scientific way and loves to bend and break the rules set by traditional cuisine.

His cooking is inspired by cuisines from different cultures and believes that these boundaries should be broken to create bolder and exciting dishes. While he’s always curious to try out ingredients that are new and foreign, the ones that spark his joy for cooking the most are local, like ulam raja, jackfruit, cencaluk, palm sugar, budu, and more.

His constant compulsion to experiment and create new flavour pairings is the driving force behind Above’s seasonal à la carte menu, which changes every few months.

In July 2020, Above was chosen as the venue for Hennessy’s In Good Company event, a 5-course pairing dinner featuring the Richard Hennessy, Hennessy’s flagship cognac. Recently, Above was a partner for Hennessy XO Home Odyssey Edition nationwide virtual pairing dinner.

For this slider that brings together flavours of the East and the West; the focus of the pairing is the jackfruit jam, whereby the wine weaves in a host of ripe tropical fruit profiles of yuzu, pineapple, and tangerine which embody the residual sugar of the wine. This Pinot Gris also comes with a mouth-watering acidity that cuts through the richness of the foie while working alongside the sour pink pomelo and trigona honey to showcase a multitude of different acidic notes.

With this pairing, think umami: a flavourful and savoury component that complements the puer tea, elevates the smokiness of the duck, while drawing out the subtle spiciness of the chilli in the mayo. As there's just so much going on in every bite, only a wine with enough complexity, like this Grenache/Syrah blend can match the explosion of flavours that bursts forth from the slider. The wine displays plenty of red and dark fruits like cranberry, raspberry from the Grenache and a jab of black pepper and cinnamon notes from the Syrah.

A classic approach of pairing a strong, beefy cut of meat with a wine with plenty of structure to back. The wine has firm tannins and elegant acidity which makes each bite more enjoyable than the last. As you chew, the tannins slowly come into play while you savour the flavours of cranberry, plum with undertones of smoke and spice, creating an extra layer of flavours for the smoky charred beef.

It's well known that A5 is the ultimate grade of beef. But did you know that it's possible to upgrade from an A5 grade Japanese wagyu?

The A5 grade is equivalent to BMS (beef marbling score) 8 - 12, where the higher the number, the higher the quality and price.

As the festive season is around the corner, we're feeling generous and we decided to go for a block of Kagoshima A5 which is equivalent to BMS11, at our expense, but still keeping our selling price the same, just because you deserve the best.

This is almost as good as it gets.
