HOW TO MAKE PAP/AKAMU/OGI FROM MILLET

SIMPLE STEPS TO MAKE PAP FROM IT
1. Soak it for at least six hours until its soft.
2. Wash thoroughly and blend.
3. Add water to the paste and filter through a very thin sieve so you have only liquid passing through.
4. After sieving, keep it for about six hours so the concentrate can suspend and the water rise.
5. Gently pour out the water and you can refrigerate.

Anyways I'll share a personal recipe on how my mom garnishes it in meat. It's a delicacy my family always looks forward to. I'll also post a picture of what it looks like on my story. Some persons said it looks like burnt offering 😂😂😂 but we who relish it, know it isnt.
It's usually the black benniseed (because there is the white one which people use for soup) she uses.
1. Wash the benniseed for stones and air it
2. Once dry, pour in a dry pan and stir fry until it starts making popping sounds
3. Pour in a mortar and pound. While pounding, add maggi and salt to taste.
4. Fry pepper and onion sauce and spice well.
5. Mix pepper and onion sauce with already fried meat, and add benniseed (rido) with a little stock and mix.
