SOME SECRETS OF COOKING WITH SEASONINGS (SPICES AND HERBS)

1. Bay leaf is a must have herb in your kitchen for steaming your meat and cooking your stew, jollof rice, fried rice and sauces etc.

2. Removing seeds from your fresh pepper, helps to reduce its hotness and spiciness.

3. Sprinkling some salt on your fresh pepper while pounding it, helps it to pound faster.

4. You can put onion in the middle of burning jollof rice to avoid the bad scent in the jollof rice.

5. If your food is too peppery, you can use palm oil to reduce the hotness of the pepper.

6. Always add stock cube to your cooking food before adding salt to avoid eating unnecessary salty food.

7. Whenever you are frying your stew, remember not to add too much salt in it, because your meat stock that has seasonings, will still go in.

8. You can use salt to parboil or soak your rice or pasta, in order to remove the starch from the rice or pasta quick.

9. Make crayfish the last Ingredient you add to every meal, the taste of the meal will be very delicious.

10. Always add aromatic spices like cardamon, cinnamon, mace and cloves at the end of a recipe to retain the aroma of these spices.

11. Try to season and marinate your meat for at least 30 minutes before cooking, in order achieve a tastier result.

12. African nutmeg (Ehuru) is a must used spice for cooking your stew, jollof rice and local dishes.

13. If you are cooking small quantity of fried rice, use only curry powder to cook the rice, but if you are cooking large quantity, you can add it with turmeric for that beautiful golden colour of the fried rice.

14. Bad oil should never be used to cook your food, because oil also adds flavour to food.

15. Tatashe or shombo is best for cooking your stew while Paprika is best for cooking your jollof rice.

16. Curry powder is best for cooking your fried rice and curry sauce while sauce so

I used to have a neighbor.

Who has a son.

His name is Jeremy.

This happened a long time ago.

When the boy came to my house.

He was barely four years old at the time.

He walked up to me and climbed the couch where I leaned my back.

My eyes closed.

He drew my cheek.

I gently opened my eyes.

He didn't say anything, instead was simply staring at me.

I closed back my eyes since he had nothing to say.

He drew my cheek again.

This time I opened my eyes and said.

"Jeremy, what do you want?"

He pointed at the television.

And lisped.

Since he wasn't audible, I leaned forward.

"What did you say?"

He lisped again and I heard him.

"Piii Jee Mask."

I asked.

"You want to watch PJ Masks?"

He nodded and said gently.

"Yes. PiiJee Mask."

I picked the remote control and changed the channel to Nickelodeon unfortunately they were not airing PJ Masks because it's not Disney Junior, but SpongeBob.

Which was also one of his favorites.

So, he gently sat beside me and began to watch.

His eyes, body, and soul were glued to the television.

He wasn't even paying attention to me anymore.

As I called him twice, he didn't answer.

I decided to be a little mischievous.

So, I got up and stood in front of the television, obstructing his view.

He frowned his face.

"Unku, extuse."

He realized I wasn't going to move an inch.

He changed his position.

He stood and sat on another couch but he couldn't see because my huge self was still blocking every corner.

He screamed with his brows furrowed.

"Oooooh, Unku Kyhian extuse nah."

I saw how serious he was so I moved and sat beside him.

I called him again.

"Jeremy?"

No answer.

I called him his usual pet name.

"Baby J?"

He snubbed me.

His usual behavior.

I nodded and gently picked up the remote control and changed the channel.

He screamed and slammed his tiny hand on the floor.

"Oooooooooh who is thish one naw?!"

I was shocked he could react like that.

The next thing he did was stand up.

Then he glared at me as he headed to the exit door.

"I wan to gooo. I wan to gooo my house."

I laughed.

"Which house? Are you paying rent?"

He frowned.

"Yes. I want to gooo... I will not come to your house again."

I didn't want him to go so I put back Nickelodeon.

I had thought putting back the channel would make him stay back.

He didn't budge, rather he kept pointing at the door.

And looked at me and said.

"Please, I want to goo my house. Eat your TV."

I was dumbfounded.
