Sea food is some of the staple diet of Ijebu Waterside, from Igele, to Onni, Iwopin, Imaku, Ode-Omi, etc. It is safe to say some of the supplies you get from Epe and its environs are from Waterside. take a trip any day, especially on a market day and you will not be disappointed.

Roasted  red pepper soup
Serves 6-8 

Ingredients:
2 onions roughly chopped
2 carrots roughly chopped 
3-4 red peppers, cored and deseeded
1 pint cherry tomatoes 
1 can butter beans 
1 head of garlic or one tube garlic paste 
Salt and pepper to taste ( I used about ½ tbsp spoon of salt) 
½ tsp cayenne - optional 
1 tbsp oregano 
1 tbsp paprika 
2 bay leaves 
A small bunch of thyme 
A few sprigs of rosemary 
½ c olive oil 
1 carton of chicken or vegetable broth 
Garnish: heavy cream or coconut milk, parmesan cheese, red pepper flakes, chives, more fresh thyme, more olive oil 

Serve with a crusty bread but not too hard just something with air to catch all the soup for dipping,

Set oven to 350 degrees 
To a large casserole dish or shallow roasting pan, add all the ingredients except the broth, olive oil and garnishes you’d like, cover everything in the roasting pan with olive oil and toss together to make sure everythings well coated. Bake in the oven for 45minutes you want to start to see char developing just around the peppers edges, remove from the oven and let sit for 5 minutes, to a heat safe blender all all the ingredients, making sure to remove the rosemary, thyme and bay leaves. Pour juices left from roasting into the blender then add the 32oz of broth you prefer. Blend for about 3-5 minutes but check to see that its the smooth creamy texture you like, this is great because you can check if it needs more salt and pep! 

When blended pour it into a serving bowl and garnish with whatever feels right, I like to use a ton of cheese, red pepper flakes, and whatever fresh herbs i have in my garden or fridge. Enjoy!
