ARE ALL PROCESSED FOODS UNHEALTHY?
When we talk about healthy eating, we often talk about "processed foods".
Are all processed foods unhealthy? What foods are processed foods?
Processed foods are foods that have undergone some methods of preparation, preservation and alterations before they're consumed.
So, as long as we're not eating our corn, yam, cassava, rice, wheat, ugu, water leaf etc the way they're harvested, then we're all eating processed food.
When then does "processed food" become unhealthy?
We can say processed foods have levels.
Minimally processed or moderately processed and highly processed.
Minimally processed or moderately processed foods are foods that you don't have to do too much to them. Even while altering their original form or looks, the nutrients are still retained and there are no additives added.
It can include just washing and slicing vegetables, boiling grains and tubers (boiled yam etc), blending grains into powder (corn flour, rice flour, fonio flour etc)
Foods like homemade pap are processed foods but only moderately processed because there are no additives and the nutrients are intact.
We can say foods that we can easily traced back to the roots or source are minimally or moderately processed.
Highly processed foods on the other hand often involves a lot of processing that nutrients are lost, additives like preservatives, flavour enhancers, colours articial sweeteners etc are often added to make them look and taste more appealing.
In the course of processing some foods, their forms are changed which sometimes introduce unhealthy compounds into the food.
For instance, most vegetable oils in the market are made from palm oil. They are "refined" to change the form. This process introduces bad and unhealthy fats which makes it unhealthy.
Truth is, highly processed foods are the foods mostly found in stores and are mostly consumed now. They range from highly processed meats (sausage) to snacks, packaged juices and many more.
So, if you care about healthy foods, stick to or switch to foods that are moderately processed, avoid highly processed foods.
Read food labels to be sure of what you're consuming.
How does highly processed foods affect our health? We will discuss that in subsequent post.

THYME IS UNDERRATED!
Thyme is a fragrant herb, available in dried and fresh. The most commonly used being the dried ones.
Thyme is mostly used as food seasoning.
Many people only use thyme for some certain foods like jollof rice and boiling meat.
But thyme can be used in any meal of your choice. Soups, stews, pastas and even omelette or egg sauce.
Dried thyme can be added to spice mixes.
Fresh thyme can be used whole or blended into paste with some other herbs for seasoning.
Dried thyme can be blended into powder and used as seasoning in foods of choice.
Thyme isn't just food "decoration", it is a herb that adds flavour to dishes when added.
Dried thyme can be added at the beginning of cooking.
DID YOU KNOW?
Thyme is rich in vitamin A and C which helps to boost the immune system. It also has antioxidant, antiinflammatory and antibacterial properties.
Thyme tea can help relieve cold symptoms.
So, next time you see thyme, remember it's versatile!

Let's talk about how what we eat affects every part of us!
Let's take it from CELLS!
We were all taught cells as a topic in school. I think it started when we were in primary school.
We were told it is the basic unit of life. They are the building blocks of our body!
And these cells form tissues then organs then the whole body system! (To summarize)
Remember? 😀😀
For every activity happening in our body, over 37 trillion cells are at work!
For these cells to function well, they need nutrients; the macro and micro. Macro is carbohydrates, fats, and proteins. Micro-vitamins, minerals, and some trace compounds.
When the cells are well-fed, they perform their functions effectively and efficiently; creating needed energy, detoxifying, recovering fast, and maintaining general health.
Simply put, if your cells are well-fed and there are no cases of genetic malfunctioning, your body will perform well!
Nourished cells=Nourished body!
Unhealthy foods often cause the death of cells, and in the presence of too many unhealthy foods, cells die faster which affects our organs and the whole body system will not function well.
Foods high in processed sugar, trans fat (often found in vegetable cooking oil, margarine, etc.), and processed meat (e.g. sausages) have been found to reduce the functioning of cells and age cells faster, eventually leading to cell death.
What foods nourish the cells?
Whole and natural foods!
A healthy balanced diet that contains adequate and needed amounts of carbohydrates, protein, healthy fats, vitamins, and minerals.
Carbohydrates from whole grains( brown rice, millet, corn, etc.), tubers (potatoes, yam, cassava, etc.)etc.
Protein from unprocessed meat, milk, soybeans, beans, egg, fish etc.
Healthy fats from groundnuts, melon seeds, sesame (beni seed/ beniseed) avocado etc.
Vitamins from fresh fruits and vegetables. Yes, most of the nuts, seeds, grains, and tubers we eat also have vitamins and some minerals.
Human cells are easily stressed and damaged by many factors, one of which is the toxins in the environment (pollution etc.), The easiest way to heal and correct these damages is by feeding it healthy foods!
BEFORE YOU EAT THAT FOOD OR DRINK THAT DRINK, ASK YOURSELF THE EFFECT IT'LL HAVE ON YOUR CELLS, WILL IT DAMAGE IT OR FEED/HEAL IT?
Don't forget, your cells make up the whole you, if you don't feed it well, your body suffers, now or in the future!
Feel free to share!

When it comes to eating fruits and vegetables, I always say "Eat fruits in season"!
It is easier and more affordable.
There is no month that there won't be a fruit in abundance, a fruit you'll easily find around you.
These fruits are rich in nutrients needed for good body functioning.
Rather than buy that carbonated drink or packaged juices, buy fruits for yourself and your family.
Those drinks are just water and sugar, with no health benefits.
There is no fruit with no health benefit!
Garden eggs seem to be available everywhere now, interestingly there are different species you can choose from; the white or the green. And they are quite affordable.
I've heard some people say, "I don't know how to eat fruits".
Please learn and practice how to!
Cos when it comes to our health, a diet high in fresh and whole foods can prevent one from diseases and even heal one of some!
Which species of garden egg do you prefer?
As for me, everything goes!
Hubby didn't use to like garden eggs, but now, we "fight" over it😀.

Let's make GOLDEN HONEY! (Spiced Honey)
The wonders of spices can not be over-emphasized. They are filled with lots of vitamins and minerals needed for adequate functioning of the body.
To make Golden Honey we need:
Turmeric powder
Black Pepper powder
Ginger powder
Cinnamon powder
Cayenne powder and
Honey
Turmeric is a potent anti-inflammatory and antioxidant. It relieves symptoms of arthritis, also good for heart health.
Black pepper is high in antioxidants and has anti-inflammatory properties. An addition of black pepper to turmeric makes it easier for the body to absorb turmeric nutrients.
Ginger aids digestion, improves immunity, and is also good for heart health.
Cinnamon is loaded with antioxidants and has anti-inflammatory properties. It can also protect against heart diseases, it helps lower sugar levels.
Cayenne pepper aids digestion, it helps reduce blood pressure.
These spices are also said to have anti-cancer properties.
Usage:
To treat cold symptoms: Add a teaspoon or 2 to a glass of warm water, and drink (can also add lemon to it).
For a good night's sleep: Add a tablespoon or 2 to a glass of warm milk.
The mixture also boosts the immune system and prevents falling sick often.
Also effective in relieving pain. Add a tablespoon or 2 to a glass of water and drink.
See attached picture for measurements.

LET'S TALK BABY FORMULAS!
I as a person think these popular baby formulas are overrated.
I find it disturbing that most of them have processed sugar, artificial flavor, and preservatives in them.
Looking at the ingredient list, they all look overly processed. I do not think a baby needs food like that.
I think when it comes to complementary feeding, more natural, whole-grain, and nutritious food ( in addition to fruit and vegetable purees) be given with breastmilk as "milk" instead of processed milk.
In cases of mothers that have difficulty producing milk and feeding their babies, I think a breastmilk bank should be made available at maternity centers while breastmilk donation is encouraged.
Our locally produced cereals should be pushed more. We are blessed with lots of locally grown grains that are nutritious, and if processed well, will provide babies with the right amount of nutrients.
I love what people like Joy Nobis Arunnaya Chika Tadimore are doing, as well as brands like Colourful Giggles Baby Cereals Baby Grubz they use local grains to make nutritious baby cereals and they're so affordable too!
Have you ever taken a look at the baby formula ingredient list? What comes to your mind?
If you never have, do a quick search and come back to tell me what you think.
If you're unable to breastfeed your baby, can you give your baby another woman's breastmilk?
Let's discuss this, please.

THE CUSTARD MUMMY GANG?
A mum of a less-than-a-year-old baby recently asked me how to prepare custard, I asked if it was for her baby and she said yes, I told her outrightly not to give the baby. Why?
First, I'll list out the ingredients on the sachet custard she was holding:
Cornstarch
Milk flavor
Milk powder
Sugar
Color- sunset yellow (E110) and Tartrazine (E102)
Let's break it down:
Cornstarch
The process of making cornstarch takes away all the fiber and major nutrients needed leaving it with very little carbohydrate. 🤷
Milk flavor
Since a reasonable amount of milk can't be added, something must be added to give it the "milk feel". It's not milk and definitely can't do the work milk does!🤦
Milk powder
Let me ask, if there's a good amount inside, would there be a need for milk flavor?🙄 So, it's just a trace!
Sugar
That's processed sugar and will have loads of it🙄, unhealthy for your child!
Color
Hmmmm! It has 2 different types of artificial colors sunset yellow (E110) and tartrazine (E102)! So, that deep yellow you see, is just artificial yellow.
E110 and E102 are usually found in fizzy drinks(your Fanta and Mirinda) and lollies(those colored water mostly in nylon you buy for your children).
These food colors have been found to cause hyperactivity in children (your kid drinks custard finish and is jumping up and down 🤦🤦), it's also linked to stomach upset and headache in some people, and it has also been linked to respiratory problems in some cases.
DID YOU KNOW?
E102 is banned from use in Austria and Norway.
Most of these E products are also banned in America and other countries!
So, when you give your kids custard, know that their intestines aren't happy!
Custard does not contain the right and adequate nutrient your child need for development.
Process your pap instead. Best to grind it smooth and not sieve. Then get very good, age-appropriate milk to go with it.
Eat healthy, live healthy!

Many people often complain of the stress of thinking about what to cook/eat, especially if they have a family.
Last year, I put together a complete one-month meal plan/timetable.
I used it as a souvenir for those that got any of my ebooks or took my classes. (If you did and have yet to get yours, reach out please)
If you are having trouble figuring out what to cook, here you have it!
Get it free by getting a copy of any of my ebooks (Tasty Meals without Seasoning Cubes or Healthy Nigerian School Lunch Menu) or get into the Spice Blend Class.
Want only the meal plan?

One time like that, we had a guest, an elderly woman in her 60s or so.
I served her jollof rice, I noticed she was sort of reluctant to eat, after some bites, she said she noticed the food doesn't have much seasoning cube and it's still sweet.
We told her it doesn't have any seasoning cube at all and it was all natural seasoning.
She was wowed and balanced well to eat.😀 Not a grain was left from in the plate, rice gone, meat gone. 😀😀
Apparently she was staying off seasoning cubes due to health reasons so she doesn't really like to eat out.
Hubby and I don't always want jollof rice to finish each time I cook it. 😀
The jollof always make me reconsider my love for fried rice. 🤣
With the right combination of natural seasoning, your food can always taste great.
For over 4 years I have ditched seasoning cubes, trust me, I do not miss it one bit.
You can do it too!

The person who's hand and possibly legs you see is my husband, the man I married 😭
After we finished eating the last portion of banga soup in the pot, man asked if it was remaining and I said no.
He went to the kitchen and carried pot, said the soup was too sweet to "waste" what was left in the pot.
He practically "washed" the pot! 🤣🤣🤣
I have never cooked with seasoning cubes since I got married, I stopped using it years ago.

Pour into a glass jar and pour honey over it.
Mix well and allow to stay for about 6-12 before using.

A tablespoon or 2 of the infused honey every couple of hours while cough symptoms lasts.

FRUITS FOR THE WEATHER
The rainy season comes with lots of illnesses, from cough, and catarrh to insect-causing ones, especially among children.
To prevent children from coming down with illnesses this season, ensure they're getting enough vitamins and minerals that help build their immune system, and these are best gotten from fruits.
One important vitamin that does the work of immunity-boosting well is vitamin C!
It helps prevent and fight diseases.
And we are so blessed to have so many fruits that supply this vitamin and are affordable too!
Some fruits you can easily find around you and are rich in vitamin C include:
Oranges
Apples
Pineapple
Watermelon
Papaya/pawpaw
Mangoes
Kiwi
Lemon
Strawberries
Etc
Please note that the alleged fruits in packaged fruit juices are not the same as giving your children whole fresh fruits.
A diet high in vegetables is also important to keep them healthy.
Trust me, it is cheaper to prevent diseases with a healthy diet.
Treating preventable illnesses, especially in children is expensive, from the cost of medications to the stress you'll have to go through as a parent taking care of them and then time that could have been used on more productive things.
So, take the "easier" and healthy route today!
Remember to give your little ones fruits today!

IS ZOBO A HEALTHY DRINK?
After you have heard of the health dangers of carbonated drinks, soda, and all (Coke, Fanta, Pepsi, etc), you decided to stick to natural drinks.
Good! 👍👏👏
Whenever you need that chilled drink to satisfy your thirst, instead of asking for your previous love, you ask for your new lover-Zobo; "I only take healthy drinks now", you tell the seller!
Well done sir! 👌👌
But wait, I want to ask a question ...
Are you drinking healthy?
Zobo leaves- Dried roselle or sorrel leaves, a specie of hibiscus, on its own, when cooked into tea is healthy and nutritious.
It is said to contain antioxidants and many other vitamins and minerals.
When does it become unhealthy then?
Because Zobo drink on its own with no sweetener will taste somewhat bitter or bland, and who wants a refreshing bitter drink?
🤷🏼♀️🤷🏾🤷🏾
Many Zobo drink makers sweeten it with lots of sugar, sometimes a bottle of Zobo might even contain more sugar than a bottle of Coke.
While some sweeten with powdered cola or "juices" which means you're still drinking that drink you're avoiding. 🤦🤦(You remember those sachet eve drinks? Na them!)
And some Zobo drinks are sweetened with artificial sweeteners, the likes of aspartame which is mostly used in Diet Coke and recently named a possible cancer-causing additive by WHO's cancer research center, according to a Reuter report.
So, if your reason for choosing zobo drink is "healthy", ask if it is 100% natural.
Zobo can be sweetened naturally with fruits like pineapple, watermelon or sweeteners like date, jaggery, honey, etc.
And remember, a 100% natural Zobo drink if left for hours unrefrigerated will ferment and change taste.
So, a pack of Zobo drinks stored for long like carbonated drinks, unrefrigerated is a sign that it is not 100% natural.
The next time you want to gulp your "healthy" Zobo drink, ask yourself if it is healthy really!
You might just be drinking a regular, chilled, refreshing drink.

TOO MANY HEATH TEACHINGS ONLINE, WHERE DO I START FROM?
While there are so many conflicting teachings and information about what should be eaten, the truth is no matter where you are learning from or who you're listening to when it comes to a healthy diet, there are some fundamental things everyone agrees with.
Let's break down the information in the attached image.
1. Everyone agrees that a diet high in added sugar is not healthy.
Added sugar is the sugar not naturally occurring, but added to foods and beverages/artificial drinks and juices, pastries, snacks of different kinds, etc.
Instead of artificial sugar, sweeten food with natural sweeteners like jaggery, date, honey, or sweet fruits.
2. No one argues that unprocessed food is the healthiest food!
Unprocessed foods/minimally processed foods are foods that are in their natural state or have slightly been processed just to change form but with their nutrients intact e.g. cassava to garri/cassava flour, millet/corn to pap or flour.
Foods that have been overly processed or ultra-processed foods oftentimes have lost their original nutrient e.g. instant noodles are said to be made from wheat but fiber and many other nutrients have been stripped out during processing, the same as semolina flour.
And in the process of making this food appealing and long-lasting, unhealthy additives are added to them.
This also includes processed meat like sausages.
It is best to stick with the food you can easily trace back to the soil, foods whose finished products aren't far from the soil or source.
3. Another truth is "there is no perfect diet for everyone". A healthy diet for A might not be what B needs. Sometimes, genetic makeup makes people react differently to some foods. Rate of metabolism; how physically active we are determines the result we'll get from a seemingly healthy diet.
So, most times it is best to seek a professional's help to determine what's best for our health.
4. Artificial trans fat is unhealthy fat you can find in so many foods.
Margarine (not butter), the likes of blue band, simas, toppers, etc mostly used in cooking and baking are sources of trans fat.
Overly consumption of them has been linked to heart disease, the reason some countries ban the use of them in food.
When shopping for "butter" or other foods, looks out for 'partially hydrogenated vegetable oil' on the ingredient list, it is unhealthy.
Instead of regular margarine, opt for butter. Brands like Lurpak, Oldenburger, Kerrygold, etc.
Swap regular vegetable cooking oils for olive oils, or groundnut oils (from a trusted producer) as most vegetable oils are refined bleached palm oil that has been stripped of its nutrients and has high bad fats.
Yes, we sometimes have cravings, but foods made with lots of unhealthy oils shouldn't be an everyday thing.
Instead of frying, grill.
Can also opt for local butter-ghee for cooking.
5. It is a known and confirmed fact that eating vegetables will improve your health.
Vegetables of different kinds are highly nutritious as they contain nutrients needed for the effective functioning of the body.
It helps the skin, improves gut health, helps in maintaining a healthy weight, reduces the risk of chronic diseases, and many more!
Even if you are confused or don't know where to begin your healthy eating, do the above-mentioned things, and you are sure to observe a change in your health!

I saw this beautiful spices picture and I so love it!
Spices come in different colours that helps add colour to our food too.
One of such is turmeric.
Years back when I didn't know much about spices, turmeric was kinda my favourite.
And that was because of its colour.
My late mum was asked to stop eating palm oil so we used turmeric to give colour to her food- used it to cook egusi, beans, okra soup etc and it'll look so lovely.
Turmeric is used a whole lot in spice production.
It is what gives curry powder it's colour.
Did you know you can make your own curry powder at home?
It is part of what you'll learn in the spice blend class.

MUMS, DADS, UNCLES, AUNTIES, GRANDPARENTS
Whichever category you fall into, please read keenly! 🙏
I haven't been able to take my mind off a nursing mum that said she was giving her 4/5 month baby Ribena drink.
I told her her baby doesn't need the sugar and it wasn't good for her age but she didn't mind.
I'll try to talk to her again.
But the thing is, many parents do not know.
When it comes to refined or processed sugar, health experts recommend that it should not be introduced until child 2.
And there are so many foods and drinks around with loose processed sugar;
Talk about candies (sweets), packaged juices, snacks, biscuits, carbonated drinks etc.
One thing many parents don't do is check food labels.
Most foods and drinks specify age ranges that can consume their products on the labels.
In cases where it is not written, what should you look out for?
Sugar (sometimes written as sucrose), artificial colors (mostly written as just color), refined oil, preservatives, and flavor enhancers aren't things you want to be feeding your babies.
While it may look like the little ones are enjoying the "treats", they do more harm than good.
If you must sweeten a baby's food, use naturally sweet fruits like bananas, carrots, etc.
The second and third images are screenshots from Nestle producer of the Milo drink website.
Milo is another "abused" beverage when children are concerned.
It is clearly stated here that "the beverage is specifically designed to meet the nutritional needs of children 6 years and above."
Before you say "I give my children all these things and they are healthy", please ask doctors around you or visit hospitals to see children and preteens battling and treating chronic diseases like diabetes, heart disease, kidney disease, etc, most of which are results of unhealthy diets and lifestyles, while some will see results as young adults especially if they do not change their unhealthy lifestyle.
True, many of us have made uninformed decisions, what is important is to take a turn and act right when we are informed.
As an adult, a parent, aunt, uncle, or grandparent, before you buy that child an edible "treat", ask yourself what it'll do to the child's health.
Remember, a child will never like food you never give.

CLOVES
Let's talk about this wonderful spice!
Locally known as kanafuru in some parts of Nigeria, while some people call it Zobo pepper because it is often used to flavor Zobo drink.
This dried flower of the clove tree is a sweet and aromatic spice loaded with lots of nutrients and health benefits.
Clove is often added to spice mixes. Because of its color and smell, a little goes a long way.
Cloves are rich in antioxidants.
How important are antioxidants?
They remove free radicals in the body, free radicals damage cells, and cause diseases. Antioxidants on the other hand remove free radicals which reduces the risk of falling sick.
Cloves also have antimicrobial properties.
It is effective in treating toothache, colds, and coughs.
Cloves have also been found to regulate blood sugar.
Scientists have reported that cloves might have a beneficial role in the future of cancer treatment since they contain antioxidants.
Next time you go to the market, grab some cloves!
Note: If on medication, consult your doctor before using cloves as they can interact with some drugs.
Cloves in spice mixes are often safe because they are always in small amounts.
Subsequent posts will show how to use clove at home to treat/relieve some health conditions.
