Efere Otong, an ancient soup that's very popular among the older generation has been widely accepted as the Queen of soups, while the others are fighting for the kingship position.

We can bet that, a very little percentage of the younger generation have tasted this fingerlicking soup.

This is another Nigerian soup that has Okra as one of the ingredients. Otong soup has two key vegetables characteristic, Ikong Ubong(pumpkin) and Okra. With the high fiber content in Okra this soup is really quite friendly with the digestive system. So you are onto some nutrition packed soup because Ikong Ubong has high iron content.

Otong can be eaten with Ayan Ekpang (grated steamed cocoyam), pounded yam or fofo. It is always a delight to watch your guests wrap their pounded yam round the soup, lick their fingers and go for the next ball of pounded yam.

Some of the Ingredients needed to prepare this sumptuous soup includes, but not limited to Okra, nsama, ukana, dry fish (big one), ikpa (chopped), towel (chopped offals), fresh pepper, Crayfish, seasoning, adusa(hot leaves), red oil and mmong Otong (from Palm kernel shaft).

While preparing, it's important that you boil the African yam beans (nsama) till it's tender and parboil the protein, then you put your pot on fire, add water and meat stock, add ingredients, add the boiled meat and beans, add Okra, ukana, mmong otong, palm oil, adusa stir and put off the fire.

Edikang Ikong Soup is a highly nutritious, delicious and savory vegetable soup natively prepared using ‘nkong ubong’ (the native name for fluted pumpkin leaves) and Malabar spinach (locally called water leaf).

Edikang Ikong, although being sumptuous and nutritious, is expensive to prepare, and has been described as being mostly eaten by rich people in Nigeria.

Ingredients used in edikang ikong include beef and dried fish, bush meat, crayfish, shaki (cow tripe), ikpa, pumpkin leaves, water leaves, , onion, periwinkle, palm oil, salt and pepper.

After preparation, edikang ikong can be served with fufu, wheat flour, eba, or pounded yam.

Edikang ikong joins the list of Ibibio delicacies that have garnered cult status in Nigeria where the clout of top chefs and the best cooks are usually measured their ability to reproduce this soup in its classic form.

Eating edikaikong soup is believed to be a cure for respiratory-related health problems such as asthma. This is because of its content of high antioxidants so that the immune system increases which in turn can fight the symptoms of asthma that will appear.

Afia Efere Popularly known as (White Soup) is one of the people’s delight when spotted on the menu.

A glance of it when nicely prepared with okob usem ebod, fresh chicken or catfish, triggers the lipase enzyme, making the victim leap for a taste.

The unique feature Afia Efere is that it's not been cooked with Palm oil. It's prepared with a smooth paste of boiled yam and it is hugely nutritional.

Yummy Efere Ikon also known as Egusi by our Igbo brothers is one of the most consumed soups in Nigeria and it's proudly Akwa Ibom.

The results of a study by Grossman et al., (2007) showed that cucurbitacin glycosides possess pleiotropic effects on cells thus leading to both apoptosis and cell cycle arrest. Thus, cucurbitacin glycosides exhibit therapeutic effects against breast cancer cells, making Efere Ikon a good herbal cure for cancer

Ikon goes perfectly with all forms of swallows. Its satisfaction and the yummy taste can't be compared.

Due to the presence of dietary fibre (Thiamine) in Efere Ikon, it is useful for digestion of food and helps to boost appetite due to its constituent of vitamin B1.

Ikon is also a good source of polyunsaturated fatty acids and omega 6 fatty acids. These fatty acids act as a shield, keeping the low-density lipoprotein level within limits and keeping your heart healthy.

This soup is known for its uniqueness, unlike other soups, Afai Ntokon is not cooked, but eaten cold from the mortar after preparation with cold water and a good quantity of pepper, making it peppery and eaten by the strong-willed.

Of a truth, this ancient soup had saved lives and is still saving those who know its benefits to the body, and it goes perfectly with fofo.

Events of the last one week have rationalized our common belief that of a truth, our great cuisines are true signposts of our unity as a people.

Simply put, at the center of our ethnic biases, political affiliations, language differences and religious leanings stand our great soups.

Akwa Ibom state no doubts is a land of some of the world's most outstanding cuisines.

Our cuisines are currently the most telling aspect of our cultural identity as a people. Most of our soups are usually all greenish or at least, sprinkled with some greenishness, as such the essence of the green background in this logo.

Being green means being fresh, tasty, delicious, long lasting and phenomenal, some unique connotative representations of the true Akwa Ibom spirit.

We therefore present to you the official Akwa Ibom Soups War logo as we get nearer to the great battle for souperiority.

A quick poll has revealed that Akwa Ibom state is far known for her great soups than her crude oil.
