Crossfit is a big part of my daily routine. I train 2-3 times a week at Crossfit Uithoorn .
Crossfit involves constantly variedย functional movements performed at high intensity to build an overall fit body.
We train to not lose weight but to become stronger and stay fit.
The coaches at UCF take extra care to make sure that we all feel motivated no matter what our level is.
On 15th June, we have Throwdown - a series of workouts, and I am glad to announce that I will be serving a recovery salad to all athletes and viewers.

Home made pesto to start another cold week in the Netherlands. This keeps me going and happy.
This time, i coarsely grinded the herbs and the nuts and added olive oil just to bring it all together.
My take included a few black pepper corns, a mix of walnuts, cashews and peanuts, and a pinch of sesam seeds along with basil and parsley. I used normal cheese since ran out of parmesan cheese.
I ate it on a leftover naan topped with boiled eggs and balsamico. Do try this combo.
It was mind-blowing !

What is Superfood?

Eating vegetables should be a treat to the eyes and to the mouth. This simple salad makes me remind of the white radish we ate back home in India. Tangy and DELI-CI-OUS, a bit spicy ๐ถ too.
To make it -
I washed and sliced the radish.
For the dressing -
Lemon juice
Olive oil
Salt
Cayenne pepper
Apple cider
Roasted cumin seed powder
Chopped fresh Dill.
Do make it and enjoy the simplest of salad.

Growing up, we ate Indian food every day, which was warm, comforting, and freshly cooked. I can't imagine how my mom managed that day after day because it's DIFFICULT! I can't manage to do it for my kids, but I do try to make it as fresh, colourful, and healthy as possible.
Dinner last night was a combination of veggies and pasta, which is a favourite in our house. ๐๐

Thanks to an intense ZAAI session yesterday, this meal was ready in 20 minutes - had no energy to stand longer ๐.
With a drizzle of good quality balsamico( modena), we were happy and full.

My recent trip to India was full of flavours, loads of home cooked food, fresh seasonal veggies, and sweet treats. I'm sharing a few here( please don't kill me if this makes you hungry) ๐๐คฃ
1) pani puri chaat made with homemade chutneys and spices
2) food on the go. This was my packed lunch, which had potatoes and green peas cooked in Indian spices along with parathas ( Indian bread) ๐๐
3) All the fresh greens I enjoyed - fresh fenugreek, fresh green peas, carrots, and gourd. ๐๐
4) Guava - my favourite fruit - sweet and crunchy ๐๐
5) Vada pao with fried green chilli pakoda on the side- street food in the western part of India but this one was made at home from scratch. ๐๐
6) A daily home meal ( so many options each day)
7) This is a plate filled with sweets- carrot halwa, jalebi, pista ice cream, and rasmalai
8) No trip is complete without shopping, and this was at a jewellery store where Chai was served to all clients . ๐
COBRA MUSEUM Amstelveen. I was invited to put a stall with my snacks - savoury and sweet to the guests who came for skating, salsa dance lessons and also to visit the museum. Our cookbook at was launched yesterday . The book includes recipes and stories of 10 women who come from different parts of the world ๐ . The common language of love for food is what unites us and makes this book unique.
I am so fortunate to be one of these amazing ladies whose recipes are also in the book.
My recipes are inspired by my mom, mom- in -law and grandmother.

Besides cooking, I enjoy training at our crossfit box . Yesterday, at a gymnastics clinic conducted by and , I attempted my first handstand ๐คธโโ๏ธ๐คธโโ๏ธ. (Great coaches, btw). It was a goal come true! Thanks, and , for the initiative. Still with a lot of body pain, but so happy that I could learn the skill. Also made some vegan mango lassi and energy balls for the two ladies, and they loved it. ๐ ๐

Tray bakes are a total game changer for any dinner preparation ๐ ๐
I combined cauliflower, celery, and sweet paprika. Grilled them in the oven for 30mins(to get some charred ones) at 220C .
I later dressed them with a dressing with mint, dill, yoghurt, and lots of lemon ๐ ๐ .
We ate it with red lentils ( dal) and some fresh roti. Check the video where my rotis to my delight were all puffing and fluffy ๐ ( my dream come true each time I make rotis). Thanks, mom, for all the lessons in the kitchen ๐ โบ๏ธ .

The last few days have been super busy with work , birthdays, and lots of fun. Sharing a few happenings -
1- Victoria sponge cake with fresh fruits for my daughter's 18th bday ๐ ๐ฅณ

4. My dear friend and neighbour asked me to create a menu for her son's birthday and also his farewell as he left for Barcelona for his first job. Check the menu !

Another excellent way of adding flavour to your salad or food is dried herbs.
Dry mint is one such flavour booster. Its freshness is not completely lost when dried in the shadow and stored in an airtight container.
My pantry always has dried mint thanks to my mom and mom in law who take all the pains of drying it. I later realised that it could also be bought in the Indian stores๐. But home dried is still special๐๐.
In India, we use it very often in pani puri, chaat, aam panna ( a fresh mango drink), and in many yoghurt dishes.
I used it today to create this tangy, sweet salad combining raw mango finely chopped, fresh coriander leaves, black salt, cumin powder , fresh red chillis, and lots of dried mint. A squeeze of lemon ๐ juice and voila, a great summer salad! โ๏ธ ๐ฅญ ๐ฅญ

This is a cucumber salad made with combining diced cucumber, chaat masala, rock salt, lemon juice, and lots of CORIANDER LEAVES - the star ingredient ๐

My daughter Anvesha graduated from high school ๐พ ๐พ๐พ๐พ๐๐ฅณ๐.
The results came on Wednesday, and we couldn't be happier and more proud. This is how we celebrated - bites, bubbles, a flag ๐ณ๐ฑ a bag ๐- a Dutch tradition to hang the flag, and a school bag to announce that your child had passed middleschool.

What if I told you that salad could be a really filling meal? I am not talking about that boring side salad with lettuce, cucumber , and tomato salad that most of us are served. Those salads are not filling, and that is why most people are saying that they don't find salads satisfying and a meal.
A great meal salad has a protein, vitamin, fat, and fibre, not to mention tons of flavour and texture .
And the dressing is what brings it all together , the glorious sunshine to the salad.
This is what made me start making salads in the first place.
This is a green moong sprout salad with green beans and apple. The dressing is simple with mustard and olive oil. A vegan salad and a complete meal packed with deliciousness ๐ .

Turkish bread with tomato and green chilli eggs topped with chive and soya mayonnaise dressing .....topped with some homegrown radish leaves. Yummy...

Summer on a favourite plate ๐๐๐.
This corn and avocado salad is so simple yet delicious! ๐ We ate this as a side to our meal.
To make this -
1 cup corn from a tin ๐ฝ
1 avocado- ripe ones are the best
Handful of chopped parsley
Dressing .....
1 tbsn olive oil
Juice of lemon
Salt
Cumin powder
Dried mint leaves
Mix it all in a bowl and serve it in a colourful plate - remember we eat with our eyes ๐ ๐ ๐ต first....
SUPERFOOD!
I grew up eating this salad. My mom would make a different combination each time, and every time, it would be exceptionally tasty. When I started my company- Prerna's GoodFood, I knew this salad had to be in my assortiment.

My journey so far.
Colourful cooking is fun. I have always looked for fast and healthy ways to feed my family and that did include trial and error of varied flavors, ingredients and cooking methods.
It started with preparing salads and sandwiches for my husbandโs daily takeaway meal to work. Every morning a new mix to excite my eyes and to fill his stomach.
This encouraged and motivated me to keep experimenting.
