This bright ruby of the sea is a delicate, almost sweet shrimp, brought to you by Rosso di Mazara, a third-generation company who maintains excellent standards of quality through sustainable fishing practices. Member of the NGO Friends of the Sea, they fish exclusively with nets to preserve the marine habitat. The broken prawn heads that get stuck in the nets are reused at their fishery and made into a red nectar, highly appreciated by Chefs. These fine gamberro rosso are drawn exclusively from the pristine Mediterranean waters and immediately frozen, on board the ship, at -50 degrees.

Pixel tomato is a type of plum tomato that has become a reference amongst professionals, mainly thanks to its sweetness, shiny bright red colour and excellent consistency. With an extended shelf-life, it also comes in high-quality supplies throughout the year, directly from the fields of Sicily, Campania and Latina.

The longan is a fruit close to the lychee or rambutan, belonging to the soapberry family. It is growing as clusters on trees, mostly in Asia. The longan is highly concentrated in vitamin C and has a mildly sweet, musky flavour. Extremely popular in Asian countries, the longan is said to be equal or superior in taste to that of lychee.

Fera is a broad, thin-skin, white-fleshed fish, originating from the lake of Geneva and also found in the clear cold lake waters of Savoy. Schools of fera feed exclusively on plankton and small insects. For reasons that are still mysterious today, the species practically disappeared in the 20’s but were slowly re-introduced and are now fished responsibly, according to the wind: fera are easier to catch under a soft regular breeze.
